The Ultimate Breakfast for Dinner: Sausage and Spinach Egg Strata image

1 box or bag organic chopped frozen spinach
1 tablespoon EVOO
12 ounces bulk spicy breakfast sausage
2 tablespoons butter
1 onion, finely chopped
4 cloves garlic, finely chopped
Salt and freshly ground black pepper
Freshly grated nutmeg
1/2 pound stale white or French bread, cubed (7 to 8 cups)
12 eggs
2 cups milk or half-and-half
1/4 cup Dijon mustard
2 cups shredded caciocavallo cheese or Parmigiano-Reggiano

Steps:

  • Defrost the spinach in the microwave, and then wring out any excess liquid.
  • Heat the EVOO in a skillet over medium-high heat. Brown and crumble the spicy breakfast sausage, and then remove the crumbles to a plate. Return the skillet to the heat. Reduce the heat a little and melt the butter. To the skillet, add the onions and garlic and cook to soften, 5 to 6 minutes. Then add the spinach and season with salt, pepper and a little nutmeg. Turn off the heat and combine with the sausage bits.
  • Arrange half of the bread in a casserole dish.
  • Whisk the eggs with the milk, Dijon and some salt and pepper.
  • Scatter half of the sausage-spinach mixture over the bread, top with half the cheese, pour over half the eggs, repeat. Cover and store in the fridge.
  • Bring the strata to room temperature for about 30 minutes before you bake. Preheat the oven to 350 degrees F with the rack in the center of the oven.
  • Set the casserole on a baking sheet and bake uncovered 1 hour. Let stand 10 minutes and serve.

2 Tablespoons Olive Oil
1 small onion (diced)
1 red pepper (diced)
8 ounce mushrooms sliced
3 garlic cloves (minced)
2 Cups spinach (chopped)
12 eggs (beaten)
salt and pepper

Steps:

  • Preheat oven to 350 degrees and spray a 9x13 inch pan with non stick spray. In a medium sized skillet over medium high heat add the onion and pepper and sauté for 2-3 minutes until almost tender. Add in the mushrooms and garlic and continue to sauté for 2 minutes. Add spinach and sausage and cook until heated through.
  • Spread evenly on the bottom of the 9x13 inch pan. Pour the eggs on top of the sausage mixture. Bake for 25-30 minutes or until eggs are cooked throughout.

1 (16 ounce) package shredded Monterey Jack cheese
½ cup butter, melted
½ cup all-purpose flour
1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
2 (4.5 ounce) cans sliced mushrooms, drained
1 teaspoon baking powder
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with 1 teaspoon butter.
  • Whisk eggs in a large bowl. Add cottage cheese, Monterey Jack cheese, 1/2 cup melted butter, flour, spinach, mushrooms, baking powder, and salt; mix. Pour egg mixture into prepared baking dish.

11 large eggs
¾ cup milk
2 cups shredded sharp Cheddar cheese
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 teaspoon dried oregano

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.

2 large garlic cloves, chopped
4 scallions, chopped
1/2 lb fresh shiitake mushrooms, stems discarded and caps chopped
1/2 lb fresh cremini mushrooms, trimmed and chopped
1/4 teaspoon black pepper
3/4 teaspoon salt
1 (10-oz) package frozen chopped spinach, thawed and squeezed dry
1/4 cup water
2 large whole eggs
4 large egg whites
2 tablespoons fat-free (skim) milk
1 oz finely grated Parmigiano-Reggiano (about 1/3 cup)
3 oz Gruyère, coarsely grated (1 cup)
Special Equipment
a 19- by 13-inch sheet of parchment paper

Steps:

