SESAME SAUTéED CABBAGE

Fast with Five Fridays Sesame Sautéed Cabbage makes for a quick and delicious side dish.

Number Of Ingredients 10

3 tablespoons sesame seeds
2 tablespoons refined coconut oil
1 medium carrot, cut into thin bite-size strips
1 red or orange sweet pepper, chopped
1 small onion, halved and thinly sliced (about ½ cup)
1 small green cabbage (1 ¾ pounds total), cored and thinly sliced to make coarse shreds (about 7 cups total)
¼ cup water
½ teaspoon sea salt
¼ cup ground black pepper
White and/or black sesame seeds (optional)

Steps:

  • In a large dry skillet cook sesame seeds over medium-low heat for 1 to 2 minutes or until lightly toasted, shaking skillet occasionally to toast seeds evenly. Transfer seeds to a small bowl; set aside to cool.In the same skillet, heat oil over medium heat. Add carrot, sweet pepper, and onion. Cook for 5 minutes, stirring occasionally. Add cabbage; toss to combine (skillet will be full). Add water. Cover and cook for 10 minutes or until cabbage is tender, stirring occasionally.Meanwhile, transfer cooled sesame seeds to a clean coffee grinder. Grind until the seeds are coarsely ground. Sprinkle ground seeds over cabbage mixture. Sprinkle with salt and black pepper. Toss to combine. If desired, sprinkle with additional white and/or black sesame seeds before serving. Enjoy!

2 teaspoons canola oil
1 small onion, sliced
1 clove garlic, minced
1 teaspoon minced ginger
1 head napa cabbage, cleaned and sliced
2 tablespoons soy sauce
1 tablespoon rice vinegar
2 teaspoons toasted sesame oil

Steps:

  • In a large saute pan over medium-high heat, add the canola oil and heat. Add the onion, garlic and ginger and saute, stirring, for 1 minute. Add the cabbage and cook until just starting to wilt, about 2 minutes. Add the soy sauce and rice vinegar and stir well and cook just until cabbage is wilted, about 3 minutes. Remove from heat and drizzle with the sesame oil.

1/2 head of green cabbage
1 clove of garlic, mashed or finely diced
2 tablespoons of soy sauce
1 small red chili pepper, thinly sliced and seeds removed
1 teaspoon of sesame oil
1 teaspoon each of black and white sesame seeds
2 teaspoons of vegetable oil

Steps:

  • Cut the cabbage into roughly 2 cm/1 inch pieces.
  • Toss it into a bowl with the soy sauce, garlic, sesame oil, chili pepper, and sesame seeds and massage it to really rub in the flavours.
  • Heat 2 teaspoons of vegetable oil in a skillet on high heat. Once the oil is hot, toss in the cabbage.
  • Saute for about 5 minutes, mixing often so it cooks evenly.
  • Top with more sesame seeds and some green onion if you're feeling frisky.

1 TBS EACH: Unsalted Butter & Neutral Oil ((Peanut, Vegetable or Grapeseed))
2-3 Cloves Garlic (- peeled & finely diced)
2 teaspoons Fresh Ginger (- grated (or 1 teaspoon Ginger Powder))
1 small Head Cabbage (- thinly sliced (about 2 pounds) (SEE NOTES))
1 small Yellow Onion (- thinly sliced)
2 large Carrots (- peeled & shredded)
3 large Scallions (- sliced; white/light green part and dark parts separated)
Kosher Salt & Pepper
2 TBS Reduced Sodium Soy Sauce
1 TBS EACH: Honey & Rice Vinegar
1 ½ tsp Mirin
¼ tsp Toasted Sesame Oil
1/8 - ¼ tsp Crushed Red Pepper Flakes - or more to taste

Steps:

  • Make the sauce: In a small bowl or liquid measuring cup, combine all the ingredients from the sauce list. Whisk well to thoroughly combine. Set aside.
  • Stir-fry onions & aromatics: In a large sauté pan over medium-high heat, melt the butter with the oil. Add the onion and stir-fry until almost softened, about 3 minutes. Add the garlic and ginger to the pan along with the white/light green parts of the scallions. Cook, stirring, until fragrant about 1 minute.
  • Add cabbage & carrots: Increase the heat to high and immediately add the cabbage and carrots to the pan and stir well. Let the cabbage cook for 1 minute undisturbed (you want the cabbage to slightly char). Stir and toss the mixture well and then allow to cook undisturbed for another 1 minute. Toss rapidly and continue to cook, stir-frying, for 1 minute.
  • Add sauce: Add the sauce to the pan and toss well so everything is coated. Cook until the cabbage is just tender and softened, about 1 minute.
  • Taste: Remove from heat and stir in the dark green parts of the scallions. Taste and adjust for seasoning with salt, pepper, fresh lime juice and/or sriracha. Transfer to a serving plate.
  • Serve: Top with optional garnishes and serve hot. Enjoy!

6 ounces shiitake mushroom caps, sliced
4 cups thinly sliced napa cabbage
1 tablespoon reduced-sodium soy sauce
¼ teaspoon freshly ground black pepper
¼ cup cilantro leaves
2 tablespoons toasted sesame seeds

Steps:

  • Heat a large skillet over high heat. Add 2 tablespoons sesame oil; swirl to coat. Saute mushrooms until browned, about 4 minutes. Add cabbage; saute for 2 minutes.
  • Remove skillet from heat. Mix in 1 1/2 teaspoon sesame oil, soy sauce, and black pepper until well combined. Top with cilantro and sesame seeds.
