ITALIAN SAUSAGE CRUSTLESS QUICHE

In the mood for a savory egg dish? Spicy Italian sausage and smoky Provolone make a delicious quiche perfect for breakfast or lunch with a big green salad.

4 eggs, lightly beaten
1 1/2 cups milk (or cream)
1 cup Italian sausage, cooked and crumbled
1 red pepper, roasted, peeled, and chopped
1 1/2 cups provolone cheese, grated
kosher salt
fresh cracked black pepper
1 teaspoon oregano or 1 teaspoon mixed italian seasoning
cooking spray

Steps:

  • Preheat the oven to 375 degrees.
  • Mix the eggs and milk together and whisk well.
  • Sesaon the egg mixture with salt, pepper, and herbs.
  • Spray the oil into a deep pie dish.
  • Layer the sausage and cheese and red pepper into the pie dish and pour the egg mixture on top.
  • Pop into the oven and bake until middle is firm, about 40-45 minutes.
  • Serve with hot Italian bread.

6 eggs
1 cup heavy cream
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 small white onion
1/2 pound breakfast sausage
1/2 teaspoon black pepper
1/2 teaspoon salt
1 tablespoon fresh basil, chopped (plus additional for garnish if desired)

Steps:

  • Saute sausage, onione and peppers until sausage is cooked and peppers soft. Whisk eggs and cream and spices together. Fold in basil, sausage and peppers. Lightly grease 8-inch Pyrex or glass casserole pan. Pour egg mixture into pan and bake at 350 degrees F 20 minutes or until set. Cut into wedges and serve with additional basil if desired.

13 ounces of hillshire farm beef smoked sausage
8 eggs, lightly beaten
1 1/2 cups heavy whipping cream
1 1/2 teaspoons dry mustard
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 1/2 cups shredded cheddar cheese, divided
1/2 cup roasted red pepper (chopped)

Steps:

  • Preheat oven to 350°F Cut sausage into 1/2″ cubes; set aside. Place eggs, cream, dry mustard, salt, and black pepper into a large bowl, whisk until smooth.
  • Stir in sausage, 1 cup of cheese and roasted red pepper. Pour egg mixture into a greased 13×9 - inch baking dish.
  • Bake 40-45 minute or until eggs are set. Sprinkle with remaining 1/2 cup of cheese. Let stand 5 minutes before serving.

1/2 lb sausage, cooked and cooled, I use Jimmy Dean
6 eggs
1/2 pint whipping cream
1 small onion, chopped (optional)
1 bell pepper, chopped (optional)

Steps:

  • Spray a glass 9-inch square baking dish with a nonstick cooking spray.
  • Layer 1/2 inch of shredded mozzarella cheese.
  • Add cooked sausage that has been browned and cooled.
  • The chopped onions and red and green peppers may be added at this time if you wish.
  • Beat eggs and whipping cream.
  • Pour mixture over all.
  • Bake at 325ºF for one hour.
  • Garnish with parsley and candied apple rings on the side, if desired.
  • Serve immediately.
