Easy Sautéed Asparagus image

With fresh lemon, garlic, and Mediterranean favorites like feta and roasted red peppers, this Sautéed Asparagus is an easy side dish that complements almost any dinner. Serve with your favorite fish, lamb or chicken for a quick and healthy meal any night.

Extra virgin olive oil
1 pound asparagus, (trimmed, and cut into 3-inch pieces)
3 cloves garlic, (minced)
1 shallot, (chopped)
1 lemon, (zested and juiced)
1 teaspoon chile pepper flakes,
1 teaspoon za'atar
1/3 cup roasted red peppers (from a jar, drained, and chopped)
1/3 cup feta cheese, (more to your liking)

Steps:

  • Heat up ¼ cup olive oil over medium-high heat until just shimmering.
  • Add the asparagus and season with kosher salt and black pepper.
  • Cook for a couple minutes, tossing regularly, then add the shallots and garlic and cook for another 3 minutes or until the asparagus is tender and lightly browned.
  • Remove from the heat and add the lemon juice, zest, spices, roasted peppers and feta cheese. Serve immediately.

A creamy mustard-and-lemon dressing emulsified with a soft-boiled egg yolk takes this asparagus salad over the top.

1 large egg
1 to 2 lemons
1 tablespoon grainy mustard
1/2 teaspoon sugar
Kosher salt and freshly ground pepper
1/2 cup extra-virgin olive oil
1/3 cup coarsely chopped almonds (1 1/2 ounces)
Kosher salt and freshly ground pepper
1 pound asparagus, trimmed
1 lemon
3 ounces fresh goat cheese
1 tablespoon finely shredded fresh basil leaves, plus small whole leaves for serving

Steps:

  • Dressing: Place egg in a small saucepan; cover with water by 1 inch. Bring to a boil, then remove from heat. Cover pot and let stand 8 minutes. Run egg under cold water to stop cooking. Peel egg; remove white and reserve for another use. Press yolk through a fine sieve into a small bowl.
  • Meanwhile, remove peel and pith from 1 lemon. Holding fruit over another bowl, cut between membranes, allowing segments to drop in. Squeeze juice from membranes into bowl; discard membranes. Coarsely chop segments (you should have 2 tablespoons). If you don't have 2 tablespoons of juice or segments, use second lemon.
  • Add mustard, lemon juice, sugar, and salt to bowl with yolk. Gradually add oil, whisking constantly until creamy and emulsified. Stir in lemon segments; season with salt and pepper. Dressing can be refrigerated up to 1 week; return to room temperature before using.
  • Salad: Preheat oven to 350 degrees. Spread almonds in a single layer on a rimmed baking sheet and toast until golden brown and fragrant, 10 to 15 minutes. Let cool completely.
  • Bring a large pot of salted water to a boil. Add asparagus; return to a boil and cook, uncovered, until bright green and tender, 2 to 3 minutes. Drain. Run under cold water to stop cooking; drain again and pat dry.
  • Remove lemon zest in long strips with a vegetable peeler. Slice zest very thinly into strips; you should have about 2 tablespoons (or use a channel zester). Remove remaining peel and pith from lemon; holding fruit over a bowl, cut between membranes, allowing segments to drop in.
  • Arrange asparagus on a platter with cheese. Sprinkle with almonds, zest, lemon segments, and basil. Drizzle with 1/4 cup dressing (reserve remainder for another use). Season with salt and pepper and serve, garnished with whole basil leaves.

1 1/2 lbs fresh asparagus, bottoms trimmed
8 tablespoons butter
3 tablespoons flour
1 teaspoon salt
1 1/2 cups milk
1 (5 ounce) jar kraft old English cheese
1 1/2 cups crushed crackers (Waverly wafers or Ritz are best)
3/4 cup sliced almonds

Steps:

  • Boil asparagus for a few minutes (or steam in microwave steamer) then cool.
  • Melt 4 tablespoons butter in a sauce pan, then add flour, salt and milk; mix over stove until thickened.
  • Add jar of Old English cheese and mix together over stove until completely melted.
  • Add 4 tablespoons melted butter to crushed crackers and mix.
  • Spread half the mixture on bottom of 9x13" pan sprayed with Pam.
  • Place asparagus on top of cracker layer.
  • Pour cheese mixture over top; add remaining crackers and 3/4 cup toasted almonds.
  • Bake at 350F for 30 minutes or until slightly brown.

1-1/2 pounds fresh asparagus, trimmed and cut into 2-inch pieces
2 small tomatoes, cut into wedges
3 tablespoons cider vinegar
3/4 teaspoon Worcestershire sauce
1/3 cup sugar
1 tablespoon grated onion
1/2 teaspoon salt
1/2 teaspoon paprika
1/3 cup canola oil
1/3 cup sliced almonds, toasted
1/3 cup crumbled blue cheese, optional

Steps:

  • In a large saucepan, bring 1 cup water to a boil. Add asparagus; cook, covered, until crisp-tender, 3-5 minutes. Drain; place in a large bowl. Add tomatoes; cover and keep warm. , Place vinegar, Worcestershire sauce, sugar, onion, salt and paprika in a blender; cover and process until smooth. While processing, gradually add oil in a steady stream. Toss with asparagus mixture. Top with almonds and, if desired, cheese.

2 lbs asparagus
1/2 cup almonds, sliced
2 tablespoons extra virgin olive oil
2 garlic cloves, finely chopped
salt & freshly ground black pepper, to taste

Steps:

  • Bring a large pot of slightly salted water to a boil.
  • Snap off and discard the ends of the asparagus. Cut trimmed asparagus spears on a diagonal into 2-inch-long pieces.
  • Cook asparagus in boiling water until crisp-tender, about 4 minutes.
  • Drain and rinse under cold water. Pat asparagus dry with paper towels.
  • Heat a large skillet over medium-heat. Add almonds and cook, stirring occasionally, until toasted (abour 3 minutes). Transfer to a plate.
  • Heat oil and garlic together in a large skillet over medium heat until garlic begins to brown, about 2 minute Add asparagus and cook, stirring often, until heated through, about 5 minutes. Stir in almonds. Season with salt and pepper and serve hot.
