- Mix tuna, eggs, bread crumbs, onion, celery, horseradish, lemon juice, garlic, and black pepper in a bowl until mixture holds together. Divide mixture into 4 portions and form each portion into a patty.
- Heat vegetable oil in a large skillet over medium heat and cook patties in the hot oil until golden brown, about 5 minutes per side.

SPICY AND SAVORY BROILED TURKEY BURGERS
These are some of my favorite turkey burgers. They begin with the beautiful trio of onion, garlic, and ginger and are accented with a wide range of spices. Most ground turkey comes in 20-ounce plastic-covered trays, so I usually just peel off the top, dump all the ingredients in, make patties, and throw away the package. No dishes to do, except for the cooking pan and utensil.

- Set an oven rack about 4 to 5 inches from the heat source and preheat the oven's broiler. Lightly spray a broiling pan with cooking spray.
- Combine turkey, onion, garlic, ginger, Worcestershire sauce, seasoned salt, Italian seasoning, cumin, coriander, chili powder, red pepper flakes, and black pepper in a mixing bowl. Mix by hand until uniformly combined. Form into 4 patties and place on the prepared pan.
- Broil until an instant-read thermometer inserted into the center reads 160 degrees F (71 degrees C), 6 to 7 minutes per side.

SAVORY TUNA BURGERS

- In a large bowl, combine the tuna, mayonnaise, bread crumbs, parsley, mustard, hot sauce, salt, and pepper. Mix well and shape the mixture into four equal patties, each about 1-inch thick.
- If you're stopping here:
- Wrap the burgers tightly in plastic wrap and refrigerate up to 3 days or freeze up to 3 months. Thaw completely in the refrigerator or microwave for 3 to 4 minutes on LOW before cooking.
- When you're ready to eat:
- Heat the oil in a large skillet over medium heat. Unwrap the burgers and cook until golden brown and heated through, 3 to 5 minutes per side. Serve the burgers on buns with sliced tomato and pickles.
MEXICAN BURGERS WITH AVOCADO & FRIED EGGS
These are savory, spicy burgers that are made even tastier with spicy mayo, avocado slices, a fried egg and pico de gallo. Add cheese if you like, or maybe even bacon. I'm sure these would taste great if cooked on a grill, but I pan-fry them.

- Put the first 10 ingredients (cumin through onion) in a food processor and puree. Add half of the ground beef, and pulse to combine everything well.
- Put the rest of the ground beef and one tablespoon of cilantro in a large bowl. Add the beef-spice mixture and stir to combine well. Form this mixture into four burger patties.
- Mix the remaining cilantro with mayo, hot sauce, and lime juice. Add salt & pepper if desired- I usually don't. Set aside.
- Heat oil in a skillet over medium-high heat. Cook patties, flipping once, for about 12-15 minutes, or until desired doneness.
- Just before the meat is done, melt butter in a separate pan, then crack the eggs into it and cook until whites are firm and yolks are runny, about 3-5 minutes.
- Spread the mayo on both inner sides of the buns, then place down avocado slices, meat, fried egg, and pico de gallo. Serve!

- Cut the crust off of your piece of bread. Pour olive oil onto a small plate. Soak the crustless bread in the olive oil, turning the slice once, till all the oil is soaked up by the bread.Place ground turkey in a medium mixing bowl.
