3 Italian turkey sausage links (4 ounces each), casings removed
1 medium onion, chopped
2 garlic cloves, minced
1 can (15 ounces) cannellini beans, rinsed and drained
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 cup water
1/4 cup white wine or additional reduced-sodium chicken broth
1/4 teaspoon pepper
1 bunch escarole or spinach, chopped
4 teaspoons shredded Parmesan cheese

Steps:

  • Cook the sausage and onion in a large saucepan over medium heat until meat is no longer pink; drain. Add garlic; cook 1 minute longer., Stir in the beans, broth, water, wine and pepper. Bring to a boil. Add escarole; heat through. Sprinkle with cheese.

1 onion (diced)
2 ribs celery (chopped)
8 ounces Italian sausage
1 russet potato (peeled and chopped)
1 teaspoon Italian seasoning
2 cans cannellini beans (15 oz each, drained and rinsed, divided)
4 cups chicken broth (divided)
1 tablespoon pesto (Or more to taste)
1 tablespoon parmesan cheese
fresh parsley

Steps:

  • Combine onion, sausage, and celery in a large saucepan. Cook until sausage has no pink remaining. Drain any fat.
  • Add potato, seasoning, one can of cannellini beans, and 3 cups chicken broth. Bring to a boil, reduce heat and simmer 10 minutes.
  • Meanwhile, combine remaining cannellini beans and 1 cup chicken broth in a blender. Blend until smooth.
  • Add to soup and simmer an additional 5 minutes.
  • Remove from heat, stir in pesto. Season with salt and pepper to taste.
  • Garnish with parmesan cheese and parsley if desired.

4-1/2 cups vegetable broth
2 cans (15 ounces each) cannellini beans, rinsed and drained

This flavorful Italian sausage white bean soup is loaded with bacon, plenty of tasty sausage pieces, spinach, and oodles of tender cannellini beans.

1 pound Italian sausage (see note)
4 strips bacon (cut into small pieces)
1/2 medium onion (chopped)
3 cloves garlic (minced)
4 (14 fluid ounce) cans white beans (cannellini) (drained)
4 cups chicken broth
1 dash Italian seasoning
1/4 teaspoon dried rosemary
2 small carrots (peeled & chopped small)
2 cups (packed) fresh baby spinach
Salt & pepper (to taste)

Steps:

  • Add the sausage meat to a large soup pot, along with the bacon (I cut it up using kitchen shears).
  • Cook over medium-high heat until the sausage and bacon are somewhat crispy/the fat has been rendered out (this can take upwards of 15 minutes). Meanwhile, prep the other ingredients.
  • Transfer the sausage and bacon to a plate (I don't line it with paper towel because the extra fat adds more flavor, but you can if you want). Leave about 2 tablespoons of fat in the pot (spoon any excess out).
  • Add the onion to the pot and sauté it for 3-5 minutes or until it's softened and starting to lightly brown.
  • Stir in the garlic and cook for 30 seconds.
  • Add the beans, chicken broth, Italian seasoning, and rosemary. Give it a good stir and scrape up any brown bits off the bottom of the pot.
  • Take the pot off the stove. Using an immersion/stick blender, purée the soup. I like to leave some beans whole. The soup will thicken a bit more as it cooks, but the thickness/texture will be similar to what it is after you do this part, so keep that in mind. If you don't have a stick blender, transfer a ladle or two of beans to a regular blender, or use a potato masher or fork for a more rustic texture.
  • Return the sausage and bacon to the pot and add in the chopped carrots as well. Increase the heat to high. Once the soup starts to boil, cover the pot with the lid slightly ajar and reduce the heat so it's simmering. Cook for 15-20 minutes or until the carrots have softened and the soup has thickened up a bit more.
  • Stir in the spinach and let it wilt for a minute or two. Taste and season with salt & pepper as needed. Serve immediately.

1 pound gluten-free hot Italian sausage
1 pound gluten-free mild Italian sausage
1 large onion (chopped)
3 cloves garlic (minced)
28 ounces diced tomatoes (canned)
1 inch piece Parmesan cheese rind (or Grana Padano cheese)
2 bay leaves
2 quarts gluten-free chicken broth (or low-sodium chicken broth)
1 pound kale (stems trimmed, chopped)
kosher salt (to taste)
freshly ground black pepper (to taste)
1 pound gluten-free pasta (cooked and drained)
1/4 cup chopped fresh parsley

Steps:

  • Remove the skin from the sausage and crumble. Brown the sausage in the pot, and transfer to a paper towel to drain, reserving 2 tablespoons of the rendered fat in the pot. Sauté the onions until they turn golden, about 3 to 4 minutes. Add the garlic and sauté for another minute, then return the sausage to the pot.
  • Add the drained beans, diced tomatoes, cheese rind, bay leaves, and the chicken broth. Cover and bring to a boil, then simmer until the beans are tender, about 1 hour. Add the kale and simmer until it is tender, about 10 minutes. Stir in the cooked pasta and parsley, and simmer for 1 more minute, then serve.

