- Cook 3 strips bacon in a large skillet over medium heat until crisp, 10 minutes; drain on paper towels and crumble. Cook 1 chopped small shallot in the drippings, 1 minute. Add 1/2 cup water, two 10-ounce boxes thawed frozen lima beans and 1/4 teaspoon kosher salt. Bring to a simmer; cook, stirring occasionally, until the beans are tender, 5 to 7 minutes. Stir in 1 teaspoon each grated lemon zest and lemon juice. Top with the bacon and chopped parsley.

I was trying to re-work my frozen lima beans into something I could entice the kids with and came up with this dish. It was so simple with its zesty sweet flavor, and the kids ate every bite.

Steps:
- Boil the lima beans according to package (about 10-12 minutes-I used pressure cooker for 5 minutes).
- While beans are cooking fry bacon in a medium frying pan on medium heat until crisp and drain.
- Add the red onion and cook additional 5 minutes.
- Add lima beans, salt, and pepper to pan.
- Sprinkle brown sugar and stir.
- Add a couple Tablespoons water for saucier texture.
- Serve.

SAUTEED FRESH LIMA BEANS RECIPE
If you haven't tried fresh lima beans, you're in for a treat. They're sweet and tender, much like peas straight from the pod, and so flavorful they don't need a rich sauce.Just stew them lightly and stir in a bit of frisee at the last minute. It takes a little time to shell the beans, but it's worth it.Check your local farmers market for fresh limas. Be sure to look for bright green plump pods. Fresh limas can be refrigerated in a plastic bag and stored for about one week.

- Saute garlic and onion in butter and oil in medium skillet over medium heat. Stir in limas and saute about 1 minute, stirring. Add chicken broth. Bring to boil, then reduce heat to simmer. Cover and steam until limas are tender, about 10 minutes. Add salt and pepper to taste. Stir in parsley. Stir in frissee and cook and stir 1 minute more.

- Place beans and 1/4 cup water in a large microwave-safe bowl. Cover with plastic wrap, and pierce plastic wrap with a fork. Microwave at HIGH 4 to 7 minutes or until crisp-tender. Plunge green beans into ice water to stop the cooking process. Drain well, and set aside.
- Cook chopped bacon in a large nonstick skillet over medium heat until crisp; remove bacon, and drain on paper towels, reserving 2 tablespoons drippings in a small bowl. Discard remaining drippings. Wipe skillet clean with a paper towel.

- Kitchen Express: Substitute 2 (12-ounce) packages ready-to-eat trimmed fresh green beans for the fresh green beans, omitting water. Pierce bags with a fork and microwave at HIGH 4 to 5 minutes or until crisp-tender. Proceed with recipe as directed.
