Brilliant Sauteed Broccoli image

If you want a slightly original restaurant-quality broccoli at any point within three days, this is the recipe you want! Provided by Aaron Geiger

Categories     Side Dish     Vegetables     Broccoli

Time 25m

Yield 6

Number Of Ingredients 7

1 pound broccoli florets
3 tablespoons finely grated Parmesan cheese
1 teaspoon brown sugar
2 tablespoons olive oil
1 teaspoon red pepper flakes
¼ teaspoon kosher salt
⅛ teaspoon freshly ground black pepper

Steps:

  • Fill a pot with water and bring to a boil. Fill a large bowl or pot with half ice and half water. When the water comes to a boil, add the broccoli florets using a strainer with a handle if possible. Allow the broccoli to cook for 1 to 2 minutes until just tender. Immediately remove from the boiling water, using the strainer or draining, and transfer to bowl of ice to stop the cooking process. Immerse the broccoli completely in the ice water for a minute or two. Remove and place in a dish that has been lined with paper towels. This part can be done up to two days in advance.
  • In a cup or small bowl, mix together the Parmesan cheese and brown sugar; set aside.
  • Heat the oil in a large skillet over medium-high heat. Throw in the broccoli and season with red pepper flakes, salt and pepper. Stir to coat the broccoli, then cook and stir for 1 to 2 minutes. Remove from the heat and dust with the Parmesan cheese mixture.

Sauteed Broccoli With Lemon image

Complement a feast of hearty dishes with a side of crisp broccoli dressed with lemon juice and olive oil.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Number Of Ingredients 6

2 tablespoons extra-virgin olive oil, plus more for drizzling
2 small shallots, thinly sliced
1 head broccoli (1 1/4 pounds), cut into florets, stems peeled and cut into 1/2-inch coins
Coarse salt and freshly ground pepper
1/2 cup water
Finely grated zest and juice of 1 lemon (1 1/2 teaspoons zest; 3 tablespoons juice)

Steps:

  • Heat oil in a large skillet over medium-high. Add shallots, and cook, stirring frequently, until translucent, about 2 minutes. Add broccoli, and season with salt and pepper; cook, stirring, 1 minute.
  • Stir in the water, and bring to a boil; reduce heat. Cover, and simmer until broccoli is bright green and tender (it should offer little resistance when pierced with the tip of a paring knife), about 4 minutes. (All the liquid should have evaporated; if not, remove lid and continue cooking until dry.) Stir in lemon juice and half the zest.
  • Transfer to a serving platter. Serve warm or at room temperature, drizzled with oil and sprinkled with remaining lemon zest.

PERFECT SAUTéED BROCCOLI

Perfect Sautéed Broccoli image

Perfect Sautéed comes together in just 15 minutes and will become your go-to side. Never dried out, perfectly tender, and lightly charred, this broccoli will entice even the pickiest vegetable eaters.

Provided by Jamie Vespa MS, RD

Categories     Side Dish

Time 15m

Number Of Ingredients 6

1 large head broccoli
2 Tbsp. extra-virgin olive oil
1/2 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1/2 tsp. garlic powder ((optional))
1 to 2 tsp. fresh lemon juice

Steps:

  • Cut head of broccoli into bite-sized florets (you should end up with around 6 cups). If using, slice stalk into 1/2-inch pieces, or save for another use. (Note: the stalk won't become as tender as the florets, however it's a great source of prebiotics and is delicious roasted!)
  • Heat oil in a large skillet with a fitted lid over medium-high. Once oil is shimmering, add broccoli, and season with salt and pepper. Toss to combine and cook, uncovered, 1 minute.
  • Cover and continue cooking, lifting lid to stir every 1 to 2 minutes to prevent burning, until crisp-tender and lightly charred, about 8 minutes total. Stir in garlic powder and lemon juice, and remove from heat.
