SAUTEED ASPARAGUS

Steps:
- Bring a large pot of water to a boil. Generously salt it so that it tastes like the sea. Prepare a separate large bowl of cold salted water for an ice bath.
- Add the asparagus to the boiling water and allow to blanch for about 1 minute. Transfer the asparagus using tongs or a spider to the ice bath to shock. Remove from the bath and lay the asparagus on a paper towel to dry slightly.
- Meanwhile, in a medium saute pan over medium-high heat, add olive oil to lightly coat. Add the shallot and cook until translucent, about 3 minutes. Then add the garlic and combine, cooking until tender and fragrant, about 1 minute more. Add the asparagus and saute until heated through. Season with salt and crushed red pepper. Toss with the lemon zest and plate. Serve as a side to your meal!
GARLIC-SAUTEED ASPARAGUS
This is a very quick and healthy vegetable side dish. Even my son, who is very picky, loves this. It works well as a snack with wine, as an appetizer, or as a side dish, especially for Asian-inspired dishes.

- Heat olive oil and sesame oil in a wok or skillet over medium-high heat; add garlic and decrease heat to medium. Cook and stir garlic until fragrant, about 1 minute. Add asparagus, soy sauce, and water to garlic; cook and stir until liquid is mostly evaporated, about 3 minutes. Cover wok and cook until asparagus are tender yet firm to the bite, 5 to 10 minutes more.

HOLIDAY ASPARAGUS
This is a great side dish with wonderful flavor and great color! This is always the first dish on the table that gets eaten up and disappears, with our dinner guests who only had one helping, begging for more. Because of the cranberries and the visual presentation, it's perfect for Thanksgiving, Christmas or any dinner party occasion. Enjoy!

Steps:
- Sauté almonds and cranberries in heated oil set to medium.
- While sautéing, chop asparagus into 2 inch pieces.
- When almonds are about to turn a golden brown, move almonds and cranberries to a casserole and set aside.
- In the same oil, sauté asparagus until they are a beautiful bright green.
- When finished, add asparagus and Feta cheese to the casserole and toss lightly until mixed thru.
- Serve immediately while still warm.

- Rinse the asparagus, peel the stalks and then remove the tough white ends at the base. Saute the asparagus in oil and butter until tender (along with the sage leaves). Discard the sage leaves after cooking. Season with salt and pepper.
