Breakfast Sausage Patties with Fried Eggs image

A hearty family breakfast comes together quickly when you throw some sausage and eggs into a skillet together. The eggs will cook in the fat from the patties, which flavors them, too. The recipe can be easily adjusted, depending on how many hungry mouths you have to feed.

1 frozen sausage log
2 large eggs
Unsalted butter, if needed

Steps:

  • Let frozen sausage log stand at room temperature for 20 minutes. Unwrap sausage, andslice crosswise into 1/2-inch-thick rounds using a serrated knife. Cook a few patties in a large heavy skillet, preferably cast iron, over medium-high heat until browned and cooked through, 3 to 5 minutes per side. Push patties to 1 side of skillet and cook eggs as desired, adding unsalted butter if needed.

2 to 3 lbs. of ground pork mixed with pork fat (I usually use a pork shoulder 70/30 ratio or butt ground)
1 tablespoon fennel seed
2 tablespoons paprika
2 teaspoons minced garlic
1 tablespoon olive oil
1 teaspoon or more of salt and pepper
2 tablespoons red or white wine or broth of any kind
3 tablespoons grated cheese
2 tablespoons Italian seasoned bread crumbs
parsley fresh chopped around 2 teaspoons
For sweet sausage use the above recipe and omit the cayenne pepper
For hot sausage add 1/2 teaspoon of ground cayenne pepper per pound.

Steps:

  • Mix the ground pork in a bowl with all ingredients shape into whatever you want, loaves, patties.
  • Fry on medium heat, bake or grill.
  • You can also bake at a 400-degree hot oven until browned placing them on parchment paper or a greased pan for around 30 minutes or until browned and starts to look crispy on the outside. Add potatoes, onions, peppers, and whatever else you like for a one-pan meal.
  • If making skewer, just use prepared kebab sticks and thread the meat onto them.
  • Grill until browned. If you would like them baked or fried, shape into little loaves, cook them then thread on skewers.

Plan ahead the pork mixture must be refrigerated for 24-48 hours to blend the flavors together before making the patties. I usually get about 18-20 patties out of this, but the yield will vary depending on how large you make them --- you may adjust the amount of sugar but I recommend making the first batch using the stated amount, you might prefer it sweeter but for my family 1 tablespoon is just the perfect amount --- these are very good between biscuits :)

2 teaspoons dried sage
2 teaspoons salt
1 teaspoon black pepper
1/4 teaspoon dried marjoram
1 tablespoon light brown sugar (can use less)
1/8 teaspoon dried red pepper flakes (or to taste)
1 pinch clove
2 lbs ground pork

Steps:

  • In a small bowl mix all the spices together.
  • Place the ground pork into a large bowl; add in the spices to the pork and mix using clean hands until well combined.
  • Cover and chill for 24 hours.
  • Place the pork mixture between two pieces of greased waxed paper; using a rolling pin, roll out the pork to about 1/2 inch thickness (or to desired thickness, gathering up the ends to re-cut).
  • Remove the top piece of waxed paper.
  • Using a 3-inch biscuit cutter cut into rounds.
  • Place the rounds onto a baking sheet and freeze until ready to use.

Served with a salad, you can have an easy dinner on the table in under an hour with this Baked Provolone and Sausage Frittata.

2 tablespoons olive oil
1 onion (diced)
1/2 pound mild turkey sausage (casings removed (I used hot pork sausage))
8 large eggs
1/3 cup whole milk
1 1/2 teaspoons salt
1 red bell pepper (cored, seeded and diced)
3 cups provolone cheese (shredded)
1/4 cup flat-leaf parsley (chopped)

Steps:

  • Preheat the oven to 350.
  • Heat the oil in a medium skillet and over medium-high heat. Add the onion and cook until translucent about 3 minutes. Add the sausage and cook until browned about 5 minutes.
  • While the sausage is browning, whisk together the eggs, milk and salt. Stir the red bell pepper and the 1/4 cup of parsley into the sausage mixture. Pour the egg mixture over the top. Turn the heat down to medium-low and let it cook for about 2 minutes without stirring to let the eggs set some.
  • Top with the cheese.
  • Place in the oven and bake for 20-30 minutes or until puffed and golden and set in the center.
  • Cut into wedges (4-6) - we are definitely a four wedge family!

