3/4 cup ranch salad dressing
1/3 cup crumbled blue cheese
1/4 cup watercress, chopped
1 pound bulk pork sausage
2 tablespoons minced fresh chives
6 large iceberg lettuce leaves, edges trimmed
1 medium ripe avocado, peeled and diced
4 hard-boiled large eggs, chopped
1 medium tomato, chopped

Steps:

  • Mix dressing, blue cheese and watercress. In a large skillet, cook and crumble sausage over medium heat until no longer pink, 5-7 minutes; drain. Stir in chives., To serve, spoon sausage into lettuce leaves. Top with avocado, eggs and tomato. Drizzle with dressing mixture.

1 cup chopped deli rotisserie chicken (from 2-lb chicken)
1 1/2 cups torn romaine lettuce
1/4 cup blue cheese dressing
1 small tomato, chopped (1/2 cup)
2 tablespoons cooked real bacon bits (from 3-oz jar)
1 hard-cooked egg, chopped
2 flour tortillas (10 inch)
1/2 avocado, peeled, sliced

Steps:

  • In medium bowl, toss chicken, lettuce and dressing to coat. Stir in tomato, bacon and egg.
  • Place tortillas on large microwavable plate; cover with microwavable plastic wrap. Microwave on High 15 to 30 seconds to soften.
  • Spoon chicken mixture down center of each tortilla to within 1 inch of edges. Top with avocado slices. Fold opposite sides of tortilla up toward center about 1 inch over filling (sides will not meet in center); roll up tortilla, beginning at 1 open end. Cut diagonally in half. Secure with toothpick, if necessary. Serve immediately.

2 cups chopped cooked rotisserie chicken
4 slices bacon (diced)
2 large hard boiled eggs (diced)
1/2 cup California walnuts (roughly chopped)
1/2 cup cherry tomatoes (sliced)
1/2 large avocado (peeled, pitted, and diced )
4 green onions (sliced (just the white and light green part))
1/2 cup crumbled blue cheese
Salt and pepper (to taste)
Yogurt ranch dressing (for serving)
Head of lettuce (Boston, Bibb, Butter, Living, or Iceberg lettuce to make the cups)

Steps:

  • Place chicken, bacon, hard boiled eggs, California walnuts, cherry tomatoes, avocado, green onions, and blue cheese into a large bowl.
  • Toss to combine.
  • Season with salt and pepper to taste.
  • Tear a lettuce leaf off the head of lettuce (of your choice) and scoop the filling into a leaf.
  • Repeat with remaining filling/leaves.
  • Drizzle with yogurt ranch dressing, to taste. If desired, you could toss the filling with yogurt ranch dressing before stuffing into the cups instead of drizzling.
  • Eat and enjoy!
  • Store leftover filling in an airtight container in the fridge.

1 TBSP olive oil
1 pound chicken breast
1/2 tsp salt
1/2 tsp garlic powder
1/4 tsp paprika
6 whole grain wraps
1 1/2 cups blue cheese dressing
1 head romaine lettuce (washed & well-dried)
2 medium tomatoes (cored seeded & sliced)
6 slices center-cut bacon (cooked)
2 avocados (peeled, seeded & thinly sliced)
salt & pepper to taste
6 pieces of waxed paper
12 toothpicks

Steps:

  • Heat a large skillet over medium-high heat and add oil. Season chicken with salt, garlic powder, and paprika. Add chicken to skillet and cook for 5-8 minutes per side, until chicken is done. Let cool and slice.
  • Place the wrap on a clean surface. Spread 4 tablespoons blue cheese dressing over wrap. Place the lettuce on the upper 1/3 of the wrap. Top with a few slices of tomatoes, about 1/2 cup cooked chicken, 1 piece of bacon, and a few slices of avocado. Season with salt and pepper (about a pinch of each per wrap).
  • Roll the wrap and slice in half. Repeat with remaining wraps. Enjoy!

1 cup red cabbage (chopped)
1/2 cup yellow onion (diced )
1 cup matchstick carrots
1 14 oz pkg plant-based sausage
1/4 cup sliced scallions
salt & pepper to taste
sriracha or soy sauce (optional)

Steps:

  • In a medium-sized skillet, over medium heat, brown the sausage and onion for three minutes.
  • Add the carrots and cabbage and continue cooking for seven more minutes, or until the cabbage and carrots are tender.
  • Salt and pepper the sausage mixture, to taste, before spooning into lettuce leaves to serve.
  • Top with sliced scallions and serve with Sriracha, or soy sauce for dipping.

2 tbsp teriyaki sauce or coconut aminos/liquid aminos
1/4 tsp fish sauce
1 tbsp light brown sugar or coconut sugar (omit if keto)
1 tsp lime juice
2 tbsp olive oil
2-1/4 cup cremini or white button mushrooms (finely chopped)
1/4 pound mild Italian ground sausage
1 clove garlic (minced)
1 1" slice of ginger (peeled, then minced)
1 cup red bell pepper (diced)
3/4 cup cucumber (chopped)
1 small carrot (skin peeled off, and then your choice of julienned, peeled, or grated)
8-10 lettuce leaves (use either green or red leaf lettuce, butter lettuce, or romaine lettuce )

Steps:

  • In a medium bowl, whisk together Teriyaki Sauce ingredients (rice wine vinegar through lime juice) until well blended. Set aside.In a large skillet, heat olive oil over medium-high heat.Add mushrooms and sausage and sauté for about 3-4 minutes until you no longer see any pink from the sausage, breaking up the sausage into little pieces as you stir. Add red peppers, garlic, and ginger, and sauté for another 2-3 minutes until the garlic and ginger have softened. Slowly pour in the teriyaki sauce mixture over the filling and sauté for another 2-3 minutes, until most of the liquid has been absorbed into the filling. Assemble lettuce leaves on a plate and spoon a few tablespoons of filling into each one or allow each person to assemble their own. Top with chopped cucumber and carrots. Eat up!
