A tasty and fairly simple way for people on a gluten-free or wheat-free diet to enjoy a noodle dish. I usually use 4 zucchini and 2 summer squash for a colorful mix.

6 zucchini
2 teaspoons salt
3 tablespoons margarine
1 clove garlic, minced
salt and black pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • Cut zucchini into thin, noodle-like strips (a mandoline works well for this). Toss with the 2 teaspoons salt, and place in a colander to drain for 30 minutes.
  • Bring a pot of water to boil. Add zucchini; cook for one minute. Drain; rinse immediately with cold water to stop cooking.
  • Heat margarine in a large skillet over medium high heat. Add zucchini and garlic; cook and stir until just tender, about 5 minutes. Season to taste with salt and pepper. Sprinkle with Parmesan cheese.

1 tablespoon butter
1 sweet onion, chopped
1 clove garlic, minced
2 tomatoes, chopped
½ cup water, divided
1 cube chicken bouillon
1 large zucchini, thinly sliced
ground black pepper to taste

Steps:

  • Melt the butter in a large skillet over medium heat; cook and stir the onion in the melted butter until translucent, about 5 minutes. Add the garlic; cook and stir 1 minute more. Stir the tomatoes and 1/4 cup water into the mixture; cover. Cook until the tomatoes have reduced slightly, stirring occasionally, about 5 minutes.
  • Pour another 1/4 cup water into the skillet, and add the bouillon cube; stir until the bouillon is dissolved. Add the zucchini; continue cooking until the zucchini is tender, 5 to 7 minutes. Season with black pepper to serve.

1 large garlic clove
3/4 cup sun-dried tomato (fresh not oil packed)
1 tablespoon oregano leaves (fresh if possible)
2 ounces parmigiano-reggiano cheese
1 tablespoon extra virgin olive oil
1 teaspoon aged balsamic vinegar
kosher salt, to taste
2 teaspoons extra virgin olive oil
3/4 cup red onion, thinly sliced
3 1/2 cups zucchini (cut into strings)

Steps:

  • Puree garlic cloves in the bowl of a food processor. Add sun dried tomatoes and pulse till coarsely crumbled. Add oregano and pulse. Add cheese, 1 tbsp olive oil and balsamic vinegar; pulse till crumbly. Season to taste with salt.
  • Measure 3/4 cup of crumbles, reserving remainder for another use. Heat a large sauté pan over medium high heat. Add 2 tsp olive oil and heat. Add onions and sauté till limp and just beginning to caramelize. Add zucchini strings and sauté gently until zucchini is bright green, about 4 minutes.
  • Add the sun dried tomatoes, parmigiano crumbles and toss to coat zucchini completely.
  • Adjust seasonings to taste with kosher salt. Serve immediately with reserved crumbles sprinkled on top.

2 lbs zucchini
1 tbsp avocado or olive oil (for frying)
1/2 tsp salt
Ground black pepper (to taste)
1-2 garlic cloves (grated)
2 tbsp dill, basil or Italian parsley (finely chopped)
Parmesan cheese (to taste)

Steps:

  • Chop garden or farmer's market large zucchini into 1/2 inch thick cubes or quarter moons. If zucchini is medium size, half moons are perfect. And baby zucchini could be sliced into rounds.
  • Preheat large ceramic non-stick skillet with tall sides on high heat and then swirl oil. Add zucchini, salt and pepper.
  • Cook for 3 minutes, stirring maximum 2 times. Let zucchini touch the hot skillet surface for at least a minute to really get that sear. Don't stir constantly to avoid pale "steamed" zucchini. And don't stir cooked zucchini to make it mushy too much.
  • After zucchini is cooked, sprinkle with herbs and freshly grated garlic. Stir and grate fresh Parmesan cheese on top. Serve warm or cold.

1 (12 ounce) package frozen zucchini veggie spirals

Steps:

  • Preheat oven to 425 Degrees. Line two baking sheets with aluminum foil and spray with cooking spray.
  • In one bowl, place beaten eggs. In a second bowl, place flour. In a third bowl, mix together bread crumbs, garlic powder and parmesan cheese.
  • Cut zucchini noodles into shorter pieces (about 5-6 inches). Squeeze any extra moisture out of your zucchini with a paper towel. Working in batches, place dredge the noodles through the flour, shaking off the excess. Dredge through eggs, shake off excess, then dredge through parmesan mixture.
  • Spread thin (into one layer) on prepared baking sheets. Bake until golden and crisp, about 12-15 minutes.
  • Dip in ketchup or your favorite fry sauce.
