THE BEST SAUTéED MUSHROOMS RECIPE
Simple and simply fabulous, this favorite side dish is a no-brainer. For best results, use a 12-inch cast iron skillet.

- Preheat a 12-inch cast iron skillet on the stovetop for five minutes over high heat. Meanwhile, wipe any dirt off the mushrooms with a paper towel and, if you like (and your mushrooms are whole), rinse under running water and spin dry. Remove stems from shiitakes and oyster mushrooms and trim a slice of the stem end off the baby bellas. Slice baby bellas and shiitakes about 1/4-inch thick and cut oyster mushrooms into small bite-sized pieces.
- Add butter to pan. When melted and bubbly, add mushrooms and toss to coat. Cook, stirring only occasionally, for about 10 minutes, until well browned in plenty of spots. Stir in salt and pepper to taste and garnish with parsley if you like.

These sauteed mushrooms are easy and so tasty. Serve sauteed mushrooms as a side dish, appetizer, over steak, on a burger (yum!), in gravy - so versatile!

- Rinse and quickly pat dry mushrooms (go on and rinse them, you have my permission :)). Cut off stems to be parallel with the base of the mushroom (important for sautéing ease).
- In a large heavy pan over medium heat, add 2 Tbsp butter and 2 Tbsp oil. Once oil is hot, add mushrooms in a single layer, cut-side-down. Sprinkle with garlic salt and pepper. Sautee until bottoms are browned (5 min), then flip over, season again with garlic salt and pepper and sautee until browned on the second side (5 min).
- Squeeze in 1 1/2 Tbsp lemon juice and sprinkle with 1 Tbsp parsley. Stir mushrooms and cook another 1-2 min, adding more seasoning to taste. Remove from heat and serve.
PASTA WITH BABY BELLA MUSHROOMS AND HERBS

- Slice mushrooms, chop up parsley, sage, and garlic. If using thyme, remove leaves from the stalk.
- Cook pasta according to package directions. When pasta is done, reserve 1 cup of water, then drain the pasta. Set the pasta and water aside.
- Warm up a large skillet over medium heat. Add the olive oil and the Baby Bella mushrooms. Stir and cook for a few minutes until the mushrooms start to soften.
- Next, add the garlic, salt, and pepper. Cook and stir for another minute or two.
- Add the fresh sage (or thyme) and stir.
- Add the pasta and some of the reserved pasta water if needed. Mix well.
- Serve topped with freshly grated Parmesan Cheese and fresh parsley.

- Using a damp paper towel, brush all dirt from mushrooms. Cut away and discard any hard stems. Chop into 1/4-inch slices or, if there are larger mushrooms like portobello, cut into 1/4-inch cubes.

- Start by thoroughly rinsing the baby bella mushrooms under water. Pat them dry and then thinly slice (about ¼ inch thick). If you buy pre-washed and sliced mushrooms, you can skip this step.
- In a large skillet, combine the butter and olive oil over medium-high heat.
