- Heat a skillet over medium high heat. Add oil and onion and saute 2 minutes. Add cabbage and turn in pan, sauteing it until it wilts, 3 to 5 minutes. Add vinegar to the pan and turn the cabbage in it. Sprinkle sugar over the cabbage and turn again. Season with mustard seed, salt and pepper and reduce heat a bit. Let cabbage continue to cook 10 minutes or until ready to serve, stirring occasionally.
SAUTEED PURPLE CABBAGE WITH CARAMELIZED ONIONS

- Cut the onion in half, then cut into thin strips, about 1/2 inch thick. Heat a large fry pan on medium heat, (a pan that has a tight fitting lid). Add evoo, and toss in garlic, then onions. let them get transparent, then s & p to taste. continue cooking until the onions are lightly golden, about 8 minutes. In the mean time, chop the cabbage into the same thickness of the onion. Toss into the pan, stir. Add the water, and cover for 4 - 5 minutes. check until wilted but slightly crunchy. enjoy.
SAUTEED CABBAGE
This is very yummy! Red cabbage has a much better flavor than green, so it is better to use. Any spices you want can be used, but salt and pepper is simplest.

This is a really simple recipe I came up with last night during a cabbage crisis! Absolutely delicious, even my husband who thinks he hates cabbage enjoyed this!

Steps:
- Heat lidded skillet over a medium heat and add butter.
- Saute the onion and bacon in the butter until bacon begins to render fat and onion is just translucent.
- Add sliced cabbage.
- Place lid on skillet to allow cabbage to soften.
- Cook 4-5 minutes, stirring occasionally.
- Turn heat up to high and stir fry for a few minutes.
- The cabbage should begin to colour and caramelize with the onions.
- Season with salt and pepper.
- Serve immediately.
- Can be mashed into plain mashed potatoes for a unique champ or "bubble and squeak" if re-fried.

This recipe came about because I had leftover cabbage from our St.Patrick's Day dinner. Its a fairly common recipe but this is a little sweet & spicy, everyone who tastes this asks me for the recipe and it is sooo easy.

- Core and shred your cabbage, I do a rough chop, and put aside in a bowl. Then dice your onion, making the pieces medium size.
- Take a 10"skillet and place about 2-3 tablespoons butter, melt the butter and saute the onions until they just start to turn brown around the edges. Add the cabbage and gently fold with the onions, add the remaining butter (just put it in on top of the cabbage,it will melt). Place lid on skillet and simmer at medium heat for 5 minutes. Then uncover, stir the mix and add all your spices. Stir again and place the cover back on and simmer for another 5-7 minutes.
- We like a little body to ours, if you like your cabbage soft just simmer a little longer.
- This is easy, quick and yummy. You can add caraway seeds or other spices to alter to your own tastes.

- Cook noodles according to packet instruction. While the noodles are cooking, grab a large frying pan and place over medium heat; add bacon and cook until golden brown. Remove from pan. Top with a splash of olive oil, if needed, and add cabbage and fennel. Sauté until veggies begin to soften then add caraway seeds, splash of rice vinegar, bacon, and ¼ cup chicken broth. - Preheat oven to 350 degrees. Heat oil in a large, heavy ovenproof saucepan over medium heat. Cook onion until edges start to caramelize, 10 to 12 minutes. Add sugar, and cook 1 minute more. - Transfer cabbage to a serving platter using a slotted spoon; discard cinnamon stick and bay leaf. Bring remaining liquid in saucepan to a simmer over medium-high heat. Cook until reduced by half, about 10 minutes (you will have about 1 cup sauce). Spoon sauce over cabbage.
