BAKED WHOLE FISH WITH LEMON, HERBS AND GARLIC BUTTER



Baked Whole Fish with Lemon, Herbs and Garlic Butter image

Feel confident making a baked whole fish with these simple instructions. Serve a flavorful dinner tonight and cook up this easy stuffed fish recipe!

2 large whole fishes (such as sea bream, sea bass or branzino)
1 heaping tablespoon softened butter
1 head garlic (2 cloves minced and the rest left whole)
1 tablespoon chopped rosemary (plus extra sprigs for stuffing)
1 tablespoon thyme leaves (plus extra sprigs for baking)
salt + pepper
1 lemon (sliced and then cut into triangles)
Olive oil
4 large sun-dried tomatoes (chopped)
1 heaping tablespoon capers (chopped)
2 tablespoons green olives (stoned and chopped)
1 handful parsley leaves (chopped)
Olive oil

Steps:

  • If the fish hasn't been gutted and scaled, do so.
  • Heat the oven to 400°F (200°C). Prepare a roasting tin.
  • Mix the butter, 2 minced garlic cloves, chopped rosemary and chopped thyme very well. Season well with salt and pepper.
  • Spoon the compound butter into the fish cavities. Stuff the inside of the fish with lemon triangles (you will probably not be able to fit all of them into your fishes) and rosemary sprigs. Drizzle the fish with olive oil and sprinkle with salt. You can slash the fish two to three times if you like.
  • Place the fish in the prepared tin, along with the extra thyme, garlic and remaining lemon slices. Bake for 20-25 minutes (a large sea bream takes about 25 minutes, branzino is probably ready after 20).
  • In the meantime, mix the chopped tomatoes, capers, olives and parsley. Add enough olive oil to create a nicely dispersed condiment. Serve with the hot fish.

Ban bland-tasting cod! This savory cod dish gets just the right amount of acid zing from the tomatoes. Healthy and satisfying.

½ cup uncooked orzo pasta
1 tablespoon butter, divided
1 (12 ounce) can stewed tomatoes
1 (12 ounce) can low-fat cream of celery soup
1 ½ tablespoons capers
1 tablespoon olive oil
2 (6 ounce) fillets cod fillets
salt and ground black pepper to taste
½ cup shredded Cheddar cheese

Steps:

  • Bring a pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until cooked through but firm to the bite, about 11 minutes. Drain.
  • Preheat oven to 425 degrees F (220 degrees C). Grease a 13x9-inch baking dish with some of the butter.
  • Stir tomatoes, cream of celery soup, and capers together in the prepared dish.
  • Bake tomato mixture in preheated oven for 10 minutes. Stir orzo into the tomato mixture.
  • Melt remaining butter with olive oil in a skillet over medium-high heat. Season cod with salt and pepper; fry in the butter mixture until browned, about 90 seconds per side. Transfer browned cod to the baking dish. Pour any drippings from the skillet over the cod fillets. Sprinkle Cheddar cheese over the cod.
  • Bake in the preheated oven until the fish flakes easily with a fork, about 20 minutes.

Baked Fish with Savory Bread Crumbs image

Landlocked Umbria does not have a seafood cuisine. But its mountain lakes, rivers, and streams abound in freshwater fish, such as the tasty tench. This simple preparation is one I found in Umbria, and it is excellent for fillets of our sweet-water varieties, such as carp or whitefish, or even light ocean-fish fillets like sole. Serve with a salad, or with the Potato-Mushroom Cake with Braised Lentils (page 200).

2 pounds whitefish fillets
3/4 teaspoon kosher salt
6 tablespoons extra-virgin olive oil
Juice of a large lemon (about 3 tablespoons)
1/2 cup white wine
6 plump garlic cloves, crushed and peeled
1/2 cup fine dry bread crumbs
Zest of a large lemon (about 2 teaspoons)
1 tablespoon chopped fresh Italian parsley
1/2 teaspoon dried oregano
1/4 teaspoon peperoncino flakes, or to taste, chopped fine
Fresh lemon slices, for serving
A 4-quart shallow rectangular baking dish; a heavy-bottomed skillet or sauté pan, 12-inch diameter or larger, with a cover

Steps:

  • Preheat the oven to 400°.
  • Lightly salt the fish on both sides, using about 1/4 teaspoon salt in all. Pour 3 tablespoons of the olive oil, the lemon juice, white wine, and another 1/4 teaspoon salt into the baking dish, and whisk together well. Drop in the garlic cloves, and stir with the dressing. Lay the fillets in the dish, turn and swish them in the dressing so both sides are thoroughly moistened, and arrange them, skin side down, in one layer.
  • Toss the bread crumbs in a bowl with the lemon zest, parsley, oregano, chopped peperoncino, and the remaining 1/4 teaspoon salt. Drizzle with the remaining 3 tablespoons olive oil, and toss the crumbs well until evenly moistened with oil.
  • Spoon the seasoned bread crumbs on top of the fillets in a light, even layer. Bake, uncovered, until the crumbs are crisp and golden and the fish is cooked through, about 15 to 20 minutes.
  • Lift the fish out with a spatula, and set on a warm platter to serve family-style, or on individual plates. Spoon over it the juices left in the baking dish, and serve right away, with lemon slices on the side.

2 small onions, sliced into half rings
1 tablespoon butter
3 tablespoons white wine
1/4 teaspoon salt
1/4 teaspoon pepper
1 garlic clove
1/3 cup white wine or 1 1/2 tablespoons lemon juice
1/2 cup heavy cream
1/2 teaspoon oregano
1/3 cup cheddar cheese, shredded
1/3 cup parmesan cheese, shaved

Steps:

  • Sauté onion in butter in heavy sauce pan over medium heat until transparent; not browned.
  • Spread onion oven bottom of a shallow baking dish.
  • Arrange fish over onion in pan, overlapping thin edges.
  • Pour wine or lemon juice over fish.
  • Add whipping cream to pan.
  • Sprinkle with salt, pepper and oregano.
  • Bake uncovered at 425 degrees for 10 minutes.
  • Uncover and top with cheese.
  • Cook un-covered for an additional 10 minutes or until cheese is melted and fish flakes easily.
