SAUSAGE AND APPLE BREAKFAST STRATA
All your favorite breakfast staples come together in an easy to make Sausage and Apple Breakfast Strata. Perfect for breakfast or brunch and it can even be made the night before.

- Preheat oven to 350 degrees. Lightly grease a 9x13 baking dish. Line the bottom of the dish with English muffin halves, cutting them as needed to fit.
- In a large skillet over medium high heat, cook the ground sausage with the onion until sausage is brown. Add in diced apple and sage and cook another 3-5 minutes.
- In a large mixing bowl, whisk together eggs, half and half, salt, and pepper. Stir in shredded cheeses.
- Stir sausage mixture into egg mixture and pour over English muffins. ***At this point you can cover the dish and refrigerate it overnight.
- Bake in the preheated oven for 45 minutes to 1 hour, until set.

When our family sits down for breakfast on days when this do-ahead dish is on the menu, I can relax and join them. I like to serve it with fresh fruit and homemade rolls. Plus, it adds a nice touch to a celebration brunch.

- Using 1/4 cup butter, spread one side of each bread slice with butter. Place half of the bread, butter side down, in a greased 13x9-in. baking dish., In a large skillet, saute the mushrooms and onions in remaining butter. Sprinkle with salt and pepper. Spoon half of the mushroom mixture over bread in prepared pan. Top with half of the sausage and cheese. Layer with the remaining bread, mushroom mixture, sausage and cheese. In a large bowl, whisk the eggs, milk, Dijon mustard, nutmeg and ground mustard. Pour over cheese. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, covered, at 350° for 50 minutes. Uncover; bake 10-15 minutes longer or until a knife inserted in the center comes out clean. Sprinkle with parsley. Let stand 10 minutes before serving.

This strata is really easy to make. Put it together the day before, then just remove from the refrigerator and bake. Ham or bacon can be substituted for the sausage. Sometimes I add cooked chopped broccoli for a change of pace.

- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside.
- Layer bread cubes, sausage, and Cheddar cheese in a lightly greased 7x11 inch baking dish. In a bowl, beat together the eggs, milk, salt, and mustard. Pour the egg mixture over the bread cube mixture. Cover, and refrigerate at least 8 hours or overnight.

- Defrost the spinach in the microwave, and then wring out any excess liquid.
- Heat the EVOO in a skillet over medium-high heat. Brown and crumble the spicy breakfast sausage, and then remove the crumbles to a plate. Return the skillet to the heat. Reduce the heat a little and melt the butter. To the skillet, add the onions and garlic and cook to soften, 5 to 6 minutes. Then add the spinach and season with salt, pepper and a little nutmeg. Turn off the heat and combine with the sausage bits.
- Arrange half of the bread in a casserole dish.
- Whisk the eggs with the milk, Dijon and some salt and pepper.
- Scatter half of the sausage-spinach mixture over the bread, top with half the cheese, pour over half the eggs, repeat. Cover and store in the fridge.
- Bring the strata to room temperature for about 30 minutes before you bake. Preheat the oven to 350 degrees F with the rack in the center of the oven.
- Set the casserole on a baking sheet and bake uncovered 1 hour. Let stand 10 minutes and serve.

- Heat the oil in a large heavy skillet over medium heat. Add the sausage and cook for about 5 minutes, breaking it into small pieces with a wooden spoon.
