PIZZA PASTA BAKE WITH SAUSAGE

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 9x13-inch baking dish with cooking spray.
- Bring a large pot of water to a boil and cook the pasta according to package directions.
- While pasta is cooking, cook the sausage in a skillet over medium heat until just lightly pink. Add green bell pepper and onion to the sausage. Continue cooking until the meat is cooked through. Add the pepperoni, olives, cream cheese, and sauce. Cook over low heat until heated through and cheese has melted.
- When pasta is done, drain and return to the pot. Stir the sausage mixture into the pasta; stir to coat the pasta.
- Add half of the pasta mixture to prepared baking dish. Top with half of the mozzarella cheese. Spread the remaining pasta over the cheese and top with the remaining mozzarella cheese. Sprinkle with the Italian seasoning and place a few pepperoni slices on top, if you like.
- Bake until the cheese has melted and the pasta is heated through, about 15 minutes.

- Heat oven to 375°F. Grease 13x9-inch pan.
- Cook ground sausage in 10-inch skillet over medium heat until browned. Remove with slotted spoon onto paper towel to drain. Remove all but 2 tablespoons of the drippings from pan. Add diced onion, and cook until translucent but not browned. Add sliced mushrooms and salt, and cook until mushrooms are softened and onions are caramelized. Remove from heat.
- In medium bowl, stir Bisquick mix and water until soft dough forms. Drop half of the dough by spoonfuls into pan. Dough will not completely cover bottom of pan.
- Spoon half of the pizza sauce over dough; sprinkle with half of the cheese, and scatter with half of the sausage mixture. Repeat layers with the rest of the dough, sauce, cheese and sausage mixture.
- Bake 25 to 30 minutes or until golden. Serve immediately.

Another recipe from my Clip and Save binder that's at least 30 years old. It's handwritten, so I must have copied it from a magazine.Anyway, it's good comfort food, kid friendly, that you can "tweak" to your family's likings! You can also use regular "original style" bulk pork sausage and throw in whatever your family likes on pizzas...sliced black olives, mushrooms, diced pepperoni...you get the idea!

- In a large skillet, brown the sausage, breaking it up into small pieces as it cooks. Remove from skillet and drain.( I like to put the sausage in a colander and run hot water over it to get all the grease off that I can ).
- As sausage is cooking, bring a medium pot of water to a boil and cook the macaroni until al dente ( slightly firm to the tooth). You don't want to cook it too long or the final product will be mushy.
- Add green pepper, onion,garlic, oregano and basil to the skillet and cook until onions are wilted but not browned. Add a small bit of olive oil or water, if necessary.
- Stir in tomato sauce and the water; simmer over low heat for 5 minutes.
- In a 2 1/2 quart casserole dish that has been coated with cooking spray, combine the macaroni, sausage, and tomato sauce mixture, mixing well.
- Add half of the mozzarelle cheese and half ( 2 T. ) of the Parmesan cheese to the casserole dish and mix to distribute evenly.
- Top casserole with remaining diced Mozzarella and Parmesan cheese.
- Bake in a preheated 350 degree oven for 20 minutes. Uncover and bake for an additional 10 minutes, or until top is golden brown.

SAUSAGE PASTA BAKE
An Italian-American classic, this freezable sausage pasta bake is an ideal make-ahead family dish for busy days

- To make the ragu, heat the oil in a large shallow pan or flameproof casserole. Squeeze the sausagemeat from its skins in small balls straight into the pan. Sizzle for 10 mins until browned (don't worry if the meat breaks up). Add the garlic and sizzle for another minute until starting to turn golden, then stir in the chilli flakes, if using, the tomato purée and vinegar. Tip in the tomatoes and bring to a simmer. Reduce the heat to low and bubble for 30 mins.
- Meanwhile, make the white sauce. Melt the butter in a saucepan and stir in the flour to make a loose paste. Sizzle for a minute, then gradually whisk in the milk. Simmer gently for 10 mins, whisking occasionally to ensure the sauce stays smooth. Season and whisk in the parmesan. Remove from the heat and set aside.
- Cook the pasta in a large saucepan of boiling water for 9 mins, or a minute less than pack instructions. Drain and return to the pan. Scrape most of the white sauce into the pasta and stir to coat. Tip in most of the ragu and most of the mozzarella and stir until just combined. Pour the pasta mixture into a large baking dish and spoon over the remaining white sauce and ragu. Dot with the rest of the mozzarella and sprinkle with extra parmesan. Leave to cool completely, then wrap and chill for up to a day, or freeze for up to two months. Defrost in the fridge for 24 hrs before baking.
- Heat the oven to 190C/170C fan/gas 5. Bake for 25-30 mins until the top is slightly crisp at the edges and the cheese is melted. Leave to rest for 5-10 mins, then take the baking dish straight to the table for people to scoop onto their plates.
