In this recipe, submitted by reader Deurie Barker of Sanford, North Carolina, dark-meat chicken makes the patties as savory and juicy as beef burgers. Saute the vegetables until they're fully tender for the best flavor and texture.

2 tablespoons vegetable oil, such as safflower
1 small onion, finely chopped
1/2 yellow or orange bell pepper, chopped
1 celery stalk, finely chopped
Coarse salt and ground pepper
1 pound ground dark-meat chicken
4 hamburger buns
Lettuce, tomato, and mayonnaise, for serving

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium. Add onion, bell pepper, and celery; season with salt and pepper. Cook, stirring occasionally, until tender, 8 to 10 minutes. Transfer to a medium bowl; cool to room temperature (reserve skillet).
  • Add chicken to vegetable mixture in bowl; season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Mix to combine. Shape mixture into four 4-inch-wide patties.
  • In reserved skillet, heat remaining tablespoon oil over medium; cook patties until browned and cooked through, 6 to 8 minutes per side. Place chicken burgers on buns, and top with lettuce, tomato, and mayonnaise.

A last-minute quick meal turned into a family favorite. Best homemade skillet burgers I have ever had and they are surprisingly not too bad for you! Making them into sliders on lightly toasted sourdough is an amazing gourmet treat for guests! My boyfriend got out the ketchup, and after one bite of these burgers he put the ketchup away. These burgers are perfect as-is--you don't even need buns!

1 tablespoon oil, or as needed
1 ¼ pounds lean ground beef
½ cup egg whites
⅓ cup chopped and drained oil-packed sun-dried tomatoes
3 ounces crumbled goat cheese, or more to taste
2 teaspoons sea salt
1 teaspoon steak seasoning
1 teaspoon dried parsley flakes
2 tablespoons liquid hickory smoke seasoning

Steps:

  • Lightly oil a large skillet and put over low heat.
  • Mix ground beef, egg whites, sun-dried tomatoes, goat cheese, sea salt, steak seasoning, and parsley in a large bowl. Shape into 5 hamburger patties.
  • Put patties in the skillet and cook for 5 minutes. Flip and cook another 5 minutes. Increase heat to medium or medium-high, cover, and continue to cook, flipping occasionally, until burgers are cooked through and juicy, 5 to 10 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Top with liquid hickory smoke seasoning.

2 lbs ground round or 2 lbs ground sirloin
2 teaspoons salt
1/4 teaspoon pepper
1 1/3 cups red wine
1/2 cup medium onion, chopped
1 garlic clove, crushed
1 1/2 tablespoons butter
1 tablespoon lemon juice
1 tablespoon minced parsley

Steps:

  • Season meat with salt and pepper.
  • Combine wine, onion and garlic and cook until sauce is reduced to 2/3 cup.
  • Add butter, lemon juice and parsley.
  • Cool sauce, then blend into seasoned meat.
  • Mixture will be moist.
  • Shape into 8 patties.
  • Grill over hot coals.
  • Serve on buttered buns.

3 T. chicken broth
1 t. Dijon mustard
1 t. salt-free seasoning
1/8 t. garlic powder
pepper to taste
4 to 6 hamburger buns, split

Steps:

  • Combine all ingredients except buns in a large bowl. Stir lightly with a fork until well blended. Form into 4 to 6 burgers. Heat a cast-iron skillet and spray with non-stick vegetable spray. Cook burgers until cooked through and nicely golden. Serve on buns. Makes 4 to 6 servings.

1.25lbs. of ground chicken
1 teaspoon of dried oregano
1 egg
salt & pepper
1 red onion, sliced
1 tablespoon of olive oil
1/2 teaspoon of salt
1/4 teaspoon of pepper
1 tablespoon of butter
4 whole wheat buns
1 avocado, sliced
4 leafs of butter lettuce
1-2 roma tomatoes, sliced
BBQ Sauce (I used Sweet Baby Rays Honey BBQ)

Steps:

  • Heat a medium skillet to medium high heat, add olive oil and sliced onions. Saute onions for 10 minutes, stirring on occasion. Add butter, salt, and pepper. Stir until butter is melted and soaked into onions, about 3-4 minutes. Set aside.
  • In a large bowl mix, ground chicken, egg, oregano, salt, and pepper. Using your hands mix until it is all combined. Form into four patties.
  • Heat the grill to medium high heat, spray grates with PAM or rub with olive oil. Add chicken patties to the grill.
  • Grill for 4 minutes per side, until cooked through.
  • Remove from grill, let sit while you toast the buns.
  • Add buns to grill, inside on the bun face down. Grill for 1 minute, remove from grill.
  • Assemble burger: bottom bun, lettuce, 2 slices of tomato, chicken burger, 2-3 slices of avocado, 1-2 tablespoons of caramelized onions, 1-2 tablespoons of bbq sauce, top bun.
  • Devour!
