MUSHROOM DUXELLE FOR PHYLLO KISSES

- In a large skillet, melt 2 tablespoons of butter and saute the mushrooms for 15 to 20 minutes until all the moisture is gone. Add the shallots and garlic and saute 2 minutes longer. Remove the skillet from the heat and add in the Boursin, Asiago, salt and pepper. Mix thoroughly and allow it to cool in an uncovered bowl. While the mushroom mixture is cooling prepare the phyllo. Layer 3 sheets of phyllo pastry, lightly brushing each layer with melted butter using a pastry brush. Cut the layered phyllo into 4-inch squares using a pastry wheel or sharp knife. Keep pastry covered with a lightly damp towel until ready to fill. Using a spoon, place a small amount of the mushroom duxelle into the center of each Phyllo square and draw the corners of the squares up to the center and twist. Lightly brush with melted butter and place in a lined baking sheet. Bake for 7 to 10 minutes at 350 degrees.

These tasty phyllo tarts are filled with goat cheese and lots of cooked mushrooms.

- Preheat oven to 400 degrees. In a large nonstick skillet, melt 1 tablespoon butter over medium. Add shallots, garlic, and thyme and cook, stirring, until shallots are translucent, 4 minutes. Add mushrooms and season with salt and pepper; cook until mushrooms are tender and any liquid has evaporated, 20 minutes. Let cool 5 minutes, then stir in goat cheese.
- Lay 1 sheet phyllo on a work surface and lightly brush with melted butter. (Keep extra phyllo covered while you work.) Stack 3 more sheets on top, brushing each with butter. Cut stack into 12 squares. Repeat with remaining 4 sheets and more butter to make 24 squares total.
- Top each square with 1 tablespoon mushroom mixture. Gather and pinch phyllo around mushroom mixture to form purses with ruffled tops. Bake on a parchment-lined baking sheet until golden brown, about 12 minutes. Let cool slightly before serving.

MUSHROOM PHYLLO STRUDEL
Crispy phyllo-based "strudel" with a simple mushroom duxelles filling. Can also be made into triangles for a party appetizer. Freezes nicely (unbaked) so you can make it ahead of time.

Steps:
- Preheat oven to 375.
- Saute mushrooms in butter and olive oil till well-softened.
- Add sherry, thyme, cream, and salt/pepper and cook till thickened.
- Lay out the phyllo sheets, brushing each sheet with melted butter.
- Cut in half so you have two equal rectangles.
- Spread half the mushroom mixture over one of your phyllo rectangles, leaving a 1-inch border around the edges.
- Fold the short side edges over the mushroom mixture and then roll the whole thing lengthwise so you have a long, fat cylinder with no mushroom filling poking out.
- Repeat with remaining mushroom mixture and the other rectangle.
- Place rectangles side-by side, seam-side down, on a baking sheet, and bake in oven 20 minutes or until golden brown.
- Let rest for 10 minutes, then slice and serve.
- **Alternate preparation: Using two phyllo sheets at a time, cut into 6-8 strips and prepare as you would for spanakopita, folding each strip into a triangle.

BRIE BACON AND MUSHROOM PHYLLO CUPS - A SEASONED …

- Start by making the sauteed mushrooms and bacon. Remove the sliced mushrooms from the package, remove any stalks, we only use the mushroom heads for this. Slice any thick pieces into slighty thinner, and give the mushrooms a rough chop since we need the mushrooms to be more bite sized and easily fit in the phyllo cups. Heat the 2 tablespoons of extra virgin olive oil in a large pan over medium high heat. Add the mushrooms and cook 20-25 minutes, stirring occasionally. Spoon onto a paper towel lined plate and sprinkle with salt.
- Preheat the oven to 350 and make the bacon. Cook the bacon strips in a large frying pan over medium heat for 10-12 minutes until crispy. Remove and place on a paper towel lined plate. Once cool, crush into crumbles.
- While the bacon is cooking and the oven is preheating, it’s time to prepare the Brie and the phyllo cups. Place the phyllo cups on a large baking sheet. Remove the Brie from the freezer, shave off the rind if desired, and dice into small squares. Fill each phyllo cup with 1 square, you’ll have some cheese leftover. Drizzle each cheese square with a little honey, then bake for 8 minutes.
- Once the cheese has baked and become melty, remove from the oven. Add more cheese to any phyllo cup that looks like if could use a little more cheese, again I always have a few squares leftover. Fill each phyllo cup with mushroom bits and bacon. You should use most of the bacon, but depending on how many mushrooms were in the packages there probably will be excess mushrooms. You can save these in the fridge and use in another recipe, or an omelet or frittata. Bake the phyllo cups for 10 minutes at the 350.