2 tablespoons extra-virgin olive oil
2 medium fennel bulbs, outer layers removed, chopped
1 medium onion, chopped
1 1/2 teaspoons kosher salt
1/2 teaspoon red pepper flakes
One 28-ounce can diced tomatoes
One 15-ounce can cannellini beans
One 10-ounce bunch kale, center rib removed, leaves chopped into 1/2-inch pieces
1 cup low-sodium chicken broth
4 turkey or chicken Italian sausage links

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Spray a grill pan with vegetable oil cooking spray.
  • In a Dutch oven, heat the oil over medium-high heat. Add the fennel, onion, 1 teaspoon of the salt and the red pepper flakes. Cook, stirring constantly, until the vegetables are soft, about 5 minutes. Add the tomatoes (plus juices), beans, kale and broth. Bring the mixture to a boil. Cover the pan with a tight fitting lid and transfer to the oven. Cook until the vegetables are tender and the kale has wilted, 25 to 30 minutes.
  • While the stew is cooking, place a grill pan over medium-high heat or preheat a gas or charcoal grill. Add the sausages and grill, turning occasionally, until cooked through, about 20 minutes. Cool and cut into 1/2-inch-thick slices.
  • Remove the pan from the oven and add the cooked sausage slices. Season with the remaining 1/2 teaspoon of salt. Spoon the stew into bowls and serve.

2 pounds mild Italian sausage links, casings removed
1 small onion, chopped
2 tablespoons garlic, minced
1 (32 ounce) carton beef stock
2 cups water
4 cubes beef bouillon
1 (16 ounce) can tomato sauce
1 (15.5 ounce) can cannellini beans, drained and rinsed
1 (15.5 ounce) can dark red kidney beans, drained and rinsed
1 (15.5 ounce) can garbanzo beans, drained and rinsed
1 (14.5 ounce) can cut green beans, drained and rinsed
1 (14.5 ounce) can Italian-style diced tomatoes, undrained
1 (14.5 ounce) can sliced carrots, drained
½ (6 ounce) can tomato paste
1 (1.25 ounce) package beefy onion soup mix
1 ½ cups shredded cabbage
1 tablespoon garlic powder
1 tablespoon Italian seasoning

Steps:

  • Heat olive oil in a Dutch oven over medium-high heat. Add Italian sausage, onion, and garlic; cook and stir until sausage is browned and crumbly and onion is translucent, 8 to 10 minutes.
  • Pour beef stock into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Add water and bouillon cubes.
  • Add tomato sauce, cannellini beans, kidney beans, garbanzo beans, green beans, diced tomatoes with juice, carrots, tomato paste, soup mix, cabbage, garlic powder, Italian seasoning, pepper, and salt. Reduce heat to medium and simmer for 40 minutes.

1 pound orecchiette pasta
2 tablespoons extra-virgin olive oil
1 pound sweet Italian sausage, removed from casings
1 yellow onion, diced

One 15-ounce can cannellini beans, rinsed and drained
1/2 cup grated Parmesan, plus additional for garnish

Steps:

  • Bring a pot of salted water to a boil and cook the orecchiette according to package instructions.
  • Meanwhile, heat the oil in a large, heavy-bottomed skillet over medium-high heat. Add the sausage and cook, breaking it up with the back of a spoon, until it starts to brown, 4 to 5 minutes. Remove the sausage to a bowl with a slotted spoon, leaving all the oil in the skillet.
  • Add the onions to the oil and cook until they start to soften and turn translucent, about 2 minutes. Add the garlic to the skillet and cook, stirring, for 30 seconds. Add the tomatoes and red pepper flakes and cook, stirring occasionally, until the tomatoes start to blister and split, about 4 minutes. Add salt and pepper.
  • Add the beans and return the sausage to the skillet. Cook until warmed through. Add the pasta and toss until it is completely coated. Add the Parmesan in batches, stirring to incorporate and letting it melt before more is added. Stir in the basil.
  • Plate the pasta and top with more Parmesan and basil. Serve immediately.
