ITALIAN SAUSAGES WITH CABBAGE AND ONION

Steps:
- In a large mixing bowl put the onions, cabbage and garlic. Set aside.
- In a dutch oven, or other large vessel, put the olive oil. Slice the sausages (hot or mild) into bite-size pieces, adding more if you want more meat.
- Heat the oil over high heat, and when hot, add the sausage pieces and stir-fry until well browned.
- Add the ingredients from the mixing bowl, the salt, pepper, vinegar and water.
- Mix well for 2-3 minutes.
- Cover, reduce heat to medium-low, and cook for about 45 minutes, stirring occasionally. If needed, add a bit more water.
- When the cabbage is very tender, remove cover and increase heat to evaporate any excess liquid. Check for salt.

- In a Dutch oven or soup kettle, cook sausage and onion over medium heat until sausage is lightly browned and onion is tender; drain. Add the cabbage and water. Cover and cook on low for 10 minutes. Stir in the carrots and potatoes. Cover and cook for 25-30 minutes or until the vegetables are tender.

SOUTHERN FRIED CABBAGE WITH SAUSAGE
This is a family favorite cabbage recipe. The cabbage is cooked down with tomatoes, seasonings and smoked sausage for a hearty and delicious meal-in-itself. Serve with cornbread.

Steps:
- Chop/slice the sausage, cabbage, and onion.
- In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
- In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
- Add remaining ingredients, and the sausage.
- Cover the skillet and cook for about 10 minutes.
- Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.
CHICKEN SAUSAGE WITH CABBAGE AND ONION
Steps:
- Season cabbage wedges with salt, then steam in a steamer rack set over boiling water, covered, until tender, about 15 minutes.
- While cabbage is steaming, cook bacon in a 12-inch heavy skillet over moderately low heat, stirring occasionally, until crisp-tender, about 12 minutes.
- Transfer bacon with a slotted spoon to a plate and reserve rendered fat in a small bowl.
- Wipe out skillet with a paper towel and return 3 tablespoons bacon fat to skillet. Cut sausages in half lengthwise and cook, cut sides down, over moderately low heat until browned and heated through, about 7 minutes. Transfer sausages with tongs to a plate and keep warm, covered. Add onion to skillet and cook over moderate heat, stirring occasionally, until beginning to soften, about 6 minutes. Add sausages and bacon and cook, stirring, until heated through. Add vinegar and remove from heat, then stir in butter.
- Serve cabbage wedges topped with sausages, onion, and sauce.
