GERMAN PORK CHOPS AND SAUERKRAUT
As a soldier during WWII my Dad learned to make this hearty pork dish from a local German woman during the Allied occupation of Germany. I don't know the German name for it, but it is delicious!

PORK SAUTEED WITH SAUERKRAUT
I'm not sure if this is authentically German, but with pork, beer and sauerkraut it's close enough for me. This is excellent served over spaetzle.

Meat and sauerkraut: It's a combo we all know and love, but no version takes it to such exalted heights as Alsatian choucroute garnie. Making it requires knowing a thing or two about all the cuts of meat involved and how best to handle them. This recipe will ensure that your lean cuts don't dry out and that your tough ones become meltingly tender.

From cookindocs.com
- Green beans. Green beans are a good choice when it comes to pairing a pan-fried meat-based dish. Steamed green beans are lighter and milder, while the sauteed version is more flavorful.
- Roasted broccoli and garlic. Besides green beans, another green vegetable that works well with many meat-based dishes, including pork chops and sauerkraut is broccoli.
- Herb-roasted potatoes. Herb-roasted potatoes are another way to go with your pork chops and sauerkraut. You can opt for regular potatoes or sweet potatoes in this recipe, but don’t forget to sprinkle some herbs over the potatoes before roasting for the most flavorful dish coming out from the oven.
- Salads. If you prefer the refreshing and light flavor of a salad, then make a bowl of green or fruit salad to accompany your pork chops and sauerkraut.
- Rye bread. Rye bread is very common in some European cuisines like German or Russian, and this kind of bread has a darker color than most average white wheat-based bread.
