KETO BREAKFAST CASSEROLE WITH SAUSAGE AND CHEESE
This keto breakfast casserole is a complete meal. It's made with sausage, eggs, cheese, and fresh spinach. It's so delicious and - just as important - it's very filling!

Steps:
- Preheat your oven to 400 degrees F. Lightly grease a square 9-inch pan.
- In a large bowl, whisk the eggs with the heavy cream, salt, pepper, garlic powder, and red pepper flakes. Use a rubber spatula to mix in ½ cup of the shredded cheddar. Set aside.
- Heat a large 12-inch nonstick skillet over medium-high heat. There's no need to add oil. Add the sausage and cook, stirring and breaking it up, until browned, 5-7 minutes.
- Turn the heat off and mix in the spinach leaves (you can leave them whole), just until they are very slightly wilted from the pan's residual heat.
- Transfer the sausage-spinach mixture to the prepared baking dish, spreading it evenly on the bottom.
- Give the eggs another mix, and then pour them into the pan on top of the sausage mixture. If needed, you can gently stir the mixture inside the pan to more evenly spread out the sausage and spinach.
- Sprinkle the remaining ½ cup of cheese on top.
- Bake the casserole until the eggs are set and the cheese is golden brown. In my oven, this takes 25 minutes. Your first clue that it's ready will be the AMAZING smell that will fill your kitchen!
- Allow the casserole to rest for 10 minutes before cutting it into nine squares and serving.

SAUSAGE, SPINACH AND CHEESE BREAKFAST SQUARES
Easy peasy and adjustable. These are good served hot, fresh from the oven, but I make them for us to take to work and eat there. They also freeze and reheat very well. I also used cubed ham if sausage isn't available. And if I have a lot of chopped green or spring onions left over from something, I use those as well as yellow or white onion. Feel free to play with the ingredients. I use 14 large eggs - adjust accordingly. Nuking the sausage ahead of time makes clean up way easier. I end up putting the eggs, baking mix, spinach, salt pepper in the Cuisinart then I just stir in the sausage and cheese.

Steps:
- Spread the sausage out on a microwave-safe bowl and microwave until it's cooked. Drain it and crumble it and set aside.
- Beat the eggs with the baking mix (we use Carbquick) and salt and pepper.
- Drain the spinach and add to the eggs.
- Add the cheese.
- Add the sausage.
- Bake in large rectangular pan that's been well sprayed with non-stick spray (I use a 13x8" pan) You could also bake these (for less time) in sprayed muffin tins.
- Bake 350 degrees for about 40 minutes or until the center is set. Cool and cut into squares.

Steps:
- Preheat oven to 400°F Butter a 6x9 or 8x8 inch baking dish.
- Heat one of the teaspoons of olive oil in a large skillet over medium-high heat until shimmering. Add spinach and cook, stirring often, until wilted, about 3 minutes. Transfer spinach to strainer and drain. When cool, squeeze out liquid and roughly chop the spinach.
- Wipe skillet clean. Add sausage to skillet and cook over medium-high heat until browned, 5 to 6 minutes. Use slotted spoon to transfer sausage to bowl. Wipe skillet clean. Heat remaining oil in skillet and add onions, cooking until golden, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Scrape mixture into bowl with sausage.
- Meanwhile, place potatoes in a large pot and add enough water to cover by 1 inch. Bring potatoes to boil over high heat, then lower heat to a simmer. Cook until potatoes are tender, about 15 minutes. Drain potatoes, wipe pot dry, put potatoes back into the pot, and mash with butter, cream, broth, vinegar, nutmeg, salt and pepper. Stir in spinach and 1/2 cup of the cheese.
- Transfer potato-spinach mixture to prepared baking dish. Top with sausage-onion mixture and sprinkle with remaining 1/2 cup of cheese. Bake until potatoes are very hot and cheese is golden and bubbly, 20 to 25 minutes. Cool for 10 minutes before serving.
SPINACH CHEESE SQUARES
I found this in my mother's collection of recipe clippings, from the 1960's. The only change I made was to reduce the salt to one-half teaspoon. You could probably substitute frozen chopped spinach to save time. I think these taste great at room temperature.
