MY DAD'S SAUSAGE AND NOODLES



My Dad's Sausage and Noodles image

When my dad threw this dish together, he was living from paycheck to paycheck, and we were a day or two away from the next paycheck. He looked at what he had on hand, and this is the result. *The better you drain your sausage, the drier the dish will be. I prepare it very dry.

Number Of Ingredients 5

1 lb chub of country breakfast sausage (hot or mild, depending on your taste)
12 ounces uncooked wide egg noodles, cooked according to package instructions
1 medium onion, medium dice
1 -3 teaspoon minced garlic (depending on your taste)
parmesan cheese

Steps:

  • Brown sausage in a skillet, just like you would ground beef. Add onion and garlic to sausage as it cooks. When cooked, drain off fat. Set aside.
  • At the same time, cook egg noodles according to package instructions.
  • After draining noodles, return them to the pot and add the sausage, onion, garlic combination. Stir and mix well.
  • Serve, topping with parmesan cheese and seasoning with salt and pepper to taste (I like red pepper flakes).

1 pound bulk pork sausage
1 medium head cabbage (about 1-1/2 pounds), thinly sliced
1 large onion, thinly sliced
1 large carrot, shredded
2 teaspoons chicken bouillon granules
1/4 cup boiling water
2 cups sour cream
3/4 teaspoon salt
1/2 teaspoon pepper
8 ounces noodles, cooked and drained
Fresh parsley, optional

Steps:

  • In a large skillet, cook the sausage over medium heat until no longer pink; drain. Add cabbage, onion, and carrot; mix well. Dissolve the bouillon in water; pour over vegetables. Cover and cook over medium-high heat until the vegetables are tender, about 10-15 minutes. Reduce heat; stir in sour cream, salt and pepper. Heat through. Transfer to a serving bowl; add hot noodles and toss. Garnish with parsley if desired.

1 pound trimmed whole Brussels sprouts
3 parsnips, cut into 1/4-inch slices
3 sweet potatoes, cut into wedges
2 red onions, cut into quarters
3 tablespoons olive oil
1/2 teaspoon dried sage
Sprinkle of kosher salt
Sprinkle of freshly ground black pepper
12 Italian sausages

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the Brussels sprouts, parsnips, sweet potatoes and onions to a baking sheet. Add the olive oil, sage, salt and pepper and toss. Put the sausages in and around the vegetables.
  • Bake until the sausages are cooked through and the vegetables are tender, 40 to 45 minutes. Serve.

1 cup thinly sliced fresh carrots
3 tablespoons butter
1/2 pound smoked sausage, thinly sliced
3/4 cup green thinly sliced onions
4 cups coleslaw mix
2-1/4 cups water
1 package (4.9 ounces) quick-cooking noodles and sour cream and chive sauce mix

Steps:

  • In a large skillet, cook carrots in butter for 2 minutes. Add sausage and onions; cook for 2 minutes. Stir in coleslaw mix; cook 1-2 minutes longer. Add water; bring to a boil. , Stir in noodles and sauce mix. Return to a boil; cook and stir for 7-9 minutes or until noodles are tender, stirring occasionally. Try this recipe if you're looking for something quick and easy with great flavor. The pasta cooks right in the skillet so there's no need for extra pots. Don't make this without the sun-dried tomatoes because it will not have as much flavor. My husband recently told me that this is his favorite of the pasta dishes I cook. Recipe is from America's Test Kitchen.

1 tablespoon olive oil
1 onion, minced
salt
1 lb sweet Italian turkey sausage or 1 lb hot Italian turkey sausage, casings removed
3 garlic cloves, minced
1/2 cup sun-dried tomato packed in oil, rinsed and chopped fine
8 ounces penne (about 2 1/2 cups, can also use ziti)
2 cups low sodium chicken broth
1 cup milk
1 (5 ounce) bag Baby Spinach
1 ounce parmesan cheese, grated or 1/2 cup parmesan cheese
pepper, to taste

Steps:

  • Heat olive oil in a 12-inch nonstick skillet over medium heat until shimmering. (Be sure to use at least a 12-inch size skillet to hold all ingredients.) Add the onion and 1/2 teaspoon salt and cook until softened, about 5 minutes.
  • Stir in the sausage and cook, breaking it up with a wooden spoon, until no longer pink, about 4 minutes.
  • Stir in the garlic and cook until fragrant, about 15 seconds. Sprinkle the sun-dried tomatoes and penne evenly over the sausage. Pour the broth and milk over the pasta. Cover and bring to a simmer. Reduce heat to medium-low and continue to simmer, stirring occasionally, until the pasta is tender, about 10 minutes.
  • Stir in the spinach a handful at a time and cook until wilted, about 2 minutes. (It may seem like a lot of spinach, but it will wilt considerably.) Stir in the Parmesan and season with salt and pepper to taste.
  • Note: You can use Italian pork sausage, but you may have to spoon some of the fat off before adding the pasta.

1 garlic clove , crushed
1 tbsp grated ginger
1 red chilli , chopped
1 tbsp sesame oil
160g green beans
200g straight-to-wok noodles
soy sauce
fresh coriander leaves
sesame seeds

Steps:

  • Squeeze the sausages out of their skins. Mix the sausagemeat with the garlic, ginger and red chilli, then fry in the sesame oil until browned. Add the green beans, then fry for 1 min more.
  • Tip in the straight-to-wok noodles and a splash of soy sauce, and toss together. Add a splash of water and put the lid on to allow the beans to steam for a couple of mins. Sprinkle with fresh coriander leaves and sesame seeds to serve.
