CHEESY SAUSAGE EGG BREAKFAST TACOS



Cheesy Sausage Egg Breakfast Tacos image

2 12 oz sausage rolls, (Jimmy Dean™ hot)
12 eggs, (whisked)
1/2 cup onions, (chopped)
4 potatoes, (peeled, diced small)
1 tsp garlic salt
1 tsp pepper
1 cup Jack cheese, (grated)
1 cup Pepper Jack cheese, (grated)
12-18 corn tortillas
Vegetable oil
Optional: sour cream, diced avocados, chopped tomatoes

Steps:

  • In a large frying pan, cook sausage until there is no pink and cooked thoroughly. Drain grease and add sausage to a medium oven safe bowl. Place in 170° oven to keep warm.
  • In another frying pan, add about 1/4" of oil in bottom of pan. Heat over medium flame and once oil is hot, gently place potatoes and onions into pan. Sprinkle with garlic salt and pepper. Cook until potatoes are done and golden brown.
  • Fry up the corn tortillas and place on a plate lined with paper towels and place in the oven until ready to fill.
  • In the frying pan the sausage was cooked in, add eggs and scramble until done.
  • To assemble the breakfast tacos, add a spoonful of potatoes in the bottom of the tortilla, followed by sausage, Jack cheese, scrambled eggs, Pepper Jack cheese then top with sour cream, avocados and tomatoes.
  • Enjoy!

Number Of Ingredients 12

1 tablespoon canola oil
12 ounces breakfast sausage, removed from casing
3 tablespoons half-and-half or milk
6 large eggs
Kosher salt and freshly ground black pepper
1 tablespoon butter
8 thin pancakes, 5 to 6 inches in diameter (see Cook's Note)
1 cup shredded pepper jack cheese
1 avocado, thinly sliced
2 Roma tomatoes, cut into small dice
3 scallions, white and light green parts, sliced
Hot sauce, if desired

Steps:

  • Heat the oil in a large nonstick skillet over medium heat. Add the sausage and use a wooden spoon to break it up into crumbles. Cook until browned, about 8 minutes. Remove to a plate and cover with foil to keep warm.
  • In a large bowl, whisk together the half-and-half and eggs and season with a generous pinch of salt and pepper. Add the butter to the same skillet the sausage was cooked in and heat over medium-low heat. Add the egg mixture and cook, stirring constantly, until the eggs are scrambled and set, 5 to 6 minutes.
  • To assemble the pacos, divide the egg mixture among the pancakes, top with the crumbled breakfast sausage and sprinkle each with 1 to 2 tablespoons of the cheese. Top with sliced avocado, diced tomato and some scallions and drizzle with hot sauce if desired.

4 eggs
6 (6 in.) flour tortillas
1/2 lb breakfast sausage.
1/4 c grated mexican blend cheese
picante sauce (optional)

Steps:

  • 1. Brown the sausage, crumbling it as it cooks. Drain off the grease.
  • 2. Beat the eggs well. Pour into the skillet with the sausage.
  • 3. Cook stirring often until the eggs are done.
  • 4. Divide the sausage mixture evenly between the 6 torlillas, placing it in the center of each.
  • 5. Sprinlke each with cheese. Add picante sauce if desired.
  • 6. Roll each taco. Serve warm.

BRUNCH EGG AND SAUSAGE SOFT TACOS



Brunch Egg and Sausage Soft Tacos image

Don't wait for a weekend brunch to have these, they make a wonderful light dinner also! Italian sausage or the small pork breakfast sausages can be used for this recipe, just remember to remove the casings before cooking them meat. Keep your cream cheese cold so that it can be cut into small cubes. The exact amounts don't really matter for this recipe, you can adjust to taste. This is REALLY GOOD!!!!

10 large eggs
1 small jalapeno pepper (seeded and finely chopped, or to taste)
2 green onions, finely chopped
1/4 cup whipping cream (or use 1/4 cup 18% table cream)
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper (or to taste)
2 -3 tablespoons butter
4 ounces cream cheese (cut into small cubes)
6 (8 inch) flour tortillas
3 cups shredded old cheddar cheese (can use more or less)
1 lb pork sausage (casings removed, can use more or less)
2 green onions, chopped
sour cream (any amount desired)
prepared salsa (any amount desired)

Steps:

  • Cook the sausage meat with green onions in a skillet until browned; drain fat and transfer to a bowl; set aside.
  • In a bowl mix/whisk together the eggs with jalapeno pepper, whipping cream, salt and pepper.
  • Melt the butter in the same skillet over medium heat; add in the egg mixture; cook without stirring until the eggs begin to set on the bottom.
  • When the eggs start to set sprinkle the cream cheese cubes over the egg mixture.
  • Place a spatula across the bottom of the skillet to lift the eggs so that the uncooked will flow underneath; cook until eggs are set but not overcooked.
  • Divide and sprinkle about HALF of the shredded cheddar cheese onto each tortilla.
  • Divide and top with the egg mixture, then cooked sausage meat.
  • Then sprinkle with the remaining half of the grated cheddar cheese.
  • Fold tortillas over the filling.
  • If desired you can place the tortillas on a baking sheet, cover loosley with foil, then warm slightly in oven.
  • Serve with sour cream and salsa.
  • Delicious!
