SAUTéED ENDIVE WITH BALSAMIC BUTTER



Sautéed Endive With Balsamic Butter image

Searing the endives so they retain some crispness, then topping them with balsamic butter, gives this dish, adapted from the cookbook "Eat in My Kitchen" by Meike Peters, its panache. Because it's hard to make less balsamic butter than is called for, you wind up with enough for about a dozen endives, not just three; the endives portion of the recipe can be easily expanded to match, making this a great dish for entertaining. Or, use the leftover butter to top fish, roasted carrots and such. The butter keeps well in the refrigerator but should be used at room temperature; heating may cause it to break down.

1 tablespoon extra-virgin olive oil
3 medium-small heads Belgian endive, trimmed, halved vertically
Fine sea salt
2 tablespoons good-quality balsamic vinegar
3 tablespoons unsalted butter, in small pieces
Pinch of sugar
Coarsely ground black pepper
3 tablespoons fresh marjoram or oregano leaves

Steps:

  • Heat oil in a heavy skillet. Add endive halves, cut side down, and sear on medium-high heat for a couple of minutes per side, turning once, until golden brown but still somewhat firm in the middle. Salt to taste, transfer to a serving dish and tent with foil to keep warm.
  • Simmer vinegar in a small saucepan for about a minute. Remove from heat and whisk in butter bit by bit. Whisk in sugar and, if desired, some salt and pepper.
  • Drizzle some of the balsamic butter on endives, strew with marjoram and dust with pepper. Serve. Remaining balsamic butter can be refrigerated for future use.

1 lemon
3 pounds uncooked medium shrimp, peeled and deveined
1 tablespoon olive oil
1 small onion, chopped
2 ribs celery, chopped
2 cloves garlic, crushed and chopped
salt and ground black pepper to taste
1 sprig fresh rosemary, chopped, or to taste
¼ teaspoon dried basil
¼ teaspoon dried oregano
¼ teaspoon ground coriander
1 bay leaf
¾ cup white wine, or to taste
1 teaspoon Worcestershire sauce, or to taste

Steps:

  • Squeeze lemon over shrimp and set aside.
  • Heat olive oil over medium heat. Add onion, celery, and garlic. Season with salt and pepper and cook until tender, about 5 minutes. Stir in rosemary, basil, oregano, coriander, and bay leaf. Add white wine and Worcestershire sauce; cook until sauce is slightly reduced and flavors come together, 8 to 10 minutes.
  • Add shrimp to the sauce and cook until pink, 5 to 7 minutes more.

1 lb Belgian endives (4 or 5)
1 teaspoon sugar
3/4 teaspoon salt
1 1/2 tablespoons fresh lemon juice
2 tablespoons unsalted butter
10 oz large (21 to 25 per lb) shrimp in shell, peeled and deveined
1/4 cup heavy cream
Garnish: chopped fresh herbs

Steps:

  • Trim endives and quarter lengthwise. Cut out and discard cores, then cut endives diagonally into 1/2-inch-wide strips. Toss with sugar, 1/2 teaspoon salt, and 1 tablespoon lemon juice in a bowl.
  • Melt butter in a 10-inch nonstick skillet over moderately low heat and add endive mixture, tossing to coat. Cook, covered, stirring occasionally, until endive is tender, 10 to 12 minutes.
  • While endive is cooking, toss shrimp with remaining 1/4 teaspoon salt and 1/2 tablespoon lemon juice in a bowl.
  • When endive is tender, increase heat to moderate and cook, uncovered, stirring, until juices are evaporated, about 2 minutes. Stir in cream and simmer 1 minute.
  • Scatter shrimp over endive and cook, covered, over low heat, without stirring, until shrimp are just cooked through, 3 to 5 minutes.

3 tablespoons olive oil
1 1/2 pounds medium shrimp, peeled and deveined
Coarse salt and ground pepper
1 1/2 pounds endive (5 to 6 heads), sliced crosswise 1 inch thick
1/2 cup dry white wine (optional)
2 tablespoons coarsely chopped fresh parsley
Lemon wedges, for serving (optional)

Steps:

  • Heat 2 tablespoons oil in a large skillet over high heat. Season shrimp generously with salt and pepper. Add to skillet; cook, tossing frequently, until just opaque throughout, 4 to 5 minutes. Remove shrimp.
  • Add remaining tablespoon oil to skillet; add endive, and season with salt and pepper. Cook over high heat just until endive begins to soften, 2 to 3 minutes. Add wine (if using); cook until syrupy, 3 to 4 minutes.
  • Return shrimp to skillet. Add parsley, and toss until shrimp is heated through, about 1 minute. Serve with lemon wedges, if desired.

