Categories     Dinner, Main course, Supper

Time 50m

Number Of Ingredients 8

8 sausages
2 x 400g packs ready-to-roast vegetables
3 garlic cloves, bashed in their skins
2 tbsp olive oil
1 tsp smoked paprika
2 x 250g pouches puy lentils
1 ½ tbsp sherry or red wine vinegar
1 small pack parsley, roughly chopped

Steps:

  • Heat grill to high. Put the sausages in a large roasting tin and grill for 8-10 mins until browning, then switch the oven on to 200C/180C fan/gas 6. Remove the tin from the oven and add the vegetables and garlic, then drizzle over the oil and toss in the paprika and some seasoning.
  • Roast for 30-35 mins more until the sausages and veg are mostly tender, then stir through the lentils and vinegar. Return to the oven for 5 mins until everything is heated through. Squeeze the garlic cloves out of their skins and stir the garlic into the lentils, then season to taste, stir through the parsley and serve.

SAUSAGES WITH PUY LENTILS

Sausages with Puy Lentils image

Lentils have a great affinity with pork and sausages as they have the capacity to absorb the richness.

Number Of Ingredients 11

8 large, good-quality, herby pork sausages (about 1 lb 5 oz/600 g in total)
1 bay leaf
Salt and freshly milled black pepper
6 oz (175 g) Puy lentils
1 large onion, chopped small
2 cloves garlic, crushed
1 oz (25 g) butter
2 tablespoons groundnut or other flavourless oil
14 oz (400 g) tinned chopped tomatoes
1 teaspoon granulated sugar
1 tablespoon chopped fresh thyme

Steps:

  • Begin by rinsing the lentils, then place them in a saucepan with 1/34 pints (1 litre) of water (don't add any salt), bring them to simmering point and cook gently for about 30 minutes, or until the lentils are tender but not disintegrating. Then drain them and keep the cooking liquid. Meanwhile, fry the onion and garlic in the butter and 1 tablespoon of the oil in the casserole for 8-10 minutes to soften. Next, add the tinned tomatoes, sugar, thyme and bay leaf, and some salt and freshly milled black pepper, and let it all simmer gently (without a lid) until the liquid reduces and it becomes rather thick - you may need to stir it now and then and it will take about 5-7 minutes. Now heat the remaining tablespoon of oil in a large frying pan and brown the sausages all over in it. Then, using a draining spoon, transfer them to the tomato mixture. Add the cooked lentils and 10 fl oz (275 ml) of the liquid they were cooked in. Stir well, then continue cooking over a very gentle heat for about 30 minutes - with a lid - and, if the mixture begins to look dry, add a little more liquid. Taste and add pepper and salt, if it needs it, before serving.

4 Pork and fennel sausages
olive oil
1 glass red wine
2 garlic cloves, finely chopped
1 small onion, finely chopped
small sprig rosemary, finely choppsed

1 red chilli, seeded and chopped
1 heaped teaspoon tomato paste
1 cup beef stock

SAUSAGES BRAISED WITH LENTILS

Sausages Braised With Lentils image

A warming winter dish - lovely with mashed potato and a green vegetable. Puy lentils can be substituted for the black beluga lentils, but will need to cook for a little longer. The recipe also works well with pork or venison sausages.

Categories     Lamb/Sheep

Time 55m

Yield 4 serving(s)

Number Of Ingredients 14

8 lamb sausages
1 tablespoon olive oil
1 medium onion
1 stalk celery
2 medium carrots
2 garlic cloves
200 g black lentils
200 ml red wine
400 ml chicken stock
150 g mushrooms
1 stalk rosemary
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon red currant jelly

Steps:

  • Heat the oil in a large saute pan and brown the sausages (they do not need to be fully cooked).
  • Meanwhile, finely dice the onion, celery and carrot, and finely chop the garlic.
  • Remove the sausages from the pan, and add the diced vegetables, then saute over a medium heat until softened but not browned.
  • Rinse the lentils, then add to the pan along with the red wine. Bring to the boil, and reduce the wine until it is syrupy, Stir in the chicken stock and sliced mushrooms, and nestle the sausages into the mixture. Place the sprig of rosemary (or thyme if you prefer it) on top.
  • Cover and simmer for 30 minutes until the lentils are fully cooked.
  • Discard the rosemary (or thyme), and reduce any excess liquid over a high heat - you want a syrupy sauce to remain.
  • Stir in the redcurrant jelly, and season to taste.
