SAUSAGE AND BACON KABOBS

Sausage and Bacon Kabobs image

Provided by Sandra Lee

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 7

4 (12-inch) bamboo skewers soaked in water for 1 hour
6 slices center cut bacon, cut into 1-inch pieces (recommended: Oscar Mayer)
4 chicken and apple sausages (recommended: Aidell's)
1/2 red onion, cut into 1-inch pieces
1 green, red, or yellow bell pepper, cut into 1 1/2-inch pieces
1 cup store bought BBQ sauce
1 orange, cut into slices or wedges

Steps:

  • Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.
  • Cook bacon pieces in a microwave oven for about 1 minute, or pan fry until the edges begin to curl but the bacon is still flexible. Drain well.
  • Cut each sausage into 5 pieces.
  • Thread an end piece of sausage onto skewer followed by a piece of bacon, onion, bell pepper, and another piece of bacon. Repeat using center sausage pieces and finishing with end piece (center sausage pieces will be "sandwiched" between bacon). Repeat with remaining skewers and sausages.
  • Place skewers on hot oiled grill and cook 4 to 5 minutes per side (16 to 20 minutes total).
  • Meanwhile, squeeze the orange juice into the BBQ sauce and stir to combine. Brush kabobs with BBQ sauce with each turn. Serve hot with orange slices or wedges.
  • INDOOR: Prepare kebabs as directed. Preheat broiler. Place kebabs on wire rack over foil lined baking sheet or broiler pan. Place under broiler 4 to 6 inches from heat source and cook 3 to 5 minutes per side. Brush with BBQ sauce with each turn.

  • Shrimp Gumbo with Andouille Sausage. When it comes to Cajun, Creole, or New Orleans meals, gumbo falls somewhere near the top of the list. You can’t talk about Cajun cuisine and not include it.
  • Instant Pot Jambalaya. If you want good Louisiana fare but aren’t in the mood for gumbo, jambalaya is the natural alternative. You can make it in just 35 minutes in your Instant Pot.
  • Andouille-Stuffed Peppers. Stuffed peppers are always a fun and (relatively) easy hit with most people. Use this six-ingredient recipe if you’re looking to make some stuffed peppers with a bit of New Orleans flair.
  • Chicken Andouille-Stuffed Peppers with Roasted Green Beans. If you’re in the mood for stuffed peppers but want something a bit milder, this recipe is one you’ll enjoy.
  • Andouille Sausage Pot Pie. We usually think of chicken, turkey, beef, or veggies when we think of pot pies. While it might not be as well-known, this Andouille sausage pot pie is equally delicious.
  • Butternut Squash Stew with Andouille and Quinoa. If you’re looking for a chunky, filling stew that’ll warm your belly on a long, cold night, this one is a great choice.
  • Stuffed Pork Chops. Tender, succulent pork chops are always a great dinner option, but when you stuff those pork chops with pecans, celery, carrots, Andouille sausage, and herbs, they become even better.
  • Cornbread Stuffing with Andouille Sausage. This cornbread stuffing recipe is pretty much the same thing you’ll use to stuff the pork chops above. But as you can imagine, it tastes just as good on its own.
  • Andouille Sausage with Sweet Potatoes and Brussels Sprouts. This tasty meal is a testament to how much yumminess you can fit onto a single sheet pan.
  • Skillet Cajun Potatoes with Andouille Sausage. This skillet meal takes only 10 ingredients (including salt and pepper) and less than an hour to make, and it has everything you need for a hearty, all-in-one meal.

  • Light a chimney 3/4 full of charcoal. While the fire is lighting, carefully cut the squash in half lengthwise with a large knife. Scoop out and discard the seeds. Brush the exposed flesh of the squash with olive oil and lightly season with salt and pepper.
  • When charcoal is fully lit and covered in gray ash, pour coals out and arrange them on one side of the charcoal grate, keeping the other side empty. Place squash, cut side down, over the hot side of the grill. Cover and grill until squash is well browned, about 10-15 minutes. Flip squash over and move to the cool side of the grill. Cover and continue to cook until a paring knife can be inserted in the middle of the squash with no resistance, about 20-30 minutes more. Remove squash from the grill and let cool.
  • While the squash is cooling, remove the sausages from their casings and brown the meat in a large dutch oven over medium heat, using a wooden spoon to break up the meat as it cooks. Remove the sausage to a paper towel lined plate, leaving as much rendered fat in the pot as possible (if there is not a lot of fat, you should add 1 tablespoon of butter). Add the onions to the dutch oven and cook until softened, about 5 minutes. Add the garlic and cook until fragrant, about 30 second. Add the chicken stock, scrapping the bottom of the dutch oven to deglaze the pan. Scoop out the flesh of the butternut squash and add it in with the stock, bring to a boil, then reduce the heat and allow to simmer for 15 minutes, stirring occasionally.
  • Using an immersion blender, or working in batches in a regular blender, puree soup until smooth. Add the heavy cream, nutmeg, and browned sausage. Bring back to a simmer, taste, and adjust seasoning with salt and pepper.
