I don't recall where I first found this recipe, but it's been a favorite in our household for over 40 years. Our nine children now make it in their homes, too. I like to serve this dish as a main course with cabbage salad, but it works well on a brunch menu,too.

1 can (8 ounces) pineapple chunks
1 tablespoon vegetable oil
12 ounces smoked kielbasa or other link sausage, cut into 1/2-inch slices
1 large onion, chopped
1 medium green pepper, chopped
1 cup sliced celery
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (10-1/2 ounces) condensed beef broth, undiluted
1 garlic clove, minced
1 tablespoon brown sugar
1 teaspoon pepper
3 tablespoons cornstarch
Hot cooked rice

Steps:

  • Drain pineapple, reserving juice; set pineapple and juice aside. , Heat oil in a skillet; cook the sausage, onion, green pepper and celery until vegetables are crisp-tender. Add the tomatoes, beef broth, garlic, brown sugar and pepper; cover and simmer for 5 minutes. , In a small bowl, combine the cornstarch and reserved pineapple juice until smooth; stir into skillet. Bring to a boil. Cook and stir for 1-2 minutes or until thickened. Stir in reserved pineapple. Serve with rice.

This recipe was submitted by a Country Grocer shopper and it's a perfect way to feature the amazing in-store made sausages. Thank you dear customer for sharing this family favorite.

Number Of Ingredients 11

1 lb. or 500g beef, pork, chicken or turkey "in-store made" sausages
Oil spray
1 medium green pepper (thinly sliced)
2 celery stalks (thinly sliced)
½ small onion (thinly sliced)
1 cup pineapple (canned, tidbits or chunks + save ½ cup juices)
¼ cup apple cider or rice wine vinegar
1 tablespoon soy sauce
1 tablespoon cornstarch
2 tablespoons brown sugar
2 cups cooked brown rice

Steps:

  • Pre-heat oven to 375° F.
  • Place sausages in a baking dish and roast until they have an internal temperature of 180°F, approximately 15-20 minutes.
  • In a small mixing bowl, combine soy sauce, vinegar, pineapple juice, cornstarch and brown sugar. Mix until completely combined. A fork or small whisk is helpful.
  • While sausages are cooking, preheat a medium frying pan over medium heat. Lightly spray the frying pan with oil and add peppers, celery and onion. Sauté vegetables until lightly brown. Add pineapple to vegetable mixture.
  • Now give the vinegar mixture another stir and slowly add to vegetables in the frying pan and stir until sauce thickens. Remove from heat.
  • Serve vegetable mixture over rice with sausage. Drizzle remaining sauce over vegetables and sausage.

2 lbs sage sausage
1/2 teaspoon dried sage
1/4 cup milk or 1/4 cup water
1/3 cup breadcrumbs
1 egg
1 teaspoon salt
pineapple sauce
1 cup pineapple juice (from can)
1/2 cup brown sugar
1 1/2 tablespoons cornstarch
1 1/2 tablespoons vinegar
1 teaspoon chicken bouillon
2 cups chunk pineapple, drained

Steps:

  • Mix and Chill the Meatball mixture. Make Meatballs and fry in pan until brown. Place in a casserole dish.
  • Stir Sauce mixture together and pour over meatballs. Cook 30-40 min @ 350 degrees until sauce is thick and heated through.

3 teaspoons lemon juice
3 teaspoons mustard
2 (20 ounce) cans pineapple chunks
1 cup currant jelly

Steps:

  • Slice sausage into bite-size chunks.
  • Drain pineapple chunks.
  • Mix all ingredients in a saucepan.
  • Simmer for 30 minutes.
  • Serve hot.
  • Keeps well in crock pot.
