PERFECT SAUTéED POTATOES

Perfect sautéed potatoes image

A wonderful alternative to chips and so much simpler to prepare

Provided by Good Food team

Categories     Lunch, Side dish, Supper

Time 25m

Number Of Ingredients 2

1kg waxy potato, such as Maris Peer or Desirée
6-8 tbsp sunflower or olive oil

Steps:

  • Cut 1 kg waxy potatoes into chunks.
  • Bring a large pan of water to the boil, then cook the potatoes for 3 mins. Drain, shake out onto a kitchen paper-lined tray and leave to cool.
  • When ready to serve, heat 6-8 tbsp sunflower or olive oil in a large non-stick frying pan until you can feel a strong heat rising.
  • If your pan isn't large enough, fry the potatoes in two batches - rather than crowding them. Have kitchen paper ready to drain them on. Add the potatoes in a single layer, not too tightly packed.
  • Turn the heat to medium-high, so that the potatoes sizzle, but don't stir until they start to brown underneath.
  • Turn them all evenly 2 or 3 times until nicely browned all over - this can take about 7 mins.
  • Then lift out with a fish slice or large slotted spoon to drain on more kitchen paper. Sprinkle with sea salt.

Provided by Bev, Bev Cooks

Yield 4 servings

2 Tbs. Italian seasoning
3 Tbs. real butter
3 apples, sliced (I used gala for these, but anything goes!)

2 pounds fingerling potatoes, halved or quartered into bite-sized pieces
Coarse salt

Steps:

  • Preheat oven to 400°F.Arrange potatoes on a large baking sheet, and drizzle with olive oil and a pinch of salt. Roast for one hour.In the meantime, combine the flour, Italian seasoning and a pinch of salt in a shallow bowl. Dredge the pork chops through the mix, coating on both sides. Melt 2 tablespoons of butter in a large skillet and sear the pork chops in the butter, 4 minutes per side. Remove and cover to keep warm.Add the remaining 1 tablespoon of butter to the skillet, along with the sliced apples, cinnamon, brown sugar and a pinch of salt. Toss the apples to coat, then cover and sauté for five minutes. Remove the lid and sauté another minute or two, until they're tender and the brown sugar is caramelizing the apples. This is a good thing. On dinner plates, place a pork chop, a draping of apples, and a helping of potatoes. Pour any remaining butter sauce and pork juices over each plate, garnish with rosemary and serve.

WHIPPED SWEET POTATOES WITH CARAMELIZED APPLES

Whipped Sweet Potatoes with Caramelized Apples image

A topping of caramelized diced apples makes a beautiful presentation, but also works wonderfully with the flavor of the sweet mash -- so well that nobody will miss the standard mini marshmallows.

Provided by Martha Stewart

Number Of Ingredients 9

4 large sweet potatoes, pierced with the tines of a fork
1/4 cup (1/2 stick) unsalted butter, softened
2 tablespoons heavy cream
1/2 cup applesauce, preferably homemade
2 teaspoons grated fresh peeled ginger
1 teaspoon coarse salt
Freshly ground pepper
2 apples (1 pound), peeled, cored, and cut into 1-inch pieces
3 tablespoons sugar

  • Preheat oven to 375 degrees. Arrange potatoes on a baking sheet lined with parchment. Bake until tender, 1 hour 10 minutes to 1 hour 20 minutes. Remove from oven; let stand until cool enough to handle.

  • Meanwhile, toss apples with sugar in a bowl. Melt remaining 2 tablespoons butter in a large skillet over medium heat. Add apple mixture; cook, stirring occasionally, until apples are golden and caramelized, about 10 minutes.
  • Remove potato mixture from oven; top with caramelized apples, and serve.

HARVEST CHICKEN SKILLET WITH SWEET POTATOES AND BRUSSELS SPROUTS

Harvest Chicken Skillet with Sweet Potatoes and Brussels Sprouts image

With sweet potatoes, apples, Brussels sprouts and bacon, this healthy Paleo and Whole30 approved chicken skillet is packed with flavor and delivers every food group in one pan!

Provided by Erin Clarke / Well Plated

Categories     Side Dish

Time 50m

Number Of Ingredients 13

1 tablespoon olive oil
1 pound boneless, skinless chicken breasts (cut into 1/2-inch cubes)
1 teaspoon kosher salt (divided)
1/2 teaspoon black pepper
4 slices thick-cut bacon (chopped)
3 cups Brussels sprouts (trimmed and quartered (about 3/4 pound))
1 medium sweet potato (peeled and cut into 1/2 inch cubes (about 8 ounces))
1 medium onion (chopped)
2 Granny Smith apples (peeled, cored and cut into 3/4 inch cubes)
4 cloves garlic (minced (about 2 teaspoons))
2 teaspoons chopped fresh thyme (or 1/2 teaspoon dried thyme)
1 teaspoon ground cinnamon
1 cup reduced-sodium chicken broth (divided)

Steps:

  • Heat the olive oil in a large, nonstick or cast iron skillet over medium high, until hot and shimmering. Add the chicken, 1/2 teaspoon kosher salt, and black pepper. Cook until lightly browned and cooked through, about 5 minutes. Transfer to plate lined with paper towels.
  • Reduce skillet heat to medium low. Add the chopped bacon and cook until crisp and brown and the fat has rendered, about 8 minutes. With a slotted spoon, transfer the bacon to a paper towel-lined plate (I simply laid another paper towel on top of the plate with the chicken, then stacked the bacon on that). Discard all but 1 1/2 tablespoons bacon drippings from the pan.
  • Increase skillet heat back to medium high. Add Brussels sprouts, sweet potato, onion, and remaining 1/2 teaspoon salt. Cook, stirring occasionally, until crisp-tender and the onions are beginning to look translucent, about 10 minutes.
  • Stir in the apples, garlic, thyme, and cinnamon. Cook 30 seconds, then pour in 1/2 cup of the broth. Bring to a boil and cook until evaporated, about 2 minutes. Add the reserved chicken and remaining 1/2 cup broth. Cook until heated through, about 2 minutes. Stir in reserved bacon and serve warm.

  • In the bowl of an electric mixer, combine all of the ingredients for the dough. Wrap in plastic wrap and let rest in the refrigerator. For easier handling, as it is a sticky dough, you could also place in the freezer for 10 minutes prior to using.
  • Meanwhile, in a saute pan with a little bit of oil or vegan margarine (I use a very small amount of both), saute the onions. Once softened, add the cabbage, salt and apple cider vinegar.
  • Using a well-floured surface and rolling pin, roll dough to about 1/8 inch thick. Allow to rest for a few minutes. Using a large round cookie cutter, cut circles and place about 1 Tbl of filling in the center of each. Fold over and press to seal. Using a fork, crimp edges and use the cookie cutter if you need to trim up any excess. The most important thing is to be sure they are sealed or they will seep out during the boiling process. Place on a lined sheet pan as you make them and complete all before proceeding.
  • Heat a pot of salted water to boiling. Gently place a few pierogi at a time in the water. They will float to the top when they are ready. Remove to a towel-lined cookie sheet to drain.
