CRAB DIP
Hot crab dip served in a bread bowl. Perfect for parties!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, combine the cream cheese, onion, mayonnaise, crabmeat, garlic powder, salt and pepper. Spread mixture into a 1 quart baking dish.
- Bake for 20 minutes in the preheated oven. While the dip is baking, cut a circle in the top of the bread, and scoop out the inside to create a bread bowl. Tear the removed bread into pieces for dipping.
- Remove baked crab dip from the oven, and stir well. Spoon the mixture into the hollowed out loaf. Place bread bowl and chunks of bread on a medium baking sheet, and bake for an additional 10 minutes. Serve hot.

- 1. Heat the milk and water in a large saucepan almost to boiling. Add the cornmeal in a stream, whipping until smooth. Cool to room temperature.
- 2. Add the remaining ingredients and beat well with a wire whisk. The batter will be thin.
- 3. Grease a 9 or 10-inch nonstick skillet or crêpe pan and heat over medium-high heat. Allow about 1/4 cup batter for each cake, enough to cover the bottom of the skillet. Cook one cake at a time. Turn once when small bubbles appear on the surface.
- 4. Note: The batter tends to thicken toward the last of the cakes. If this happens, add a small amount of water or milk to restore the original consistency.
- 5. Additional batter cakes can be frozen between squares of waxed paper for future use. Thaw completely and warm slightly before using.
CRABMEAT SAUTé WITH HERBS
Steps:
- Gather the ingredients.
- Melt butter in a large skillet over medium-low heat.
- Add garlic and green onion to skillet and cook for about 3 minutes. Do not let garlic brown. Stir frequently.
- Add crabmeat to skillet and toss with garlic and green onion. Cook while stirring gently until thoroughly heated.
- Sprinkle crabmeat mixture with chopped chives and parsley. Drizzle with lemon juice.
- Serve crabmeat sauté on a salad or fresh greens, on toast points or baked puff pastry shells, or spoon it over hot cooked rice.

EASY CRAB CAKES RECIPE
Steps:
- Preheat oven broiler.
- Combine crab meat, bread crumbs, Old Bay Seasoning, and parsley. Mix until well incorporated. But do not overmix. Crab meat should be lumpy.
- In a separate bowl, beat together mayonnaise, mustard, and egg. Combine with other ingredients and mix well.
- Form into patties and refrigerate for about half an hour. This will allow the crab cakes to firm up and prevent them from cracking or breaking up in the pan.
- Put the patties into a lightly greased baking sheet. Broil for 10 to 15 minutes (or until lightly brown).

This is a recipe that is a favorite of many of us coastal Delaware natives. Our newly elected Vice -President, Joe Biden, has more than likely been served this when he came to political dinners. - Gently go through the lump crab meat for any shell fragments. Set crab meat aside.
- Mix mayonnaise, Worcestershire sauce, salt and egg together until well blended.
- Fold in the sauteed peppers and drained pimentos.
- Very carefully, fold in the crab meat lumps until coated with mayonnaise mixture.
- Place in buttered casserole dish.
- Casserole Topping:.
- In small bowl, mix together the egg yolk and the mayonnaise.
- Now spoon on top of the casserole filled with crab mixture.
- Sprinkle the Old Bay seasoning on top.
- Bake 350 degrees for 25 minutes or until browned. May serve with lemon wedges.

- Mix mayonnaise, egg, sugar, old bay, lemon juice and parsley together and blend well, this is your imperial sauce.
- Gently fold crabmeat into, imperial sauce, being careful not to break up crab meat.
- place portions in the baking dish of your choice, using ramekins or small casserole dishes
- Spinkle tops of crab imperial with old bay or paprika.
- Bake in 350-degree oven for 20-25 minutes (top will turn golden brown) or until a thermometer gets an internal reading of 165 degrees
- Allow to cool just a few minutes before serving, it will set and be more flavorful as it cools slightly.

- Beat eggs.
- Add parsley flakes, Old Bay Seasoning, mustards, Worcestershire sauce, lemon juice,Miracle Whip and, salt and pepper.
- Carefully add crab meat without breaking up lumps too much.
- Roll mixture into 12 balls and roll in cracker crumbs.
- Flatten balls into cakes.
- Heat saute' pan with a little oil on stove top.
- Saute' cakes until golden brown, turning once.
- OR broil in oven til golden brown.

You can serve this alone, in little crab shells, or use it to fill crepes. I have used either canned or fresh crab meat for this, and also other types of crab, like jumbo lump or snow crab. It will also work with imitation crab, although I don't use that for health reasons.

- 2. Add wine, cover, and steam about 8-10 minutes on low heat.
