SOUTHWEST BREAKFAST BURRITOS
My wife and I love eating Mexican so I came up with this recipe so that we could have a little more variety in our morning meals. We are busy people and don't have time to make elaborate meals in the morning. In the past we have bought frozen breakfast burritos, but they are not very tasty and I knew they could be improved upon. This recipe will make a large batch of the burrito fixins that you can freeze, or store in the refrigerator so that you can make great breakfast burritos whenever you please.

- Whisk together the eggs, milk, and salt in a large bowl. Heat butter in a large skillet over medium-high heat. Pour in the egg mixture; cook and stir until eggs are completely set, about 5 minutes. Chop the cooked eggs and place in a large bowl. Set aside.
- Heat a large skillet over medium heat and stir in the sausage and garlic. Cook and stir for 5 minutes, then add the onion. Continue cooking and stirring until the sausage is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Combine the sausage with the eggs, tomato, cilantro, jalapeno, and taco seasoning. Allow mixture to cool to room temperature, then stir in the Cheddar cheese.
- Place a tortilla onto your work surface, then spoon some of the filling halfway between the bottom edge and the center of the tortilla. Flatten the filling into rectangle shape with the back of a spoon. Fold the bottom of the tortilla snugly over the filling, then fold in the left and right edges. Roll the burrito up to the top edge, forming a tight cylinder. Repeat with the remaining ingredients.
- Tightly wrap individual burritos with plastic wrap and freeze until ready to serve. Heat in the microwave until hot, 3 to 4 minutes, before serving.

- Combine eggs and milk in a large bowl until well blended.
- Heat butter in a large skillet over medium heat. Add egg mixture, season with hot sauce, salt, and pepper, and scramble until set and cooked through, 3 to 5 minutes. Transfer to a large bowl.
- Heat the large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to the bowl with cooked eggs, leaving grease in the skillet.
- Add potatoes to the greasy skillet and cook until soft, following package instructions, 15 to 20 minutes. Transfer to the bowl with the egg mixture and let cool, 15 to 20 minutes.
- Stir cooled potato mixture until combined. Top with Cheddar cheese and stir again.
- Scoop mixture into the center of each tortilla using a 5-tablespoon scoop or 2 large ice cream scoops. Fold tortillas and roll into burritos. Serve or roll burritos in paper towels, then in pieces of foil. Freeze.
- When ready to serve, remove foil and towel and microwave until heated through, about 2 minutes.

- Over medium-high heat, in a large nonstick skillet, add the crumbled sausage. Stir and break up until sausage is browned and cooked through, about 10 minutes. Place on paper towels to drain and dispose of remaining grease.
- Place the butter in the skillet and melt over medium-high heat. Add the eggs, stirring frequently until they're scrambled and cooked through, about two minutes. Add the cooked sausage, chipotle peppers if desired, and salsa to the egg mixture and stir gently. Remove from heat.
- Warm the tortillas as directed on package. Place about 1/2 cup of the egg and sausage mixture onto each tortilla and sprinkle each one with cheese. To form the burrito, fold the sides of the tortilla in toward the middle and then fold up from bottom. Serve immediately or freeze.
- If the burritos won't be eaten right away, freeze them using the following steps: Lay freezer bag flat and place the burritos inside so they are lying side by side and not overlapping. You may need to use multiple bags depending on how many burritos you are freezing. Close the bag most of the way and then press air out of the bag, gently smoothing the wrinkles so that it clings to the food to protect against freezer burn. Finish closing the bag completely and freeze as soon as possible.
- When ready to eat, take the burrito out of the bag and wrap in a plain paper towel. Leave it wrapped in the paper towel and microwave until hot, about one to three minutes on high.

- Preheat the oven to 375 degrees F.
- Place the frozen tater tots on a sheet pan and bake for 20 minutes. Place the sausages on a sheet pan and bake for 5 minutes.
- Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until golden and caramelized, about 15 minutes.
- Meanwhile, in a large bowl, whisk together the eggs, half-and-half, seasoned salt, and black pepper. Melt the remaining 2 tablespoons butter in a second large skillet. Add the whisked eggs and cook, stirring gently, until the eggs are set.
- To assemble the burritos, stack the tortillas on a paper towel and microwave for about 30 seconds. Place a heaping spoonful of egg mixture onto the middle of a warm tortilla, top with a little caramelized onions, 1 sausage link, 3 tater tots, a little salsa, and about 2 tablespoons cheese per burrito. - Put the ground beef in a mixing bowl. Sprinkle the garlic powder, onion powder, sage, salt, and pepper over the ground beef. Mix it together until thoroughly combined, and voila, now you have ground beef sausage. ? Cover the sausage and set it aside in the refrigerator for 10-ish minutes.
- Take the sausage out of the fridge and cook it in a large skillet (I use my big daddy 12″ skillet) over medium high heat for about 8-10 minutes or until browned. Do not drain the sausage - you need the fat.
- Add in the flour, cook and stir until the sausage is evenly coated. Pour the milk into the skillet stirring constantly until the gravy begins to thicken up and simmer for 3-5 minutes. Add salt and pepper to taste and keep warm until you're ready to build your burritos.
- Grab a mixing bowl, crack your eggs into the bowl, pour in the water or milk, and whisk it up. Meanwhile, add the butter to another large-ish skillet and heat over medium heat. I feel like I'm saying "heat" a lot, anyway...
- Once the skillet is hot and the butter is melted, reduce the heat to medium-low and add your whisked eggs. Let them set in the skillet until the edges look like they're just about set. Then stir them with a wooden spoon or spatula until beautiful egg curds form and you have perfectly fluffy scrambled eggs. Take your newly scrambled eggs off the heat, so they don't overcook.
- Warm the tortillas in the microwave for about 30 seconds. To assemble spoon some eggs into the middle of a tortilla, followed by some gravy, and sprinkle with the shredded cheddar. Fold the tortilla, neatly wrapping up the contents.
- Repeat the assembly steps until you run out of eggs, or gravy, or tortillas. Serve the burritos immediately or wrap them in foil and toss them in the freezer for breakfast at a later date. Enjoy!

MY SAUSAGE BREAKFAST BURRITOS
Sausage,Salsa & so easy. I've been making these burros for my kids and grandkids for many years. Quick, easy and oh yum... When picking your flour tortillas, pick the most flexable ones availble. Here in Arizona that's easy, but in the midwest that can be difficult. The trick is heating the tortillas in a hot skillet prior to rolling into the burro. We like Herdez Salsa which is available is most grocery stores, or use your favorite chunky salsa.
