2 tablespoons extra-virgin olive oil
1 pound bulk Italian hot or sweet sausage

Steps:

  • Trim ends of the broccoli rabe and cut into 3-inch pieces.
  • Bring 2 inches water to a boil in a high sided skillet. Salt the water. Add the broccoli rabe and simmer 10 minutes, drain. Return skillet to the stove and heat extra-virgin olive oil over medium-high heat. Add sausage, brown and crumble 6 to 7 minutes. Add the broccoli rabe and stir to combine.

0.5 tbsp oil
350g pasta
600ml chicken stock
600ml milk
250g broccoli
3 tbsp creme fraiche
50g grated parmesan

Steps:

  • Remove the skins from the sausages and add the sausage meat to a large pan on the hob along with the oil.
  • Cook for 5 minutes, breaking the sausage meat up with a spoon.
  • Add the pasta, stock and milk.
  • Bring to the boil then cook on a low simmer for 6 minutes, stirring regularly.
  • Cut the broccoli into medium sized florets and add that to the pot.
  • Continue to cook for another 6 minutes, again stirring regularly.

4 Cooked Chicken Sausage Links (12oz)
2 tsp Extra Virgin Olive Oil
1/2 cup Yellow Onion, diced
2 tbls All Purpose Flour
2 tbls Butter
2 cups Chicken Broth
1 cup Milk
1/2 cup Shredded Cheddar
1 tbls Parsley
3 cups Broccoli Florets
1/4 cup Panko Bread Crumbs
Salt and Fresh Ground Pepper to taste
1 cup Long Grain White Rice, uncooked
1 cup water

Steps:

  • Preheat oven to 375 degrees F.
  • Cook the Rice: Add 1 cup water and 1 cup chicken broth to small pot, then add 1 cup uncooked rice. Bring to a boil, then reduce to a low simmer and cover for 20 minutes. Once 20 minutes is done, keep lid on pot until ready to mix the rice into the casserole.
  • Dice the onion, slice the sausage, chop the parsley, cut off the broccoli florets.
  • To a preheated saute pan, add 1 tsp olive oil and the sliced sausage. Sear the sausage until browned on both sides. If you are using cooked sausage, you just need to sear, not cook through. If raw, then cook a few minutes longer. Remove the sausage from the pan and set aside, leaving the sausage bits and juices in the pan.
  • To the same pan, add 1 tsp olive oil if needed and the onions. Cook the onions until soft and translucent.
  • Add the flour and butter to make a roux and stir until full mixed. Cook for 2 minutes while stirring constantly so it does not burn. Slowly whisk in the broth and the milk until lumps are gone and sauce is creamy.
  • Add the shredded cheese and the parsley and whisk to combine. Add salt and pepper to taste. Finally add back the sausage and stir to combine.
  • In a casserole dish, mix the rice, the broccoli, and the sausage-sauce. Once combined, cover and cook in oven for 30 minutes.
  • Remove cover and sprinkle panko bread crumbs, salt & pepper over the entire top of the casserole. Put back in the oven for another 5+ minutes until the top is lightly browned.
  • Take the casserole out, serve, and enjoy!!

2 tablespoons butter
10 ounces mushrooms, cleaned & sliced
1/2 cup onion, diced

1 tablespoon chopped garlic
2 tablespoons flour
1/3 cup white wine
1 1/2 cups chicken broth
1/2 cup cream
2 1/2 cups cooked, chopped fresh broccoli (fresh or frozen)
1/2 cup grated parmesan cheese (divided)
2 (10 ounce) bags frozen brown rice
1/2 cup panko bread crumbs

Steps:

  • Preheat the oven to 400 degrees.
  • Add the sausage to a large skillet over medium heat. Brown the sausage, breaking up as it cooks. Once the sausage has browned, remove it from the skillet and add to a large bowl, leaving any drippings in the pan.
  • Add the butter to the skillet. Once the butter is melted, add mushrooms and onions, salt, pepper and thyme. Cook until the mushrooms have browned and the onions have softened, about 5-7 minutes.
  • Add the garlic and cook 1 minute longer, then sprinkle the flour over the mushrooms and onions. Stir to combine the flour completely, cooking for about 1 minute.
  • Pour the wine into the skillet mixing into the mushrooms and onions, then let the wine reduce for 1 minute. Pour in the chicken broth and heavy cream and stir. Let the sauce come to a simmer and cook for 5 minutes to thicken.
  • Add the chopped broccoli, 1/4 cup of parmesan cheese and the frozen rice to the bowl with the sausage. Pour in the sauce from the skillet and stir to combine the ingredients together.
  • Pour into a 9″ x 13″ baking dish, cover with foil and bake for 20 minutes.
  • Remove the casserole from oven, take off the foil and top with remaining 1/4 cup of parmesan cheese and the panko bread crumbs.
  • Return the dish to the oven and bake for another 10 minutes, or you can place the casserole under your broiler for 5 minutes for an extra crispy topping!

