SAUTéED MUSHROOMS WITH GARLIC AND LEMON JUICE
Simple and super yummy. Makes a wonderful side dish for just about anything, but especially nice with steak. A little different (and more interesting) than the standard way of sautéing mushrooms in just butter and garlic.

- In a large skillet over medium-high heat, add the oil. When the oil is hot add the butter and melt swirling the skillet.
- Add the mushrooms to the skillet in a single layer and cook, stirring them a couple of times for about 4-5 minutes, or until the mushrooms start to become soft and slightly golden on the edges.
- Lower the heat to medium-low. Push the mushrooms towards the edges of the skillet, leaving a small empty area in the middle of the skillet to add the garlic. Add the garlic and fresh thyme and cook for about a minute or until fragrant. You don't want to brown the garlic, just to cook it to get rid of the raw taste.
- Toss the mushrooms with the garlic and thyme and season with salt and ground black pepper to taste. Saute for about 2 minutes then add the Balsamic Vinegar. Cook tossing a few times for about 2 minutes. Check for seasoning and serve.

- Wash and prep the mushrooms. Cut any large mushrooms in half so that they are all relatively the same size.
- Heat a pan over medium high heat and add only the mushrooms in a single layer. Stir occasionally and wait for the mushrooms to release their liquid, about 3 to 4 minutes.Either drain the liquid or let it continue to reduce until it's evaporated. This will give you a concentrated mushroom flavor that's full of umami. Removing this liquid is key to getting a golden brown sear.
- Once the liquid is drained or evaporated, add the oil, butter, garlic, and any flavoring (worchestershire, soy sauce, balsamic vinegar, or white wine). Continue to saute until the mushrooms turn a golden brown, about 3 to 4 minutes.
- Turn off the heat and season with salt and pepper to taste. Garnish with chopped parsley and serve.

- When the butter is melted add chopped onion and sauté for 3-4 minutes.Add mushrooms and cook until golden and crisp, about 10 minutes.Pour in wine, and cook until reduced and alcohol has evaporated, about 3 minutes.Add garlic and cook until, stirring, for about 3-4 minutes.Season with salt and pepper to taste.Turn the heat off, add 1 tablespoon of butter and stir in parsley.Serve!Notes:What kind of mushrooms can we use?In this recipe I used white button mushroom, but you can use almost any other mushrooms that you like, such as; Cremini, Portobello, wild mushrooms, oyster mushrooms and more.
- I also prefer small mushrooms (bite size), but you also can use whole large mushrooms, or chop large mushrooms into desired size. What can we use instead of wine? The wine gives a nice flavour to the dish, if you worried about alcohol flavour in your food, you should know that the alcohol is evaporating while cooking so you will not feel any alcohol flavour.
- If you prefer not to use wine for other reasons, you can skip this step or just use vegetable/chicken stock instead. What to serve with garlic mushrooms?Garlic mushrooms is a great side dish that you can serve we almost every main dish.

- Melt butter in a large cast-iron skillet or frying pan over medium-high heat for 2 minutes until it starts to sizzle. Add quartered mushrooms and sauté for 5-7 minutes until the mushrooms start to shrink and lose moisture. Stir occasionally to cook evenly. You don't want to stir it too often.
- Add Italian seasoning, salt and pepper. Stir well to mix and continue to cook the mushrooms for 2-3 minutes until they turn golden brown (but not dark brown yet). Salt will further remove water inside the mushrooms.
- Add soy sauce and garlic. Sauté for another 2-3 minutes. Soy sauce will enhance the caramelization process, which makes the mushrooms develop a characteristic rich brown colour by slowly breaking down its natural sugar.
