- Place sausages and water in a large skillet; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Uncover; cook 5-10 minutes longer or until meat is no longer pink; drain. Remove sausages and keep warm., In the same skillet, saute pepper and onion in oil until tender. Return sausages to pan. Stir in spaghetti sauce and basil; heat through. Serve sausages on buns with sauce and cheese.

SAUSAGE SANDWICH SQUARES

- In a large bowl, dissolve yeast in 1/2 cup warm water. Add the salt, remaining water and 2 cups flour. Beat until smooth. Add enough remaining flour to form a firm dough. , Turn onto a floured surface; knead until smooth and elastic, about 6 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 50 minutes. , Preheat oven to 400°. In a large skillet, cook sausage over medium heat until no longer pink; remove with a slotted spoon and set aside. In drippings, saute peppers and onion until tender; drain. , Press half of the dough onto the bottom and 1/2 in. up the sides of a greased 15x10x1-in. baking pan. Spread sausage evenly over crust. Top with peppers and onion. Sprinkle with mozzarella cheese. Roll out remaining dough to fit pan; place over cheese and seal edges. , In a small bowl, beat egg and water. - In a large Dutch oven, brown sausages a few at a time; discard all but 2 tablespoons drippings. - Preheat oven to 350 degrees F. Coat a 2-quart rectangular baking dish with cooking spray. In a medium bowl, whisk together the eggs, milk, salt, and pepper. Pour into prepared dish. Bake for 20 to 25 minutes or until set.
- Meanwhile, cut smoked sausage into 6 pieces. Halve each piece lengthwise, cutting to but not through the other side to keep the pieces together. Heat a 12-inch skillet over medium heat. Add sausage pieces to skillet, opening each like a book. Cook for 4 to 6 minutes or until browned, turning once. Remove and keep warm.
- In the same skillet, heat butter until melted. Add onion. Cook and stir over medium heat for 6 to 8 minutes or until just browned and tender.
