SAUTéED BRUSSELS SPROUTS

This is sort of a no-recipe recipe for brussels sprouts that will have you wanting to make them every day of the week. Once you memorize the proportions, you can vary the fat and seasonings any which way you like. One important tip: Having a large enough skillet is key, so the sprouts have a chance to brown on one side before steaming and turning to mush.

Number Of Ingredients 6

1 pound brussels sprouts, trimmed and halved
3 to 4 tablespoons fat (olive oil, schmaltz, duck fat or the fat rendered from 8 ounces of bacon, sausage or chorizo)
A handful of aromatics, like chopped garlic, sliced onion, thyme sprigs or dried chiles
Lemon juice, vinegar, pickled onions or shallots
Salt and pepper to taste
Chopped fresh herbs like parsley, cilantro or mint (optional)

Steps:

  • If using something like bacon or sausage, start by browning the meat in a large skillet (10 to 12 inches) over medium-high heat to render the fat. Once the meat is cooked, remove it with a slotted spoon, leaving behind the drippings. (You can add the crispy meat bits back later.)
  • Add halved brussels sprouts to the fat, shaking the skillet so that as many as possible land cut side down. Now, don't touch! Disturbing the skillet at this point would prevent the sprouts from caramelizing. Cook until they have a nice sear on one side, 5 to 8 minutes. Using a wooden spoon or spatula, give them a stir and continue to cook until they're nicely browned all over and just tender on the inside, another 5 to 8 minutes.
  • Just before removing from the heat, add in a handful of aromatics, like chopped garlic, sliced onion, thyme sprigs or dried chiles, tossing to coat and cooking only a minute or two. Stir in the reserved bacon or sausage bits, if using.
  • Finish with either a squeeze of halved lemon, a splash of nice vinegar or a handful of pickled onions or shallots. Because of the sprouts' meaty flavor profile, it's also nice to hit them with a smattering of fresh herbs, especially parsley, cilantro or mint. Salt and pepper to taste.

Number Of Ingredients 7

1 pound Brussels sprouts
1 tablespoon olive oil
2 slices bacon, cut into 1-inch pieces
1 small onion, diced
2 thyme or savory sprigs
Salt
A squeeze of lemon juice (optional)

Steps:

  • Trim away any damaged outer leaves and cut off the stems from: 1 pound Brussels sprouts.
  • If the sprouts are very small, cut them in half; otherwise cut them into quarters. Cook the sprouts until tender, in abundant salted boiling water. Drain well. Heat a heavy pan over medium heat. Add: 1 tablespoon olive oil, 2 slices bacon, cut into 1-inch pieces.
  • Cook the bacon until rendered and brown, but not crisp. Remove the bacon with a slotted spoon. To the fat in the pan, add: 1 small onion, diced, 2 thyme or savory sprigs.
  • Cook the onion until soft but not browned. Season with: Salt, A squeeze of lemon juice (optional).
  • Turn the heat to medium-high, add the drained sprouts, and cook, tossing or stirring occasionally, until the sprouts are warmed through and starting to brown a bit. Add the bacon and toss. Check for seasoning and adjust as needed.
  • Omit the bacon.
  • A minute before adding the sprouts, add 2 finely chopped garlic cloves to the onions.
  • Toss the finished sprouts with a spoonful of chopped fresh thyme leaves.
  • This same dish can be made with Brussels sprouts leaves. Cut out the stems from the sprouts and separate them into their leaves. Thinly slice the compact centers. Don't boil the leaves. Add them after the onions are cooked and salted. Cook for 2 minutes. Pour in chicken broth to a depth of about 1/4 inch, cover the pan, and cook at a simmer until the leaves are tender, about 10 to 15 minutes.

2 pounds Brussels sprouts, trimmed and halved lengthwise
6 slices bacon, or more to taste, thinly sliced
1 pinch salt and ground black pepper to taste
⅔ cup reduced balsamic vinegar, divided

Steps:

  • Combine Brussels sprouts and bacon in a cast iron skillet; season with salt and pepper. Cook, stirring occasionally, until Brussels sprouts start to brown, 15 to 20 minutes. Drizzle 1/2 cup of balsamic vinegar on top.
  • Transfer Brussels sprouts and bacon to a serving platter; drizzle remaining balsamic vinegar on top.

Number Of Ingredients 7

2 lb brussels sprouts, trimmed & half the large ones
1 large onion, sliced thick seperated into rings
6 clove garlic, minced
1 large red bell peppers, cut into strips & then thirds
3 slice thick sliced slab bacon, remove rind (or bacon of choice)
2 tsp steak seasoning
1/4 c finely shredded italian cheese, or cheese of your choice

Steps:

  • 1. Trim Brussels sprouts, and cut the larger ones in half for even cooking. Wash & set aside till needed.
  • 2. Peel and slice onion into thick slices, cut slices in half.
  • 3. Using a large skillet (I used a 16 inch) add the sliced bacon, I cut my slices in half. Cook until fat is rendered.
  • 4. Cook until bacon is crisp. Remove the rind. Add to paper towel to drain excess fat. Crumble or cut into nice size pieces.
  • 5. Add Brussels sprouts to the rendered bacon fat & cook for about 10 minutes.
  • 6. Add sliced onion, separated in to skillet with the Brussels sprouts & minced garlic, & steak seasoning and continue to cook an additional 5 to 6 minutes.
  • 7. Add the red bell pepper strips, and continue to cook an additional 5 to 6 minutes or so or until desired crispness is reached for the veggies. Add the chopped or crumbled bacon, stir to mix.
  • 8. Then, Add the cooked veggies to a 9X9 size dish, then top with finely shredded cheese, while veggies are still hot.
  • 9. Serve & enjoy while still hot.
