SAUSAGE BREAKFAST MUFFINS (OAMC)



Sausage Breakfast Muffins (OAMC) image

This is a recipe I found online and adapted to suit my family's taste. You can use either Chorizo or regular bulk breakfast sausage, depending on your tastes. They're both good. If you like spicy foods, add a 4 oz can of chopped and drain green chilies.

Number Of Ingredients 6

2 lbs chorizo sausage or 2 lbs bulk breakfast sausage
4 cups Bisquick
2 cups cornmeal
6 eggs
3 1/2 cups milk
3 cups shredded cheese

Steps:

  • Line muffin tins with paper liners, and set aside.
  • Fry, crumble and drain sausage.
  • Preheat oven to 375 degrees.
  • Mix together bisquick, cornmeal, eggs, and milk.
  • Add drained sausage, and cheese, and stir well.
  • Ladle the filling into the prepared muffin tins, filling almost to top.
  • Bake for 11-15 minutes.
  • Allow to cool completely.
  • Store in freezer in a large airtight container.
  • Or place each in a sandwich bag, and then place a dozen in a large ziploc bag.
  • Microwave on high for approx 90 seconds.

Handy biscuit mix and cheese soup hurry along these hearty muffins from Melissa Vannoy of Childress, Texas. The golden muffins are great at breakfast, brunch or a soup lunch.

Number Of Ingredients 5

1 pound bulk pork sausage
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1 cup shredded cheddar cheese
2/3 cup water
3 cups biscuit/baking mix

Steps:

  • In a large skillet over medium heat, cook sausage until no longer pink; drain. In a large bowl, combine the soup, cheese and water. Stir in biscuit mix until blended. Add sausage. Fill greased muffin cups three-fourths full. , Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

1 pound bulk pork sausage
4 celery ribs, chopped
2 medium onions, chopped
1/4 cup butter, cubed
1 package (14 ounces) crushed corn bread stuffing
2 medium apples, peeled and chopped
1 package (5 ounces) dried cranberries
1 cup chopped pecans
1 teaspoon salt
1 teaspoon pepper
2 to 3 cups reduced-sodium chicken broth
2 large eggs
2 teaspoons baking powder

Steps:

  • Preheat oven to 375°. In a large skillet, cook sausage over medium heat until no longer pink; drain. Transfer to a large bowl; set aside. , In same skillet, saute celery and onions in butter until tender. Transfer to bowl; add stuffing, apples, cranberries, pecans, salt and pepper. Stir in enough broth to reach desired moistness. Whisk eggs and baking powder; add to stuffing mixture., Spoon into 18 greased muffin cups. Bake 20-25 minutes or until lightly browned. Cool 10 minutes. Run a knife around edges of muffin cups to loosen. Serve immediately. Freeze option: Freeze cooled stuffing muffins in resealable plastic bags. To use, partially thaw in refrigerator overnight. Place muffins on greased baking sheets, cover with foil and reheat in a preheated 375° oven for 6-10 minutes or until heated through.

12 eggs, beaten
½ (4 ounce) can chopped green chile peppers, drained

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups.
  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
  • In a large bowl, combine eggs, chiles, onion, garlic powder, salt pepper and sausage; mix well. Spoon 1/4 cup of sausage mixture into each prepared muffin cup.
  • Bake in preheated oven for 15 to 20 minutes, until egg has set and a toothpick inserted into each 'muffin' comes out clean.

1/2 cup milk

3 cups biscuit mix

Steps:

  • In a skillet over medium heat, cook sausage until no longer pink; drain.
  • In a bowl, combine soup, milk, sage, and sausage.
  • Stir in the biscuit mix just until moistened.
  • Fill greased miniature or regular muffin cups 2/3 full.
  • Bake at 400 degrees for 15 to 20 minutes or until muffins test done.

1/3 pound bulk Italian sausage
3 large eggs
1/8 teaspoon seasoned salt
1/8 teaspoon pepper
1 package (8-1/2 ounces) corn bread/muffin mix
3/4 cup shredded cheddar cheese, divided

Steps:

  • Preheat oven to 400°. Line 12 muffin cups with paper liners. In a skillet, cook sausage over medium heat 4-5 minutes or until no longer pink, breaking into crumbles. Remove to paper towels to drain., In a small bowl, whisk eggs, seasoned salt and pepper. Pour into same pan; cook and stir over medium heat until eggs are thickened and no liquid egg remains. Remove from heat., In a large bowl, prepare muffin mix according to package directions. Fold in sausage, scrambled eggs and 1/2 cup cheese. Fill prepared cups two-thirds full., Bake 10 minutes. Sprinkle with remaining cheese; bake 5 minutes longer or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pan. Serve warm.