GARLIC BUTTER SAUTEED SHRIMP

The easiest recipe for cooking shrimp. The shrimp is sauteed in garlic butter and lemon sauce and completely ready in 10 minutes.

1 lb large raw shrimp, peeled & deveined
8 Tbsp unsalted butter
2 garlic cloves, minced
1 tsp Italian seasoning
½ tsp salt
¼ tsp ground black pepper
½ tsp ground paprika
1 lemon, to taste

Steps:

  • Defrost shrimp and completely pat dry. Devein the shrimp and remove the tail, optional.
  • Combine the ingredients for the seasoning: the Italian seasoning, salt, pepper and paprika.
  • In a bowl, coat the shrimp with the seasoning and mix well.
  • In a skillet, over medium heat, melt the butter and garlic, stirring frequently.
  • Add shrimp and cook 2-3 minutes per side.
  • Remove from heat and drizzle freshly squeezed lemon, mix to combine.
  • Enjoy.

4 tablespoons butter
2 tablespoons finely chopped parsley

Steps:

  • Drain the endives well on absorbent paper towels.
  • Heat two tablespoons of the butter in a heavy skillet large enough to hold the endives without crowding. Add the endives and cook, turning often so that they brown evenly all over, about five minutes.
  • Transfer the endives to a warm serving dish. Melt the remaining butter in the skillet and cook it until it almost turns brown. Pour this over the endives. Sprinkle with parsley and serve.

12 ounces uncooked large shrimp, peeled and de-veined
5 teaspoons extra-virgin olive oil
Salt and freshly ground black pepper
3 teaspoons fresh lime juice
1/4 cup lightly packed fresh Italian parsley leaves
1/4 cup low-fat sour cream
1/4 cup low-fat yogurt
3 tablespoons chopped fresh chives
1/4 cup finely chopped fresh tarragon or 1 tablespoon finely chopped fresh thyme leaves
2 tablespoons drained capers
2 heads Belgian endive

Steps:

  • To make the shrimp salad: Toss the shrimp with 3 teaspoons (1 tablespoon) of oil in a large bowl to coat. Sprinkle with salt and pepper. Heat a heavy large non-stick skillet over medium-high heat. Saute the shrimp until they are just cooked through or pink, about 1 1/2 minutes per side. Transfer the shrimp to a plate and toss with 1 teaspoon lime juice. Cool completely. Cut the shrimp into small cubes.
  • To make the parsley sauce: Blend the parsley, sour cream, yogurt, and remaining 2 teaspoons lime juice in a food processor until the parsley is finely chopped. Season the sauce, to taste, with salt and pepper.
  • Toss the shrimp with the chives, tarragon, capers, and remaining 2 teaspoons of oil in a large bowl to coat. Season the salad, to taste, with salt and pepper.
  • Separate the endive leaves and arrange on a platter. Spoon about 1 generous tablespoon of the shrimp salad atop each leaf. Drizzle the parsley sauce over the salad and serve immediately.

WARM SHRIMP AND ENDIVE SALAD

1 medium vine-ripened tomato
2 teaspoons sesame seeds
3/4 pound large shrimp (about 16)
4 medium Belgian endives
1/2 cup house vinaigrette
2 teaspoons Dijon mustard
2 teaspoons coarse-grained mustard
2 teaspoons soy sauce
1 teaspoon fresh lemon juice
fine sea salt
freshly ground white pepper
1 tablespoon corn oil
2 tablespoons thinly sliced fresh cilantro leaves

Steps:

  • Peel and seed tomato and cut into 1/4-inch dice. In a dry small heavy skillet toast sesame seeds over moderate heat, stirring occasionally, until golden, about 3 minutes. Shell and devein shrimp.
  • Trim top 1 1/4 inches from each endive and separate leaves, discarding small inner core. With a sharp knife cut away soft yellow edges of each leaf (save trimmings for another use), leaving only firm white centers, and cut centers lengthwise into 1/4-inch-wide strips.
  • In a small bowl whisk together vinaigrette and mustards. In a bowl combine endives, tomato, sesame seeds, soy sauce, lemon juice, and 3 tablespoons mustard vinaigrette, tossing to coat, and season with sea salt and white pepper.
  • Season shrimp with sea salt and white pepper. In a large heavy nonstick skillet heat oil over moderately high heat until just smoking. Add shrimp in one layer and sauté until undersides are golden brown, about 1 minute. Turn shrimp over and sauté until just cooked through, about 30 seconds.
  • Divide shrimp among 4 plates, mounding them. Add 5 teaspoons sliced cilantro to endive mixture, tossing to mix, and mound mixture over shrimp. Garnish salads with remaining teaspoon cilantro.
