GRANDMA SMITH'S NEW BRUNSWICK-STYLE TURKEY STUFFING
This moist and mellow recipe came from my mother-in-law to my husband from her family.

- Place potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two, then mash.
- Melt the butter in a skillet over medium heat; cook the celery and onion in the butter until the onion has turned translucent, 5 to 7 minutes. Fold into the mashed potatoes along with the savory, and allow to cool until just warm.
- Place the cooled mashed potatoes into a large bowl, and stir in the beaten egg. Gently fold in cubed bread, then season to taste with salt and pepper. Refrigerate until ready to use.
- Use as a stuffing for turkey, or bake in buttered loaf pans at 350 degrees F (175 degrees C) for 30 to 40 minutes.

SAUSAGE STUFFING

Steps:
- Cook sausage. Drain.
- Melt margarine. Add enough to sausage drippings to make 1 cup.
- Saute; onions and celery in margarine/dripping mixture until onion is tender. DO NOT BROWN. Stir in about 1/3 bread cubes. Put in big bowl and add remaining bread cubes, poultry seasoning, and pepper. Watch your hands, it's hot. Mix well.
- Stuff turkey. You can also omit the sausage, increase the bread cubes to 9 cups, and add a teaspoon or two of salt. You can also add apples, giblets, oysters, etc. This recipe is very adaptable. When cooking extra in the oven, place the stuffing in a buttered casserole dish, and place in a pan of hot water. Cover, and baste with turkey drippings occasionally. It comes out really good.

- In a large skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking into crumbles; drain. In a stockpot, melt butter over medium heat. Add mushrooms, celery and onions; cook and stir 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Remove from heat. , Stir in sausage. Add bread cubes and sage; toss to combine. Add chicken stock and wine. Stir in cranberries and, if desired, sunflower kernels. Transfer to a greased 6-qt. slow cooker. Cook, covered, on low 2-3 hours or until heated through, stirring once.

SAUSAGE STUFFING WITH SUMMER SAVORY

- Heat oven to 375 degrees, and butter a 9-by-13-inch baking dish.
- Boil potatoes in salted water until just cooked through but still firm in center. When cool, cut into 1-inch dice. Set aside.
- Melt remaining butter and oil together in large skillet over medium heat. Add onions and celery, and cook, stirring, until softened. Reduce heat if necessary to prevent browning.
- Raise heat to medium-high, add sausage and cook, stirring, using a wooden spoon to break up clumps. When sausage has browned slightly add potatoes, and continue cooking until they are incorporated and slightly browned. Add bread cubes, and mix.
- Add about half the broth, and mix. If needed, add more to soften bread cubes and to bind the stuffing together. Add salt and pepper to taste, and sprinkle with 1 teaspoon summer savory. Taste, and add more savory if desired.
- Turn into buttered dish. If mixture seems dry, drizzle on remaining stock. Bake 30 to 40 minutes, until firm and crusty. (The stuffing is even better if mixed in advance, kept refrigerated and baked just before serving.)

- Traditional oyster stuffing recipe. To make oyster stuffing, season two cupfuls fresh breadcrumbs with salt and pepper, add one-third cupful melted butter and one cupful oysters, cleaned and drained from their liquor.
- Southern peanut stuffing recipe. To make peanut stuffing, remove skin covering and finely chop sufficient roasted or salted peanuts to measure half a cupful, add one cupful cracker-crumbs, salt, pepper and cayenne to season, two tablespoonfuls melted butter and one-half cupful rich cream.
- Potato stuffing. Mix 2 cups hot mashed potatoes, 2 cups cracker crumbs, 1/3 cup each melted butter and sausage fat and 1/2 cup giblets cooked and chopped fine.
- Bread stuffing. Remove crust from one loaf baker’s bread and break into pieces. There should be 3-1/2 cups. Pour over 1 cup boiling water. Let stand 20 minutes and then squeeze out as much water as possible.
- New England stuffing. “Remove the hard outside crusts from a small’stale loaf of baker’s bread,” says Fannie Merritt Farmer in Woman’s Home Companion for November [1910].
- Fall River stuffing. Put giblets in saucepan and cover with one quart of cold water. Place on range and heat gradually until boiling-point is reached: then let simmer until giblets are tender.
- Classic bread and celery stuffing. Remove hard outside crusts from a stale loaf of baker’s bread and break in pieces. There should be three and one-half cupfuls.
- Old-fashioned cracker stuffing. Mix 3 cups cracker crumbs with 1 small cup butter. Moisten with 1-1/4 cups boiling water. Season with salt, pepper and poultry dressing.
- Potato-sausage stuffing. One toothsome substitute which is well-liked is made of a mixture of mashed potatoes and sausage meat. For a ten-pound turkey are required three pints of hot mashed potatoes seasoned with finely minced parsley, celery, onion and pepper; one pint of sausage meat seasoned with sage and two eggs, which should be beaten thoroughly and mixed with the other ingredients.
- Walnut stuffing recipe. To one quart of fresh breadcrumbs add one cup of English walnuts which have been cut into small pieces, one tablespoonful of salt and one-quarter teaspoonful of pepper.
