SAUTEED SCAMPI IN MACADAMIA NUT OIL

Steps:
- Warm a little macadamia nut oil in a non-stick frying pan just enough to cover the bottom.
- Salt and pepper the scampi. When the oil is heated, saute the scampi quickly and uniformly, 2 to 3 minutes will suffice, just to cook through and until they curl slightly and turn red. The scampi must remain crispy. Set aside.
- Chop the olives finely with the capers and 3 leaves of the basil. Set aside.
- In the center of the plate, arrange the olive mixture. Place 2 pieces of scampi, and several small pieces of nicoise olives on top, and garnish with a bouquet of fresh basil.
SCALLOPS SAUTEED IN MACADAMIA NUT OIL WITH A MACADAMIA NUT CRUST

- Toast the macadamia nuts in the oven for about 5 to 10 minutes until they are toasted blonde, watch them carefully as they burn quickly. Once they are toasted blonde, let them cool down and grind them.
- Cut 7 scallops into 2 horizontal pieces. Brush them lightly with macadamia nut oil and press them into the ground macadamia nuts to coat completely. Arrange them on a baking sheet and set aside.
- Remove the greens from the fennel and reserve for garnish or another use. Slice the bulb thinly and put the pieces in a small frying pan with the macadamia nut oil, water, salt, pepper, and star anise. Bring to a simmer and cover for 15 to 20 minutes, simmering slowly until it is the consistency of a compote. Set aside. Heat on high in the oven for 10 minutes before using.
- Put the sheet with the scallops in the oven only for 2 minutes just to stiffen the scallops and cook through. Place the fennel confit in the center of the plate and arrange the 3 1/2 roasted scallops in the shape of a fan. Garnish with the fennel greens.
BAKED HERB AND MACADAMIA CRUSTED FISH
A simple crusted fish dish using macadamias and herbs. Baked in the oven. Serve with veges, chips or a salad on the side. You can vary the herbs used dependant upon taste or availability. This crust is also great on flattened chicken breast fillets

- Preheat oven to 180°C (360°F ) and spray a baking dish with cooking spray.
- Place fillets into dish and brush with the macadamia oil.
- In a small bowl combine the crust ingredients and mix to form a thick paste.
- Spread the macadamia crust over the top of the fish fillets. press on evenly using your hands or the back of a soon.
- Bake for approx 10 minutes , or until the fish flakes when tested with a fork. The cooking time will very depending on the thickness of the fish. Check for doneness after each few minutes.

The best scampi ever. Will melt in your mouth. Serve with a rice pilaf and salad for a wonderful meal.

Steps:
- In a small bowl, combine flour, salt, pepper and cayenne pepper. Mix thoroughly. Dredge shrimp in flour mixture.
- In a large skillet, saute dredged shrimp in olive oil for 5 minutes over high heat. Toss shrimp often to prevent burning. Transfer shrimp with a slotted spoon to a serving dish, leaving the oil in the pan.
- In the same pan, saute the garlic, shallot, parsley and oregano over medium heat for 3 minutes; stirring constantly. Spoon the mixture over the shrimp. Return pan to the heat. Preheat your broiler for medium heat.
- Pour the wine and brandy into the skillet and ignite with a match or lighter. When the flames die down, stir to loosen any browned bits on the bottom of the skillet; pour over shrimp.
- Place the serving dish of shrimp in a preheated broiler for about 2 minutes.
