2 Italian sausage links (4 ounces each)
1/4 cup water
1 small green pepper, cut into strips
1 small onion, halved and thinly sliced
1 tablespoon olive oil
1 cup spaghetti sauce
1/4 teaspoon dried basil
2 brat buns, split and toasted
2 tablespoons shredded Italian cheese blend

Steps:

  • Place sausages and water in a large skillet; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Uncover; cook 5-10 minutes longer or until meat is no longer pink; drain. Remove sausages and keep warm., In the same skillet, saute pepper and onion in oil until tender. Return sausages to pan. Stir in spaghetti sauce and basil; heat through. Serve sausages on buns with sauce and cheese.

A Sausage Sandwich is an absolute classic! Here I'll give you some tips and tricks to making the absolute BEST homemade sausage sandwich.

4 Good Quality Pork Sausages ((see notes))
4 medium slices of Soft White Bread, (lightly toasted)
1 large White Onion, (sliced)
2 tsp Butter, (plus more to spread)
Salt & Black Pepper, (to taste)
Ketchup or Brown Sauce, (to serve)

Steps:

  • In a pan over low-medium heat melt in 2 tsp butter. Add in your sausages and fry for 15-20mins, turning frequently. A lower heat will render down the fat and make the skin nice and crispy, whilst making sure the meat cooks properly.
  • Remove from pan and place to one side (or in the oven on low heat), leaving the fat behind. Add in your onion fry for another 10-15mins on the same heat, tossing every now and then. Season with salt and black pepper (good pinch of black pepper goes beautifully with sausages). Here lower heat will draw out the sugars and help the onions to caramelize, turning the golden and sweet. For truly caramelized onions see notes.
  • Slice down the centre of sausages and fold them open. Lightly butter one side of your bread, top with onions, place on your sausages, finish with a drizzle of ketchup/brown sauce then top with another slice of lightly buttered bread. Enjoy!

3/4 pound sweet Italian sausage
3/4 pound hot Italian sausage
2 tablespoons extra virgin olive oil, 2 turns of the pan
2 large cloves garlic, crushed
1 large onion, thinly sliced
2 cubanelle peppers (light green mild Italian peppers), seeded and thinly sliced
1 red bell pepper, seeded and thinly sliced
Salt and pepper
2 or 3 jarred hot cherry peppers, banana peppers or pepperoncini, finely chopped
3 tablespoons hot pepper juice, from the jar
4 crusty, semolina submarine sandwich rolls, 8 inches, sesame seeded or plain
1 tablespoon extra-virgin olive oil
3 tablespoons butter
1 large clove garlic
1 1/2 teaspoons dried Italian seasoning, 1/2 a handful or 1/2 teaspoons each oregano, thyme, parsley

Steps:

  • Place the sausages in a large nonstick skillet. Pierce the casings with a fork. Add 1-inch water to the pan. Bring liquid to a boil. Cover sausages, reduce heat and simmer 10 minutes.
  • Heat a second skillet over medium high heat. Add oil, 2 turns of the pan. Add garlic, onion, cubanelle and red peppers. Season vegetables with salt and pepper.
  • Drain sausages and return pan to stove, raising heat back to medium high. Add a drizzle of oil to the skillet, brown and crisp the casings. Remove sausages, slice into 2 inch pieces on an angle and set pieces back into the pan to sear.
  • Split and toast the bread under broiler. Melt oil, butter together in small pan over medium heat. Add garlic and let it sizzle 1 or 2 minutes. Brush rolls with garlic butter and sprinkle with a little dried Italian seasoning blend.
  • Combine the cooked peppers and onions to the sausages. Add hot peppers and hot pepper juice to the skillet. Toss and turn the sausage, peppers and onions, picking up all the drippings from the pan. Pile the meat and peppers into the garlic sub rolls and serve.

2 herby Cumberland sausages , sliced in half lengthways
1 ciabatta roll , sliced in half
2 tbsp fresh pesto
1 roasted red pepper from a jar, sliced in half
½ x 125g ball mozzarella , sliced
handful rocket

Steps:

  • Heat grill to high. Put the sausages on a baking sheet, cut-side down, and grill for 5-6 mins or until cooked through, then set aside. Lay the ciabatta roll halves, cut-side up, on a baking tray and spread each with pesto. Top each half with a pepper and mozzarella slice, then grill for 2 mins or until golden and bubbling. Add the sausages and a handful of rocket, and put the roll back together, pressing down firmly to hold the fillings in place.

1 pound bulk Italian sausage
1 medium onion, chopped
1/2 cup chopped green pepper
1 garlic clove, minced
1 package (8 ounces) cream cheese, cubed
1/4 cup chopped fresh mushrooms
1/4 cup grated Parmesan cheese
1/4 cup water
1/4 teaspoon dried oregano
1 loaf (1 pound) unsliced Italian bread
1-1/2 cups shredded part-skim mozzarella cheese

Steps:

  • In a large skillet, cook the sausage, onion and green pepper over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Add the cream cheese, mushrooms, Parmesan cheese, water and oregano. Cook and stir until cheese is melted. , Cut bread in half horizontally; hollow out top and bottom, leaving a 3/4-in. shell (save removed bread for another use). , Place bread bottom on a baking sheet. Sprinkle with half of the mozzarella cheese; top with sausage mixture and remaining cheese. Replace bread top. Bake at 375° for 15 minutes or until cheese is melted.

