HOMEMADE BREAKFAST SAUSAGE PATTIES

Steps:
- In a large bowl, mix everything together. The best way is to use your hands and really mix it all together. You can also use your stand mixer with the paddle attachment.
- There are a few different ways you can do this. I like to use a large cookie scoop / ice cream scoop. I lightly pack the meat into the scoop, release the scoop, then flatten it with my palm. Alternatively, you can just divide the meat into 12 rough balls, and shape each ball into a sausage patty. Lastly, you can also roll out the meat between parchment paper, then cut the sausages with a round cookie cutter / lip of a cup.
- Make 12 equal sized sausage patties. I make them about 1-inch thick if I am going to cook them straight away, but you can make according to your preference.
- If you are going to freeze half the batch, make the ones you are going to freeze no thicker than 1/2-inch, if you plan on cooking from frozen. Otherwise, you will need to defrost the sausage patties before cooking.
- Heat some oil in a non-stick skillet over medium-high heat. Add the patties (you might need to do it in batches) and cook the first side for about 3-4 minutes, or until browned. Flip then cook the other side until browned and the sausage is cooked through. The most reliable way to to check if a sausage patty is cooked through is to use an instant read thermometer. The internal temperature of each sausage patty should be 160°F / 71°C.
- If you are cooking from frozen, follow the same instructions, but you will need to slightly increase the cooking time. If the sausages are browned but not cooked through, turn the heat down and finish cooking.

Steps:
- Mix together the mayonnaise, Sriracha and maple syrup in a small bowl. Spread on the inside of both bun halves. Stack the lettuce, tomato and onion on the bottom bun.
- Pat and squeeze the sausage together into a ball. Put it on a piece of plastic wrap, and flatten it out into a thin patty 4 to 5 inches wide.
- Heat the oil in a small nonstick skillet over medium-high heat. Remove the patty from the plastic wrap, and cook it until browned on both sides and cooked through, about 3 minutes per side. Lay the Cheddar on the patty, cover the skillet and cook until the Cheddar melts, about 30 seconds. Remove, and set the patty on the bottom bun.
- Crack the egg into the skillet over medium-high heat, sprinkle with some salt and pepper and cook until the egg whites are set and crispy on the bottom and edges and the yolk is still runny, 2 to 3 minutes. Set the egg on top of the sausage patty, and top with the other bun half. Eat right away.

Steps:
- Mix together the pork, garlic, sage, thyme, fennel, nutmeg, salt, and pepper in a medium bowl. Add the egg white and combine thoroughly. Cover and chill for at least 15 minutes.
- To easily form the sausage patties, rinse your hands in cold water. Divide the mixture into eighths and shape each portion into a 2 1/2-inch disk. Patties can be made to this point and refrigerated or frozen until ready to use.
- Heat a skillet over high heat, and then swirl in the oil. Fry the sausages on both sides until completely cooked through and golden brown, about 4 minutes per side. Drain and serve immediately with pancakes, waffles or eggs. Sausage patties can be fully cooled, wrapped, and frozen for microwave reheating.

Steps:
- Take sausage meat out of their casings and combine as one. Form 4 patties out of the meat.
- At this point you can decide whether to fry (no fat needed) in a pan, bbq or broil them. I usually bbq or broil. Cook until done.
- In the meantime sauté the sliced onions in the butter with sugar until soft and browned. Season with salt and pepper to taste.
- Fry the eggs individually as you like them, breaking the yolks as you do. Flip and cook on other side.
- Toast the buns lightly. Place a patty on the bun, top with egg and onions.
- Add any condiments you like, however only mustard is required. I use the honey type.

- To prepare the avocado "buns" slice the avocado in half long ways, remove the large seed inside and carefully peel away the outer skin. If you want your avocado "bun" to be able to stand upright on its own, pick out which half you want for the bottom and slice a small sliver straight off the rounded part. If you like, sprinkle the top of the "bun" with toasted sesame seeds.
- Stove-top Method: Place the thawed breakfast sausage patties in a skillet over medium-high heat for 7 to 12 minutes. Turn frequently to brown evenly. Oven Method: Place thawed patties on a shallow baking pan. Bake at 375 F for 8 to 13 minutes. Turn patties over after 5 minutes.*The internal temperature of the sausage patties should reach 165 F when fully cooked.
- To assemble place your egg (scrambled or over-easy), sliced tomato and sausage patty on the bottom layer and place with your avocado bun top. Eat with your hands or with a fork and knife.

- Combine the pork seasonings, buttermilk, and syrup in a large bowl. Mix it thoroughly by hand or with a mixer until the mixture self adheres and becomes tacky and somewhat fibrous. Make sure the pork stays cold—below 45°F (7°C)—to create a better fat emulsion.
- With your griddle or skillet on the grill (see note below if it won’t fit on the grill while the sausage cooks), cook the bacon. Cook it to your preference—I like mine just crispy, still with a little chew. Remove the bacon to a plate and pour off some of the excess bacon grease.

- Preheat the broiler to high. In a skillet, add in the olive oil and butter. Melt and then stir in the garlic and Italian seasoning. Remove from heat and brush this mixture generously over the hoagie buns - inside and out. Place the hoagie buns on a sheet pan and broil for 1-2 minutes on high until very lightly golden brown (you'll add them back later).
- Begin the sausages cooking. Remove the casing and follow package directions to grill the sausages. If you don't have the sausage grill, remove casings, slice the sausages into 1-inch thick pieces and add to a skillet (same one you used earlier for the butter) over medium heat. Cook for about 2 minutes stirring occasionally and then add in the onion and garlic. Cook for another minute.
- Add in the bell peppers, marinara sauce, Italian seasoning, and pepper. Bring the mixture to a boil and then simmer for 5-6 minutes or until the peppers are crisp tender.

- Toast the English muffin until it's golden brown. Butter the bottom bun of the English muffin and set aside. You can hot-hold the English muffin in a 200 degree Fahrenheit oven while you cook the remaining ingredients, if you like.
- If you're making your own patties, form the bulk sausage into a round ball and flatten it between your palms. Form it into a patty that's roughly 3 inches in diameter.
- Cook the sausage patty in a skillet over medium heat for 5 to 6 minutes a side, until it's browned through and reaches an internal temperature of 165 degrees. Alternatively, you can cook multiple patties at once in a 400 degree oven. Bake the patties in a single layer on a baking sheet for 8 to 10 minutes a side, flipping once, until they reach the proper internal temperature. Set aside.
- Meanwhile, grease the lid of a canning jar with the melted butter or oil. Place the lid in a small saute pan and heat it over medium-high heat.
