Classic Lemon Chicken with Sauteed Spinach image

Categories     main-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 17

2 lemons
4 chicken cutlets, pounded thinly into scallopini
Salt and pepper
Flour, for dredging
6 tablespoons extra-virgin olive oil
6 tablespoons butter
2 cloves garlic, peeled
16 caper berries
10 large green olives
1/2 cup dry white wine
1 cup chicken stock or broth
2 tablespoons chopped Italian parsley
Sauteed Spinach, recipe follows
3 tablespoons extra-virgin olive oil
5 cloves garlic, peeled
2 pounds spinach
Salt and pepper

Steps:

  • Squeeze the juice from one and a half lemons and reserve. Cut the remaining half lemon into very thin slices. Remove seeds and set the lemon slices aside.
  • Season the chicken scallopini with salt and pepper. Dredge in flour, coating both sides, and tap the excess flour off. Heat 3 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add as many scallopini into the pan that will fit without touching, and cook until golden brown, approximately 3 minutes. Flip and cook second side until lightly browned, about 2 minutes. Remove scallopini and drain on paper towel.
  • When done with the scallopini, wipe off the fat from the skillet with paper towels. Add the remaining 3 tablespoons of olive oil, butter, garlic, and lemon juice and slices to the skillet. Cook, scraping the bottom until garlic is golden brown, about 3 minutes. Scoop out the lemon slices and set aside. Add the caper berries and olives and cook, stirring gently for about 4 minutes. Pour in wine and bring to a boil. Cook until the wine is reduced by half. Add the chicken stock and boil until slightly syrupy. Return the scallopini to the skillet and coat each piece in the sauce. Add parsley and swirl into sauce.
  • Divide scallopini onto separate plates. Spoon the sauce over, and add the caper berries and olives around scallopini. Add some of the spinach on the side. Finish by decorating each plate with reserved lemon slices on top of the scallopini.
  • Heat olive oil in large skillet over medium heat. Crush garlic cloves with the side of the knife and add to the oil. Cook until golden brown, approximately 2 minutes. Add the spinach in handfuls, and season lightly with salt and pepper, and cover pan. Cook until spinach releases its liquid. Uncover pan, and cook stirring until spinach is wilted and water has evaporated. Taste and season with additional salt and pepper.

When the onion is soft and the garlic fragrant add the beans and toss. Combine the ingredients for the dressing; add to the beans and turn the heat off. TUSCAN LEMON CHICKEN WITH WARM BEAN SALAD

Tuscan Lemon Chicken With Warm Bean Salad image

This is my adaptation of an old recipe from Bon Appetit. Because the chicken has to marinate, and because I think it's best with dried rather than canned beans, it requires advance planning. But it's really quite simple and very good. It can be made with other chicken parts, but I like it best with chicken breasts. Note: Preparation time does not include soaking and cooking time for dried beans, but does include three hours for marinating chicken.

Time 4h20m

Yield 4-6 serving(s)

Number Of Ingredients 10

4 whole chicken breasts, skin-on,bone-in,split
9 cloves garlic (or more)
1 1/2 teaspoons coarse salt
1/4 teaspoon fresh ground pepper (or more)
1/3 cup fresh lemon juice
4 tablespoons extra virgin olive oil
3 tablespoons chopped fresh rosemary
2 1/2 tablespoons finely grated lemons, rind of
1/2 teaspoon sugar
1 lb dried cannellini beans or 3 (15 ounce) cans cannellini beans

Steps:

  • If using dry beans, rinse beans and place in bowl.
  • Cover with three inches of water; leave to soak overnight or at least eight hours.
  • Drain beans.
  • Place in large saucepan, coverered with three inches of water.
  • Do NOT salt.
  • Allow to simmer one to two hours till soft (older beans take longer).
  • Drain.
  • If using canned beans, empty beans into colander and rinse well with warm water.
  • Place chicken in baking dish large enough to accomodate all the pieces.
  • A 12" x 9" pan should be adequate.
  • Roughly chop five (or more if you love it) cloves of garlic.
  • Sprinkle chopped garlic with coarse salt.
  • Mash garlic and salt into a paste.
  • Rub paste onto chicken pieces; sprinkle with ground pepper.
  • Whisk together the lemon juice, 2 tablespoons of oil, 2 tablespoons of rosemary, the grated rind and the sugar.
  • Pour mixture over chicken, cover chicken and chill up to three hours.
  • If you like, you can turn it in the marinade once or twice--not a critical step.
  • Preheat oven to 350°F Place drained cannellini in a large skillet.
  • Add the remaining garlic, chopped fine, the remaining rosemary and olive oil and season with salt and pepper.
  • Uncover chicken and bake 35-40 minutes, basting occasionally.
  • Remove from oven.
  • Preheat broiler.
  • Broil chicken till golden brown--3-5 minutes.
  • When the chicken is almost done, gently warm the beans till heated through.
  • Ladle beans onto serving platter.
  • Top with chicken and juices from pan.
  • Note: If you would like more sauce (and your baking dish is safe for the stovetop--if not, scrape any fond into a saute pan), place baking dish over medium high heat, add a splash of white wine and or chicken stock, deglaze and reduce.

LEMON AND TOMATO CHICKEN

Lemon and Tomato Chicken image

This is a fairly simple, absolutely delicious recipe that I adapted from a couple of Lemon Chicken recipes that I came across when I was feeling creative. The green beans were somewhat of an afterthought, but I felt that they worked very well in this mixture.

Provided by stealmystapler

Categories     Chicken

Time 55m

Yield 4-6 serving(s)

Number Of Ingredients 11

4 -6 boneless skinless chicken breasts
salt and pepper
2 tablespoons olive oil
4 garlic cloves, minced
1 finely chopped small onion
1/2 cup white wine
10 ounces chicken broth
2 tablespoons lemon juice
1 pinch sugar
2 cups grape tomatoes
2 cups green beans (for this I used a microwavable bag and tossed them in after I'd heated them up)

Steps:

  • Season chicken with salt and pepper, to taste. Then, heat the olive oil in a large pan and add the chicken. Saute on each side for about 4 minutes on medium heat, or until the chicken is no longer pink in the center. When it is cooked, remove it from the pan and set it aside.
  • Add the garlic and onion to the pan and cook for about a minute on medium heat. Then, add the wine, lemon juice, sugar and salt and pepper and cook for about another minute, stirring frequently. Then, add the chicken broth and cook for about 4-5 minutes, or until the liquid is reduced by about half. Turn down the heat and add the tomatoes and green beans and simmer for about 5 minutes, or until the tomatoes are wrinkled and squishy. Add the chicken to the pan for the last minute or two to reheat it. This goes really well over hot cooked pasta.
