Sauteed Spinach with Garlic and Lemon image

This is a quick, healthy and tasty side dish for chicken and steak dishes.

2 tablespoons olive oil
4 garlic cloves, peeled and smashed
3 to 4 bunches (2 1/2 pounds total) flat-leaf spinach, trimmed and cleaned, with some water still clinging
1 to 2 tablespoons fresh lemon juice
Coarse salt and ground pepper

Steps:

  • In a large skillet, heat oil over medium. Add garlic; cook, stirring, until fragrant and beginning to brown, about 1 minute. Using a slotted spoon, remove garlic and discard.
  • Raise heat to high. Add spinach to skillet gradually, waiting for one batch to wilt before adding the next. Cook, tossing, until tender, 3 to 4 minutes.
  • Drain liquid from skillet; add lemon juice, salt, and pepper to taste.

2 tablespoons olive oil
1 clove garlic, peeled
Salt and freshly ground pepper to taste

Steps:

  • Discard blemished spinach leaves and tough stems. Rinse the spinach and drain well.
  • Heat the oil in a skillet large enough to hold all the spinach. Add the spinach, garlic, salt and pepper. Cook over high heat, stirring rapidly, until the spinach is wilted and most of the moisture has evaporated. Remove the garlic and serve immediately.

10 -12 ounces Baby Spinach, well cleaned and dried
4 -5 garlic cloves, sliced thin
1 -2 tablespoon olive oil
kosher salt
fresh grated nutmeg (optional)

Steps:

  • Heat oil In a large lidded sauce pan over a medium heat.
  • Add garlic and toss (or stir) until it just starts to turn color.
  • Remove from heat and IMMEDIATEY add spinach.
  • Toss with a set of tongs to coat the spinach with oil/garlic.
  • Salt to taste, some folks like it with a just a bit of fresh grated nutmeg.
  • Cover and let sit for a couple minutes, toss again and serve.
  • It should just be slightly warmed and retain it's crunch.

2 cloves garlic, peeled and thinly sliced lengthwise
2 pounds fresh spinach, washed and leaves damp
Olive-oil cooking spray
Salt and freshly ground pepper, to taste

Steps:

  • In a large saute pan, heat the olive oil over medium heat. Add the garlic, and cook until golden brown, 2 to 3 minutes. Using a slotted spoon, transfer garlic to paper towels; reserve. Discard oil.
  • Spray pan with cooking spray, and heat over medium heat. Coarsely chop the spinach and stalks. Working in batches, add the damp spinach to the pan. Cover, and cook until spinach just begins to wilt, 4 to 5 minutes. Transfer the cooked spinach to a metal bowl, and cook the remaining spinach. Season with salt and pepper. Sprinkle the reserved garlic over spinach, and serve warm with a wedge of fresh lemon.

2 tablespoons olive oil
2 to 3 garlic cloves, thinly sliced
Zest of half a lemon
10 ounces spinach leaves (8 to 10 cups)
Pinch sea salt
Pinch crushed red pepper flakes, optional

Steps:

  • Add olive oil, garlic and the lemon zest to a wide skillet over medium heat. Cook, stirring often, until the oil is bubbling around the garlic, about 30 seconds. Pile the spinach leaves into the pan and add a generous pinch of salt. Wait about 30 seconds or until the bottom layer of leaves have started to wilt, and then toss the leaves around the pan. As the spinach cooks, keep tossing so that all the leaves have a chance to hit the bottom of the skillet.
  • When the spinach looks bright green and is mostly wilted, remove the pan from the heat and serve with a pinch of extra salt on top. For a little heat, add a light sprinkle of red pepper flakes (optional).

  • Rinse spinach under cold water to remove any sediment. Allow excess water to drain away, but leave a small amount of water clinging to the leaves. Set the spinach aside for a moment while you select a large skillet that has a lid or is able to be covered (we use our round pizza pan).
  • Heat the olive oil over medium-high heat until the oil is shimmering. Add the garlic and cook for about 30 seconds. You only want to soften the garlic, not add any color.
  • Add the entire amount of spinach and stir just enough to move the garlic off of the bottom of the pan. Sprinkle the spinach with salt then place the cover on the skillet. Allow the spinach to cook for about 1 minute.
  • Uncover the skillet and use a pair of tongs to toss the spinach so that the light green uncooked leaves move toward the heat on the bottom of the pan. Allow as much of the liquid to evaporate as possible while continuing to toss the spinach. When all of the baby spinach has achieved a uniform dark green color, remove the skillet from the heat then transfer the spinach to a serving dish. This entire process will probably take less than 4 minutes from start to finish.