6 ounces thick-cut bacon, cut into 3/4-inch pieces
3/4 pound pork tenderloin, cut into 3/4-inch pieces
2 tablespoons dry white wine
1 clove garlic, minced
1 tablespoon chopped fresh parsley
1 teaspoon dried sage
1/2 teaspoon red pepper flakes
3/4 teaspoon sugar
Kosher salt and freshly ground pepper
1/2 cup diced provolone cheese
1 tablespoon vegetable oil
6 to 8 large eggs

Steps:

  • Put the bacon in a medium saucepan and fill with water. Bring to a simmer over medium heat and cook 20 minutes; drain, rinse under cold water and pat dry. Combine the bacon, pork tenderloin, wine, garlic, parsley, sage, red pepper flakes, sugar, 1/4 teaspoon salt and 1/2 teaspoon pepper in a large bowl; toss to combine. Cover and refrigerate at least 1 hour and up to 4 hours. Transfer the pork mixture to a food processor and pulse until coarsely chopped. Transfer to a bowl and stir in the cheese. Form into 8 to 10 patties, about 2 inches wide and 1/2 inch thick. Put on a plate, cover and refrigerate at least 1 hour. Heat the vegetable oil in a large nonstick skillet over medium heat. Add the sausage patties and cook until browned on both sides, 8 to 10 minutes. Transfer to a plate and tent with foil to keep warm. Crack the eggs into the hot skillet, season with salt and pepper and fry until just set, 2 to 3 minutes. Serve with the sausage patties.

1 lb hot breakfast sausage
2 tablespoons butter
2 medium onions
2 medium russet potatoes, boiled with skins on
4 garlic cloves
6 large eggs
1/2 cup half-and-half
2 tablespoons sugar
1/2 cup shredded cheese (any preferred type)
salt and pepper

Steps:

  • Preheat oven to 400°.
  • In a 10-inch cast iron skillet brown sausage until crumbly and medium brown in color.
  • Stir as required.
  • While sausage is browning peel potatoes and cut in to 1/2-inch cubes, chop onion and mince garlic.
  • After browning, remove sausage from pan with a slotted spoon, add potatoes to pan and carefully brown them in the sausage fat.
  • Remove potatoes from pan and add to reserved sausage.
  • Add butter to pan (if required), once butter is melted add onion and cook until slightly brown and soft, add garlic and cook till aromatic.
  • While onions are browning, light whisk eggs, half-and-half and sugar till slightly foamy.
  • Return potatoes and sausage to pan, mix well with onion and garlic.
  • Season with salt and pepper.
  • Pour egg mixture over sausage/potato/onion, sprinkle on 1/2 the cheese and mix, sprinkle remaining cheese on top.
  • Place pan in preheated oven; cook for 10 minutes and then lower heat to 350° and cook for an additional 10-20 minutes (depending on how you like your eggs). Keep an eye on the pan--if the cheese gets too brown, then cover with buttered aluminum foil.
  • Serve with hot sauce and toast.
  • •Variations:.
  • Add mushrooms, green pepper, red pepper and sauté with the onions.
  • Season the egg mix with hot sauce, replace half-and-half with yogurt.
  • Cheese selections, I prefer a small amount of provolone and Parmesan mixed in the eggs with none on top--the wife likes cheddar on top and mixed inches.

Your Own Blended Pork Sausage and Fried Eggs image

1 pound ground pork (lean but not too lean)
Kosher salt
1 teaspoon chile flakes
1 teaspoon fennel seeds, toasted
1/2 teaspoon cayenne pepper
1/2 cup breadcrumbs, toasted
1/2 cup finely grated Parmesan
1 tablespoon canola oil
2 to 4 tablespoons unsalted butter
4 to 6 eggs

Steps:

  • Put the meat in a large bowl and mix together with your hands. Add a good pinch of kosher salt, the chile flakes, fennel seeds, cayenne, breadcrumbs, and Parmesan. Mix to blend and then form the meat into small 2-inch patties.
  • Heat the canola oil in a large skillet over high heat. When the oil begins to smoke lightly, shut off the heat to avoid splattering, and add the meat patties in a single layer in the pan. Take care they are spread somewhat apart so they have a chance to brown instead of steam. Put the heat back on high and brown them, turning them so they brown all around, 3 to 5 minutes on each side. Touch them to make sure they are still tender and somewhat yielding in the center. Use a slotted spoon or spatula to remove them from the pan. Transfer the patties to a platter or individual plates.
  • Use a kitchen towel to wipe clean the skillet, put the heat on medium, and add the butter. When it begins to brown, crack 2 eggs, a distance apart, into the butter. Lower the heat, season the eggs lightly with salt, and cook 2 to 3 minutes or longer, if desired. Repeat with additional eggs. Put the eggs on the patties and serve immediately.