  • Put oven rack in middle position and preheat oven to 350°F. Lightly oil a 15- by 10-inch shallow baking pan, then line bottom and all 4 sides with parchment paper, allowing 2 inches of parchment to hang over short sides of pan, and lightly brush parchment (except overhang) with oil.
  • Heat 1 teaspoon oil in a 12-inch heavy nonstick skillet over moderately high heat until hot but not smoking, then cook sausage, stirring, until finely crumbled and cooked through, about 2 minutes. Transfer to a bowl and keep warm, covered.
  • Add remaining 2 teaspoons oil to skillet and sauté garlic and scallions, stirring, until golden, about 3 minutes. Add mushrooms, pepper, and 1/4 teaspoon salt and sauté, stirring, until mushrooms are softened and golden, about 8 minutes. Add sausage and spinach to skillet and sauté, stirring, 3 minutes.   • Blend whole eggs, whites, milk, Parmigiano-Reggiano, and remaining 1/2 teaspoon salt in a blender until smooth and frothy.
  • Pour egg mixture into baking pan and bake until firm, about 10 minutes. Remove from oven and leave oven on.
  • Sprinkle egg layer evenly with half of Gruyère, then spoon spinach filling evenly on top and sprinkle with remaining Gruyère. Bake just until cheese melts, about 5 minutes.
  • Position pan on a work surface with a long side nearest you, then gently roll up egg layer toward you, using parchment as an aid and holding filling in place with your fingers.
  • Cool roll in pan on rack 10 minutes, then transfer to a platter using 2 large spatulas. Trim ends and gently cut into 8 slices with a serrated knife.

Baked Eggs with Sausage and Mushrooms image

Extra-virgin olive oil
2 cloves garlic, smashed
Pinch crushed red pepper flakes
1 pound fennel sausage, casings removed
1 pound cremini mushrooms, stemmed and sliced
Kosher salt
4 sage leaves, finely chopped
1/2 cup dry white wine
8 eggs
6 ounces Gruyere cheese, grated

Steps:

  • Special equipment: 8 (6-ounce) ramekins
  • Preheat the oven to 400 degrees F.
  • Coat a large saute pan with olive oil, add the garlic cloves and the crushed red pepper and bring to a medium heat. When the garlic has become golden brown and very aromatic, remove it and discard, it has fulfilled its garlic destiny. Add the sausage and brown.
  • Once, nicely browned, add the mushrooms and season with kosher salt. When the mushrooms have softened, add in the sage and white wine. Cook until the wine has almost been absorbed. Turn off the heat and reserve.
  • Brush 8 individual ramekins with olive oil. Divide the sausage mixture equally among the ramekins and press gently into the bottom. Top each with an egg. Sprinkle each egg with a couple drops of olive oil and arrange on a baking sheet. Bake for 8 minutes. Sprinkle each egg lightly with Gruyere cheese and bake until the cheese is brown and bubbly and the egg whites are cooked and the yolks are still runny, about 5 minutes
  • Serve with grilled bread rubbed with garlic, if desired.
  • Now thats an egg!

4 Cups Fresh Spinach and/or kale or 2 Cups Frozen Spinach (5 Ounces)

8 Eggs (We use jumbo Eggs)
1 1/2 Cups Milk (We use 1%)
2 teaspoon Salt
1/2 teaspoon black pepper

Steps:

  • Bake Pie Crust According to package directions. Preheat oven to 375 degrees
  • Chop Onion, slice Garlic.Cook Sausage.
  • Add Onions and Garlic to Sausage. Sauté Onion and Garlic until the onion starts to soften
  • Add Mushrooms. Cook mushrooms until they start to breakdown and get soft. Add the Sherry. Cook for one additional minute
  • Add Spinach and Kale. Cook until the spinach cooks down. About 2 to 3 minutes
  • The Spinach/Kale will cook way down. Or if using frozen spinach cook until it is heated through
  • Add 1/2 of the Sausage mixture/Mushroom mixture to each pie shell or to the baking dishs. If making this crustless remember to spray the pan with cooking oil. We used Pam Butter spray
  • Sprinkle the cheese on top of the sausage mixture
  • Whisk the eggs and milk together
  • Pour the eggs over the sausage mixture
  • If crustless pour into baking dish
  • Place in 375° preheated oven
  • Bake for 40 to 50 minutes. Bake until Golden Brown on top. The Crustless quiche will cook faster.
  • Enjoy!!!!

  • Heat half the butter on a medium high heat in a large frying pan. Remove sausage casings and crumble the sausage meat into the pan.
  • Cook, stirring and breaking up any large chunks of sausage meat for a few minutes or until sausage meat is starting to brown.
  • Add the remaining butter, mushrooms and thyme. Continue to cook, stirring every now and then until the mushrooms are tender and brown and the sausage meat is all cooked through.
  • Taste and season. Serve on a bed of the baby spinach OR add the spinach to the pan and cook for another few minutes or until just starting to wilt.
