2 tablespoons chopped fresh dill

Steps:

  • Cook apple wedges in unsalted butter in a skillet over medium 5 to 6 minutes. Stir in apple cider vinegar, light brown sugar, caraway seeds, and ground allspice; cook 1 minute. Add thinly sliced green cabbage, unsalted butter, kosher salt, and black pepper; cook 2 minutes. Top with pomegranate arils and chopped fresh dill.

1 small green cabbage (6 cups shredded)
1 Granny Smith apple (cored and thinly sliced)
1 Honey Crisp apple (cored and thinly sliced)
2 tbsp butter
1/4 cup brown sugar
1/4 cup apple cider vinegar
1 tsp ground black pepper
1 tsp salt
1/4 tsp celery seed
1/4 tsp ground allspice
1/3 cup water

Steps:

  • In a cast iron pan or large skillet over medium heat melt the butter. Add the sliced apples, tossing to coat and sauté for 2 minutes. Add the brown sugar and apple cider vinegar. Stir to mix in and continue cooking for 2 more minutes.
  • Add the sliced cabbage, spices and carefully toss to coat. Add the water, cover with lid and simmer for 5 minutes.
  • Remove lid, season to taste and drain any excess water. Serve or keep warm, covered with aluminum foil in a casserole dish.

Sautéed cabbage is an easy, DELICIOUS vegetable side that's healthy and goes with so many dishes! Vinegar is the secret ingredient to making it taste great.

1 small head green cabbage (about 2 1/2 pounds)
1 tablespoon extra virgin olive oil
1 tablespoon unsalted butter
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
½ tablespoon apple cider vinegar (plus additional to taste)
1 tablespoon chopped fresh thyme (optional)

Steps:

  • Cut the cabbage in half from its top down through its core. Place the cut-side down on your cutting board, then slice it as thinly as possible around the core so that you have fine ribbons. Discard the core.
  • Heat a large saute pan or similar heavy-bottomed pot over medium-high heat. Add olive oil and butter. Once the butter is melted, add the cabbage, salt, and pepper. Saute for 10 to 15 minutes, stirring occasionally, until the cabbage is tender and begins to brown. Don't feel like you need to constantly stir it. Leaving cabbage undisturbed for a minute or two as you go is what will allow it to develop brown caramelized bits (aka FLAVOR).
  • Remove from the heat and stir in the apple cider vinegar. Taste and add a bit of additional salt and pepper if you like, or a splash more vinegar if you'd like to add more zippy and acidic flavors. Sprinkle with thyme. Serve warm.

3 teaspoons butter (unsalted)
2 teaspoons apple cider vinegar
2 teaspoons light brown sugar
1/2 teaspoon caraway seeds

salt and pepper

Steps:

  • Heat 1 1/2 teaspoons of the butter over medium heat. When the butter melts, add the apples and sauté them for about 5 to 6 minutes or until they start to soften.

  • Add the cabbage and rest of the butter. Season with salt and pepper. Cook for about 2 minutes, stirring gently. Taste and adjust the seasoning.

This is an adaptation of a classic cabbage dish that I never tire of. The cabbage cooks for a long time, until it is very tender and sweet. I like to serve this with bulgur, or as a side dish with just about anything. You can halve the quantities if you don't want to make such a large amount.

Number Of Ingredients 8

1 large red cabbage, 2 to 2 1/2 pounds, quartered, cored and cut crosswise in thin strips
2 tablespoons canola oil
1 small onion, thinly sliced
2 tart apples, such as Braeburn or granny smith, peeled, cored and sliced
About 1/3 cup balsamic vinegar
1/4 teaspoon ground allspice
Salt
freshly ground pepper to taste

Steps:

  • Prepare the cabbage, and cover with cold water while you prepare the remaining ingredients. Heat the oil over medium heat in a large, lidded skillet or casserole, and add the onion. Cook, stirring, until just about tender, about three minutes. Add 2 tablespoons of the balsamic vinegar and cook, stirring, until the mixture is golden, about three minutes, then add the apples and stir for two to three minutes.
  • Drain the cabbage and add to the pot. Toss to coat thoroughly, then stir in the allspice, another 2 tablespoons balsamic vinegar, and salt to taste. Toss together. Cover the pot, and cook over low heat for one hour, stirring from time to time. Add freshly ground pepper, taste and adjust salt, and add another tablespoon or two of balsamic vinegar as desired.

1 shallot, finely chopped
1 tart apple, chopped
1 tablespoon cider vinegar
1/2 cup walnut pieces
2 teaspoons lemon juice

Steps:

  • In a large sauté pan, heat olive oil over medium heat. Add cabbage. Cook until it starts to soften, stirring occasionally, about 5 minutes.
  • Add chopped shallot and stir to distribute. Let cook about a minute.
  • Add apple pieces and stir again. Cook for 3-5 minutes or until apple starts to soften.
  • Add the cider vinegar and walnuts. Stir and cook until heated through.

Cabbage is one of my favorite veggies, so I am always looking for good recipes for cabbage, this is a really great one, and all ingredients can be adjusted to suit taste. This can also be made using green cabbage. I have even added a heaping tablespoon of garlic in with the onions. If you do not have any bacon fat handy, then use all oil, or oil with a few tablespoons of butter. Please, use only Granny Smith apples for this recipe, they hold up better than any other kind. This is a delicious side dish for beef!

1 medium red cabbage
1/4 cup brown sugar (can use more if desired)
1/4 cup apple cider
salt and black pepper
2 medium onions, coarsley chopped
1 bay leaf (option but good to use)
2 -3 tablespoons bacon fat
2 tablespoons oil
1/3 cup beef stock
4 apples, peeled and julienned
1/4 cup apple butter, plus
2 tablespoons apple butter (or to taste) or 1/4 cup applesauce (or to taste)

Steps:

  • Cut cabbage into quarters, then coarsely shred.
  • In a large frypan, heat oil and bacon fat (or butter if using).
  • Add in onions, and saute until tender (about 5 minutes).
  • Add in shredded cabbage, brown sugar, vinegar, bay leaf (if using) and stock; simmer uncovered for about 20-25 minutes.
  • Cover the pan and cook for about another 30 minutes, stirring occasionally or until cabbage is desired tenderness.
