HOT DOG CASSEROLE
The original version of this recipe came from "The Northern Exposure Cookbook" by Ellis Weiner. This is a real family-style kid-pleasing recipes that I often bring to potlucks and family gatherings. It is like a pot of macaroni & cheese but with the added surpise of the hotdog slices. It is easy prepare, is inexpensive, and doubles nicely. I have even prepared the ingredients the night before and baked it the next day with success (just allow the ingredients to come to room temperature before baking or add a little extra cooking time). You may use reduced fat ingredients if you have health concerns, but it will not be quite as rich. That being said, I do just about always use "light" hotdogs with no real sacrifice to taste. Prep time includes cooking the pasta.

Steps:
- Preheat oven to 350 F degrees.
- Grease a 2-quart casserole.
- Add the freshly cooked and drained macaroni into the casserole along with the sliced hot dogs and just 2 cups of the cheese; mix well.
- Combine butter and onion in a medium saucepan and saute over medium heat until the onion is wilted (about 5 minutes).
- Whisk flour into the butter mixture quickly until flour is absorbed, then remove from heat.
- Add milk slowly, whisking to combine well- make sure you whisk very quickly and thoroughly or you will have doughy clumps.
- Return to heat, whisk in the salt and pepper, and bring to a boil (still whisking)- just be careful not to let it burn.
- As soon as it starts to hit the boiling point, remove from heat and pour evenly over the macaroni mixture.
- Stir to gently to combine.
- Sprinkle with remaining 1/4 cup cheese and bake, uncovered, for 18-20 minutes or until heated through and the cheese has melted and browned (If you prepare this in advance, wait to add the remaining cheese until you are ready to bake the casserole the next day).
- For variety, I have tried other types of cheeses and thought Cheddar blended with Monterey Jack was also very nice in this.
- NOTE: This does not freeze well.
MACARONI AND HOT DOGS
Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Eva Smith. The printed version of this recipe makes me giggle because there is a typo where the hot dogs are called 'hot gods'. Eva didn't specify serving yield, so I am guessing.

Steps:
- Melt butter in Dutch oven.
- Cut hot dogs in half and then into small pieces.
- Simmer onion, pepper and hot dogs in butter for about 10 minutes or until brown.
- Sprinkle macaroni over top.
- Add salt, tomatoes and water.
- Cover; bring to boil.
- Reduce heat and simmer, stirring occasionally, until tender (about 12 minutes).
- Stir in cheese and simmer until cheese melts.
MACARONI, CHEESE AND HOT DOGS
I always loved it when my mom would make macaroni, cheese and hot dogs when I was young. As I grew up, I found that I liked it to be cheesier than she made it. I have been making this recipe for years and most everyone who has tried it really likes it. It is easy to make and my kids really enjoy having it for lunch.

Steps:
- Fill a medium sized pot with hot water about half way.
- Put the water on the stove at high heat.
- Add box of Kraft macaroni and cheese dinner.
- Cut up the hod dogs into 1/4 pieces and drop in the water.
- Bring everything to a boil.
- Once the water boils, reduce the heat and continue to cook until the macaroni is tender.
- Drain water.
- Place pot back on the stove on very low heat.
- Add margarine and milk.
- Add slices of cheese.
- Stir until cheese melts.
- After cheese melts, add cheese sauce packet that comes with the Kraft Macaroni and Cheese dinner.
- Stir until everything is well mixed.
- Serve and enjoy.
EASY MAC N CHEESE WITH HOT DOGS
I have seen a few variations on this recipe from Kraft but this one is pretty easy and yummy as I love ketchup and mustard!! I serve with a buttered slice of bread and either sliced tomatoes or SteamFresh green beans for the side dish.

- Prepare macaroni and cheese as directed.
- While boiling macaroni, put hot dogs on plate, pierce and microwave for about one minute or until cooked through. Then cut into small slices.
- Add hot dogs to prepared macaroni mixture and stir.
- Have each person top with ketchup and mustard according to their liking.