These delicious grilled sausage sandwiches are my attempt to duplicate the ones I ate when I was growing up and attended Italian street festivals in the North End of Boston. They come together really quickly, and make a great summer lunch. Choose hot or mild sausages as you prefer.

4 (4 ounce) links hot Italian sausage
1 red bell pepper, halved and seeded
1 small onion, peeled and cut in half crosswise
2 teaspoons olive oil
salt and pepper to taste
1 tablespoon olive oil
4 (6 inch) sandwich rolls, split and toasted

Steps:

  • Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.
  • Pierce the sausages in a few places with a fork, and set aside. Slice off the bottoms of the onion halves so they will sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil.
  • Place the sausages, onions, and peppers on the preheated grill. Cook and turn the sausages until well browned and juices run clear. Cook vegetables until tender and peppers are slightly charred. Remove vegetables and sausages from the grill.
  • Place the peppers in a paper bag, close, and cool slightly. Remove and discard the charred skin from the peppers; slice peppers into strips. Slice the onion halves. Place salt and pepper to taste, and 1 tablespoon olive oil in a bowl. Add the peppers and onions, and toss until evenly coated. To serve, place sausages in sandwich rolls, and top with the pepper and onion mixture.

5 pounds Italian sausage links
2 (28 ounce) cans whole peeled tomatoes
1 (28 ounce) can crushed tomatoes
1 (29 ounce) can tomato sauce
¼ cup grated Parmesan cheese
1 tablespoon garlic powder
1 tablespoon Italian seasoning
1 tablespoon white sugar
1 tablespoon onion powder
4 large green bell peppers, thickly sliced
3 large onions, thickly sliced
25 (6 inch) Italian-style hoagie buns

Steps:

  • Cut the sausages apart into individual links if necessary, place the sausage links into a large skillet over medium heat, and brown them on all sides. Set the sausages aside, reserving the pan drippings.
  • Pour the whole tomatoes, crushed tomatoes, and tomato sauce into a large saucepan with a lid; stir in the grated Parmesan cheese, garlic powder, Italian seasoning, sugar, and onion powder. Bring the mixture to a boil; add the cooked sausages, pan drippings, green peppers, and onions. Hunger pains. I'm so hungry I could eat a shoe, yet I don't want a shoe. I don't want chicken. I don't want fish. I don't want a cheeseburger. I need a SAMMICH, darnitall! So I set out to build it, because you see, you don't just make a SAMMICH, you build a SAMMICH. It started earlier in the week, when I made a bunch of sweet and hot sausage. The process for the sausage takes two days for best flavor. Once done, I portioned off what we would eat for the week and freezer packed the rest. The idea for the SAUSAGE SAMMICH entered my head. A cross between an Italian loaf pizza and sausage pizzaioli, why not?

2 sweet and 2 hot italian style sausages
nonstick cooking spray
1 green bell pepper, chopped
1 red bell pepper, chopped
1 large sweet onion, French cut
4 tablespoons extra virgin olive oil
1 tablespoon dried oregano

1/2 teaspoon salt
1/4 teaspoon salt
4 ounces fresh mozzarella cheese, sliced
fresh basil leaf
15 -20 ounces zesty pasta sauce
1 loaf Italian bread

Steps:

  • Meant to keep the house cool on a hot day, this preparation was done on the grill. Place sausages on a medium hot and clean grill prepped with a bit of non-stick spray.
  • Place chopped peppers and onions in a 9 x 9 baking dish and coat with extra virgin olive oil.
  • Sprinkle dried herbs, salt and pepper over vegetables and place on grill with sausages.
  • Turn sausages and stir vegetables occasionally. After 20 minutes, slice and place sausages in with vegetables. Cook with grill closed an additional 20 minutes on low heat, checking as to not burn.
  • While meat and veg are cooking, slice Italian bread loaf in half lengthwise and use your fingertips to press down the bread inside the bottom half, forming a slight depression to cradle the meat and vegetables.
  • On the top half, place the sliced mozzarella evenly from one end to another, interlacing with basil leaves.
  • Remove meat and vegetables from grill with heat resistant gloves and set aside.
  • Use a large spoon to scoop the meat and vegetables into the bottom half of the loaf, then spoon sauce over top and bottom in dollops.
  • Place open faced on wire rack covered with heavy duty foil and place back on grill on low heat, close the grill. Cook for five minutes checking not to burn and until cheese is melted.
  • Place the top on the sandwich, move to cutting board and serve appropriate sized slices for your hungry guests, or enjoy this monster sammich all on your own, if you can!
