Sautéed Carrots image

How to cook perfect Sautéed Carrots. This quick and healthy side dish is fast enough for weeknight dinners but tastes special enough for company!

Provided by Erin Clarke / Well Plated

Categories     Side Dish

Time 20m

Number Of Ingredients 7

2 pounds carrots (peeled and cut into diagonal, 1/4-inch-thick slices)
1/3 cup water
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 tablespoon unsalted butter (use coconut oil to make vegan)
1 tablespoon honey or pure maple syrup (optional)
1 to 2 tablespoons chopped fresh herbs of choice: ( parsley, dill, and thyme are all delicious)

Steps:

  • In a large saute pan or deep skillet with a tight-fitting lid, place the carrots, water, salt, and pepper. Bring the water to a boil, then cover the pan and reduce the heat to medium low. Cook for 7 to 8 minutes, until the carrots just reach fork tender (don't let them turn mushy).
  • Uncover, add the butter and honey, and stir and cook until the water evaporates (and the coconut oil melts, if using). Remove the pan from the heat.
  • Stir in the herbs. Add a finishing sprinkle of salt or pepper to taste. Enjoy hot.

FRIED CABBAGE WITH CARROTS AND PEPPERS

Fried Cabbage with Carrots and Peppers image

Cabbage is a staple in Gullah cooking, and there's so much more you can do with it than just coleslaw. This simple sauteed cabbage dish is one of my favorite ways to prepare the vegetable, and it's great with just about any protein. Better yet, it's a great dish to serve a large crowd.

Provided by Kardea Brown

Categories     side-dish

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 10

3 slices bacon, chopped
Cooking oil, as needed
1 medium onion, sliced (1 1/2 cups)
1 large carrot, julienned (1 cup)
1 medium red bell pepper, sliced (1 cup)
1 yellow bell pepper, sliced (1 cup)
1 large head green cabbage (about 3 pounds), roughly chopped (12 cups)
1 clove garlic, minced
1 tablespoon hot sauce
Kosher salt and freshly ground black pepper

Steps:

  • Heat a very large cast-iron skillet over medium-high heat. Add the bacon and cook until browned, 5 to 6 minutes. Remove to paper towels, reserving the drippings in the skillet.
  • Add additional oil to the pan if needed. Add the onion, carrot and peppers and cook until the vegetables begin to soften, about 5 minutes. Stir in the cabbage and garlic and saute until the cabbage begins to brown, about 10 minutes.
  • Stir in the hot sauce and bring to a boil. Cover, then reduce the heat to low and simmer until the cabbage is tender, about 15 minutes. Stir in the reserved bacon, and season with salt and pepper.

  • Set up pots. For this step, you'll need a large pot and a metal colander or steaming basket to hold the carrots. Add the metal colander / vegetable steaming basket to the inside of the pot. Add enough water to fill the bottom of the pot, just to the bottom of the colander / steaming basket.
  • Steam carrots. Turn on the burner for the large pot (with water and colander inside) to medium-high heat. Add carrots and cover the pot / colander with a lid. Steam carrots for ~5 minutes, until they can be easily pierced with a fork. Once done, turn off the heat and remove colander with steamed carrots.
  • Sauté carrots in a butter glaze. Add a medium-sized pot or large frying pan to a burner set to medium-high heat. Add olive oil, butter, garlic, and steamed carrots. Stir regularly for about 2 minutes so garlic does not burn. Turn off the heat of the burner once the butter has melted and the garlic is transparent and roasted (before it turns brown).
  • Season carrots. To the pot, and add fresh dill, salt, and pepper. Toss to coat the carrots in the seasonings and herbs.
