ITALIAN SAUSAGE WITH BOW TIES
We often have our favorite pasta when company comes over, and I've shared this Italian sausage recipe several times. Now many of my friends make it for their families, too. -Janelle Moore, Auburn, Washington

Steps:
- Cook pasta according to package directions. Drain., Meanwhile, in a 6-qt. stockpot, cook and crumble sausage with onion and pepper flakes over medium heat until no longer pink, 5-7 minutes. Add garlic; cook 1 minute. Drain., Stir in tomatoes, cream, salt and basil; bring to a boil over medium heat. Reduce heat; simmer, uncovered, until thickened, 6-8 minutes, stirring occasionally. Stir in pasta; heat through. Serve with cheese.

BOW TIES WITH SAUSAGE, TOMATOES AND CREAM
A friend gave this recipe to me a few years back, and my family can't seem to get enough of it. It sounds strange with cream in it, but that just enhances the flavor and texture. This is a very easy recipe.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
- Heat oil in a large, deep skillet over medium heat. Cook sausage and pepper flakes until sausage is evenly brown. Stir in onion and garlic, and cook until onion is tender. Stir in tomatoes, cream, and salt. Simmer until mixture thickens, 8 to 10 minutes.
- Stir cooked pasta into sauce, and heat through. Sprinkle with parsley.

PAN-CRISPED SAUSAGES
Serve sausages and cheeses with crackers, grainy mustard, cornichons, apricot jam, and olives.

- Prick sausages all over with a fork, and transfer to a skillet (preferably cast iron) over medium heat. Fill skillet with enough water to reach a quarter of the way up sides of sausages. Simmer, covered, until sausages are cooked through and water evaporates, 10 to 15 minutes. (If sausages have cooked through but water has not evaporated, uncover, and continue to cook until water evaporates.)
- Continue to cook sausages, turning, until crisp and golden brown all around, about 3 minutes. Serve with cheeses.
HOMEMADE SAUSAGE SEASONING BLEND
A dry herb blend for giving any ground meat a "sausage" flavoring. Try this not only with ground pork, but also ground turkey, beef, or chicken. Adapted from a recipe that came with one of my pizza pans. Recipe can be doubled, tripled, etc as needed. Each batch is enough to season 1 pound of meat. Leave out the crushed red pepper flakes for milder sausage.

- Blend all ingredients together in a spice grinder or mini-food processor (or you may also just stir together if you like some chunkier bits of fennel in your sausage).
- Store in an airtight container until ready to use.
- To use, mix with 1 pound ground meat.
- Chill seasoned meat 3 hours before using.
- Or you may also use this in any recipe calling for sausage seasoning.
SAUSAGE BALLS
A crowd-pleaser for Holiday gatherings. This is my most requested recipe. These are best served with Versatile Mustard Dip (Recipe #150023).

Steps:
- Allow cheese and sausage to reach room temperature.
- Place in mixing bowl with Bisquick and blend until smooth. (I've had great success using my hand-held electric mixer to incorporate ingredients).
- NOTE: Mixture will be quite dry.
- Line a cookie sheet with aluminum foil.
- Spray well with vegetable oil spray.
- Press/roll mixture into 1 inch balls by hand; place on cookie sheet about 1 inch apart.
- Bake in 400 degree Fahrenheit oven for 10 to 12 minutes, or until golden brown.
- Drain on paper toweling.
- Serve warm with Versatile Mustard Dip (Recipe #150023).
SAUSAGE AND EGG BREAKFAST BOWLS
Steps:
- Place 1 cup of the hash browns in your air fryer and cook them at 400 degrees for 11 minutes. If you don't have an air fryer follow the back of the package for instructions on how to cook them.
- While your hash browns are cooking, whisk two large eggs and bowl and add the 1 oz of turkey sausage. Cook them on medium high heat inside a medium sized pan.
- Top the hash browns off with the eggs and 2 tablespoons of cheese sauce.

ROASTED POTATO AND SAUSAGE DINNER RECIPE

- Place meats on a baking sheet, cover with plastic wrap and freeze 1 1/2 hours. Should be very firm, not frozen solid. Place all meat grinder parts in freezer and refrigerate mixing bowl at least 30 min prior to using.
- Rinse casing well to remove salt and run warm water all the way through the casing. Let casing soak in warm water (90˚F water) for at least 1 hour or until soft and slick. Keep casings in water until ready to use.
- Remove 1/3 of meat from the freezer, dice into 1/4 thick pieces with a sharp knife and transfer to your chilled mixing bowl. Chop remaining meat into 2" pieces so that it can easily go through the meat grinder. Set up your meat grinder (if using KitchenAid mixer, set to speed 4 using the large holes grinding plate) and grind meat into chilled bowl then grind bacon.
- Sprinkle seasonings over meat and toss by hand 30 seconds to distribute then add 1 cup water and mix meat by hand for 1 minute (or with paddle attachment on speed 1 for 1 minute), just until a light film forms on the outside of the bowl and the mixture binds to itself and can hold a patty shape. Cover and refrigerate your sausage mixture while you clean your grinder and set up your sausage maker attachment. Seasoning Tip: To test your meat for seasoning, form a small patty and saute it on a skillet to sample.
