Savory Turkey Brine image

Brining a turkey makes for a juicier bird, and this brine--with sage, celery seed, thyme and soy sauce--brings plenty of flavor too.

2 gallons cold water
10 ounces Kikkoman Naturally Brewed Soy Sauce
½ cup kosher salt
½ cup white sugar
2 tablespoons dried sage
2 tablespoons dried celery seed
1 tablespoon dried thyme

Steps:

  • The night before roasting, remove giblets and turkey neck; rinse turkey inside and out. In a large stock pot or 5 gallon bucket mix water with remaining ingredients. Stir well until all the salt is dissolved. Place turkey in the pot cover with a lid and refrigerate overnight or at least 8 hours. Remove turkey from the brine, rinsing well. Follow your regular cooking instructions.

1 (5 pound) whole chicken
1 gallon cold water
1 tablespoon dried sage
1 tablespoon dried celery seed
½ tablespoon dried thyme
¾ cup kosher salt
¾ cup sugar
¾ cup Kikkoman Soy Sauce
2 tablespoons seasoned salt

Steps:

  • Remove giblets from chicken cavity, rinse chicken inside and out.
  • In a large stock pot or container, mix water, sage, celery seed, thyme, salt, sugar and soy sauce to create brine. Stir well until the sugar and salt are dissolved. Place the chicken in the brine, cover and refrigerate for at least 4 hours or overnight.
  • Remove chicken from the brine and rinse well inside and out. Sprinkle with 2 tablespoons of seasoned salt. Bake the chicken at 400 degrees F for 45 minutes.

Quick Chicken Brine image

An easy, quick chicken brine that creates the most flavorful and tender chicken and poultry.

15 ounces water (½ liter)
3 ounces salt (100 grams)
couple of sprigs fresh herbs (like rosemary, thyme, or parsley)
4 cloves garlic
15 ounces ice (500 grams ice, or 15 ounces of ice water)
1 3-4 pound chicken or chicken pieces

Steps:

  • Combine water, salt, and aromatics (garlic, herbs, etc.) in a medium saucepan over high heat. Bring to a boil. Cover and remove from heat. Let stand for 10 minutes.
  • Place ice (or ice water) in a large bowl (or very large measuring cup) and pour brine over ice. Stir until ice is melted.
  • Place chicken in a large plastic bag and pour brine over chicken. Seal and let sit at room temperature for 2 to 3 hours, or refrigerate for 4 to 6 hours. Drain chicken and pat dry. Use in any recipe, but make sure to only lightly salt the chicken surface once you've brined it.