1 pound Italian sausage
1 teaspoon kosher salt
1/2 cup freshly grated parmesan cheese (plus more for topping)

Steps:

  • Cook the pasta according to the instructions on the package, reserving 1/4 cup of cooking water before draining, and adding 1 teaspoon of kosher salt with the dry pasta.
  • While the water is coming to a boil, prepare the rest of the ingredients. Cut the broccoli, mince the garlic, and shred the cheese.
  • In a large skillet, heat the olive oil over high heat. Add garlic and red pepper flakes. Sauté for 30 seconds until the garlic is fragrant, being careful not to burn it. Add in the sausage and break up, browning it.

1 lb broccoli crowns, (bottom stalk trimmed and reserved for another use, remaining cut into florets)
Salt and freshly ground black pepper
12 oz. orecchiette pasta
4 Tbsp extra-virgin olive oil, (divided, plus more if desired)
1 1/2 Tbsp minced garlic ((4 cloves))
1 lb Italian sausage* ((can use mild or hot))
2/3 cup (1.6 oz) finely shredded Parmesan, (plus more for serving )
1 1/2 cups reserved pasta water, (divided)
Red pepper flakes, (for serving)

Steps:

  • Add 4 quarts of water to a large pot, bring to a boil over medium-high heat then season with salt (I use 2 Tbsp).
  • Add broccoli to boiling water and cook until tender, about 4 - 5 minutes. Using a spider, remove broccoli and transfer to a colander, while leaving water in pot.
  • Run broccoli under cold water to stop cooking. Drain well. Chop broccoli into smaller pieces.
  • Add pasta to water in pot and boil about 1 minutes shy of al dente, according to time listed on package. Reserve 1 1/2 cups pasta water.
  • While pasta is boiling, heat 1 Tbsp olive oil into a 12-inch non-stick skillet over medium-high heat.
  • Crumble sausage in small chunks into skillet and cook, breaking up and tossing occasionally, until cooked through, about 7 minutes. Add garlic during last 2 minutes of cooking the sausage.
  • Pour in 1 cup of the pasta water into the sausage. Let it simmer for about a minute and reduce slightly. Add all dente pasta and cook while tossing, until tender, about 2 minutes.
  • Drizzle in remaining 3 Tbsp olive oil, season with red pepper flakes to taste and toss.
  • Sprinkle in parmesan, and toss to melt into sauce.
  • Toss in broccoli. Season with salt as needed and pepper to taste.
  • Loosen with more pasta water as needed. Drizzle servings with more olive oil if desired, serve with garnished with more parmesan.

1/2 C frozen chopped onions
1 T minced garlic
salt and pepper to taste
2 C chicken broth
1 1/2 C heavy cream
1/2 t Italian seasoning
8 oz egg noodles (or similar)
2 T olive oil
1 1/2 C broccoli florets
1/4 C grated Parmesan cheese
8 C salad greens
1 loaf garlic bread

Steps:

  • Add Italian sausage, onion and garlic to a large zipper bag. Season with salt and pepper. Zip to seal and squish to mix.
  • In a container with a lid mix together heavy cream, chicken broth and Italian seasoning. Season it with and additional pinch of salt and pepper.
  • Measure out 8 oz egg noodles (or similar) and place in a separate zipper bag so the noodles is ready to go on cooking day.
  • Heat olive oil in a large deep skillet or pot over medium heat. Add Italian sausage mixture and cook, stirring occasionally and breaking up chunks until cooked thoroughly.
  • Stir in heavy cream mixture (give it a good shake or mix before stirring it in), broccoli and egg noodles. Make sure noodles are covered in liquid. Bring mixture to a boil. Stir, cover and reduce heat to a simmer. Cook for about 10-15 minutes until pasta is tender.
  • Turn off heat and stir in cheese. Season with additional salt and pepper if needed. Serve with salad and garlic bread.
