STEAK SHAWARMA PITA

3 serrano chiles
1/2 cup canola oil
1 teaspoon ground cardamom
1 teaspoon ground coriander
1 teaspoon kosher salt, or more as needed
4 green onions, roughly chopped
3 medium garlic cloves
Juice of 2 lemons (about 1/3 cup)
1 bunch fresh cilantro, including stems, rough chopped
1 bunch Italian flat leaf parsley, including stems, rough chopped
1 medium green bell pepper, seeded and roughly chopped
1 medium jalapeno, seeded and roughly chopped
1 cup uncooked quinoa
1 1/2 teaspoons kosher salt
1/4 cup extra-virgin olive oil
1/2 teaspoon freshly ground black pepper
4 bunches Italian flat leaf parsley, leaves only
Juice of 2 lemons (about 1/3 cup)
1 bunch fresh mint leaves
2 cups whole milk Greek yogurt
1/4 cup red wine vinegar
2 teaspoons minced fresh garlic
1 teaspoon ground coriander
1/2 teaspoon ground allspice
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
Juice of 1/2 fresh lemon (about 2 tablespoons)
2 teaspoons kosher salt
1 teaspoon ground black pepper
2 thinly sliced blade/lifter meat, skirt steak or round steak ("carne asada cut")

Steps:

  • For the green chile zhoug: Blacken serrano chiles on top rack of a toaster oven set on broil for 2 minutes per side. Let cool until cool enough to handle, then remove stems. Place in a food processor fitted with an S blade along with the oil, cardamom, coriander, salt, green onions, garlic, lemon juice, cilantro, parsley, bell pepper and jalapeno and pulse for 3 to 5 turns, then process on high speed, adding 1/2 cup cool water. Adjust for salt and place in a glass jar with a tight-fitting lid. Keeps for up to 2 weeks, refrigerated. Use like hot sauce or salsa in a pita with shawarma.
  • For the quinoa taboulleh: Combine the quinoa, 1 teaspoon salt and 2 cups water in a 1-quart saucepot and bring to a boil. Cover and turn off heat, then let rest without removing the lid for 20 minutes. Spread cooked quinoa over a dinner plate to cool and allow steam and moisture to dissipate.
  • Meanwhile, mix oil, pepper, parsley, lemon juice, mint leaves and remaining 1/2 teaspoon salt in a large bowl, then fold in quinoa. Cover and refrigerate until ready to use. Taboulleh keeps, refrigerated for 3 days.
  • For the steak shawarma: Mix the yogurt, vinegar, garlic, coriander, allspice, cardamom, cinnamon, cumin, lemon juice, salt and pepper in a medium bowl with a whisk. One at a time, dip each thinly sliced steak into marinade on both sides and place in a plastic tub that will accommodate all marinade and steak. Cover and refrigerate overnight or up to 3 days.
  • Preheat a gas or charcoal grill to 450 degrees F. Line a pan with foil.
  • Place steaks on hot grill and cook for 90 seconds per side, then place in lined pan. Cut thin steaks into 1/4-inch strips with a good knife. Return cut strips to pan and cover with foil to keep warm until ready to serve.
  • Serve steaks in pitas, and top with quinoa tabbouleh and green chile zhoug.

Vegetarian Mushroom Shawarma Pitas image

Dusted with smoky spices like cumin, coriander and paprika, these thick-cut roasted portobello mushrooms are inspired by shawarma, Middle Eastern spiced lamb - and they taste surprisingly meaty. The flavors are bold, but the prep is simple: While the mushrooms and onions roast, make an easy turmeric and Greek yogurt sauce, and toss sliced red cabbage with salt. Pile everything into a pita with a flurry of cilantro and mint to freshen things up (parsley or salad greens would also do the job in a pinch). While these hearty pitas are best enjoyed with a knife and fork as open-faced sandwiches, they can also be folded into half-moon parcels and eaten out of hand.

3/4 pound portobello mushroom caps, sliced 1/2-inch thick
1 medium red onion, halved and cut into 1/3-inch wedges
3 tablespoons plus 2 teaspoons extra-virgin olive oil
1 teaspoon ground cumin
3/4 teaspoon ground coriander
1/2 teaspoon ground sweet or smoked paprika (optional)
Kosher salt and black pepper
4 pitas
2 packed cups very thinly sliced red cabbage (about 6 ounces)
3/4 cup low-fat or whole-milk Greek yogurt
3/4 teaspoon ground turmeric
Cilantro or mint, for serving

Steps:

  • Heat the oven to 425 degrees. On a large rimmed sheet pan, drizzle the mushrooms and red onion with 3 tablespoons oil. Sprinkle with cumin, coriander, paprika (if using), 1 teaspoon salt and 1/2 teaspoon pepper; toss to coat. Arrange in an even layer and roast until tender and browned, about 20 minutes. Add the pitas directly to the oven rack to warm during the last 5 minutes of cooking.
  • Meanwhile, toss cabbage with remaining 2 teaspoons oil in a medium bowl; toss to coat. Season generously with salt and pepper. In a small bowl, stir together yogurt and turmeric; season with salt and pepper.
  • To serve, slather yogurt over warm pitas. Top with cabbage, mushroom mixture and herbs, and serve immediately.

1/4 cup garlic powder
1/4 cup onion powder
1/4 cup sweet smoked paprika
1/4 cup ground black pepper
1/4 cup kosher salt
1/4 cup brown sugar
1/2 head green cabbage, sliced very thinly
1 cup Bread-and-Butter Pickled Celery, recipe follows
1/4 cup soy milk
2 tablespoons lemon juice
1 tablespoon Dijon mustard
1 tablespoon kosher salt
1 tablespoon distilled white vinegar
1 bunch scallions
1 garlic clove
2 cups canola or any neutral oil
Oil, for frying
1 cup cornstarch
1 bunch beech or maitake mushrooms, kept intact as a bunch
Salt, for sprinkling
Focaccia bread, toasted
4 cups granulated sugar
4 cups distilled white vinegar
3 tablespoons mustard seeds
3 tablespoons salt
2 tablespoons turmeric
1 teaspoon celery seeds
1 teaspoon coriander seeds
2 heads celery, cut into 1/2-inch-thick slices
1 onion, julienned

Steps:

  • For the spice mix: Combine cayenne, garlic powder, onion powder, smoked paprika, black pepper, salt and sugar in a bowl. (This will keep for 3 to 4 months in an airtight container.)
  • For the slaw: Combine the cabbage and Pickled Celery thoroughly.
  • For the scallion mayo: Add soy milk, lemon juice, mustard, salt, vinegar, scallions and garlic to a blender and blend until a homogenous color. With the blender running, slowly add the oil to emulsify. If the mayo becomes too thick, add a little ice water to thin it out.
  • For the sandwich: Heat oil in a deep-fryer to 350 degrees F.
  • Heat cornstarch in 4 quarts water in a saucepan until clear.
  • Coat mushrooms in cornstarch slurry, then fry until the exterior is golden brown. While the mushroom is still very hot from the fryer, coat in 1 tablespoon of the spice mixture, and a little extra salt. Coat both sides of the focaccia in the scallion mayo, then place the mushroom on top, and 1 cup slaw on top of that.
  • Heat up the sugar, vinegar, mustard seeds, salt, turmeric, celery seeds and coriander seeds in a pot until it reaches a boil. Pour over the celery and onion in a large bowl. Let sit until cool.
