Tender portobello mushrooms and spinach are simmered with Parmesan cheese, wine and seasoning. Unique, easy, and extremely tasty side dish! Excellent with a steak and baked potato dinner.

Steps:
- Melt butter in a large skillet or saute pan over medium heat. Saute mushrooms, spinach, basil, salt, pepper and garlic until mushrooms are tender and spinach is heated through.
- Pour in wine and reduce heat to low; simmer 1 minute. Stir in Parmesan cheese and serve.

Excellent served as a side dish with steak, roast beef or even chicken. The lemon gives the mushrooms a nice tangy flavour which mixes well with the flavour of the red wine.

- Melt butter in large frying pan.
- Add sliced mushrooms and sauté over high heat until they squeak and sizzle and are nicely browned.
- Add salt, pepper and red wine.
- Simmer for 5 minutes.
- Add lemon juice and parsley.
- Toss well.

SAUTEED SPINACH AND MUSHROOMS

Steps:
- Heat the oil in a medium saute pan or skillet (not nonstick) over medium-low heat. Add the garlic and cook until fragrant, about 2 minutes (do not let the garlic brown). Push the garlic off to the side of the pan and add the mushrooms. Increase the heat to medium high and season the mushrooms with salt and pepper to taste. Cook, stirring occasionally, until the mushrooms are cooked through and begin to become golden in spots, 10 to 12 minutes.
- Add the spinach, sprinkle with an additional pinch of salt and turn with tongs until wilted. (If you can't fit all the spinach in the pan, cover it for a few minutes, then uncover, stir and add the rest.) Transfer to a serving platter, drizzle with the vinegar and serve warm.
SAUTEED SPINACH WITH BACON AND ONIONS

- In a large saute pan, melt the bacon grease over medium heat. Add the onion and garlic and stir to cook until the onions are very soft, about 5 minutes. Add the vinegar, crushed red pepper flakes, salt and pepper and stir; add the spinach and toss it around, cooking until it's just wilted, 1 to 2 minutes. Serve immediately so the spinach is wilted but not soggy.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside. Reserve 2 tablespoons bacon fat.
- Place eggs in a saucepan and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and cut in wedges.
- Return 2 tablespoons bacon fat to skillet, stir in sugar, vinegar, water and salt. Keep warm.
- Wash and remove stems from spinach, dry thoroughly and break into pieces in salad bowl. Pour warm dressing over and toss until coated.
- Top salad with mushrooms and bacon, garnish with egg.

- Preheat oven to 450 degrees. On a large rimmed baking sheet, toss bread with 2 tablespoons oil; season with salt and pepper. Bake, tossing occasionally, until toasted, 4 to 6 minutes. (To store, keep croutons in a resealable bag, up to 1 week.)
- In a large bowl, whisk together remaining oil, vinegar, and Dijon; season with salt and pepper. (To store, refrigerate dressing, up to 1 week.)
- Toss mushrooms with dressing; let stand 5 minutes. Add spinach, onion, and croutons to bowl; toss, and serve immediately.

- Whisk together the 1/4 cup oil, vinegar, shallots, and Dijon for the vinaigrette in a small bowl or measuring cup; season with salt & pepper. Set vinaigrette aside.
- Saute mushrooms and garlic in the 2 tablespoons olive oil and 2 tablespoons unsalted butter until mushrooms are slightly softened, 5-8 minutes; toss with parsley.
- Toss spinach with vinaigrette. Divide spinach among 6 salad plates; top each salad with warm mushroom mixture.
- Serve salads immediately.
SPINACH SALAD WITH BACON, MUSHROOMS, AND ONIONS
Steps:
- 1. Cover the eggs in water, bring to a boil, turn off the heat, cover and let sit for 7 minutes. 2. Transfer the eggs to cold water and let cool enough to hold. 3. Remove the shells from the eggs and slice. 4. Meanwhile, cook the bacon in a pan and set aside reserving 2 tablespoons of bacon grease. 5. Caramelize the onions in the remaining bacon grease and set aside. 6. Caramelize the mushrooms in the remaining bacon grease and set aside. 7. Add the vinegar to the pan and deglaze it. 8. Add the reserved bacon grease, sugar, mustard, garlic and season with salt and pepper and remove from heat. 9. Assemble salad and toss with dressing.

- Place the mushrooms in a colander and rinse with water. Drizzle a tablespoon of olive oil over the mushrooms and shake to coat.
- In a medium size bowl, add the soy sauce, red wine vinegar, red wine, remaining olive oil, garlic, thyme, red pepper flakes, basil and a dash of garlic salt and stir until combined. Taste the mixture and adjust according to your preference.
- Place the oil coated mushrooms into the hot sauté pan and sauté for 7-8 minutes. The large mushrooms will take a few extra minutes to cook.
