Sausage, Green Bean & Potato Casserole Recipe image

This is comfort food at is best. My husband loves this simple, easy, and delicious entrée.

Number Of Ingredients 12

1 ½ pounds smoked sausage, sliced into ¼ inch thick rounds
2 pounds red potatoes, washed well and cut into 1 inch cubes
2 (15-oz) cans of cut green beans, drained
2 TBS of vegetable oil
¼ cup butter
2 large onions, peeled and chopped (1 cup)
3 cloves garlic, peeled and minced
1 tsp Cajun seasoning
1 tsp garlic powder
1 tsp black pepper
½ tsp red pepper flakes (or to taste)
¼ cup water

Steps:

  • Preheat the oven to 400*F. Spray a 9 by 13-inch baking dish with non-stick cooking spray. Set aside.
  • Add the potatoes to a large bowl. Toss together with the oil, seasonings, pepper, and red pepper flakes, mixing well together.
  • Add the sausage to a skillet along with the water. Cook and stir over medium high heat until the water has evaporated and the sausage has browned. Add the sausage to the bowl of potatoes.
  • Add the butter to the skillet. Add the onions and garlic. Cook until the onions are translucent and soft without browning. Pour this into the bowl with everything else. Add the drained green beans and mix everything together well. Pour into the prepared baking dish.
  • Cover tightly with foil and bake in the preheated oven for 40 minutes, or until the potatoes are fork tender.
  • Uncover and enjoy! Serve hot.

1 (16 ounce) package pork sausage
2 (10.75 ounce) cans condensed cream of mushroom soup
1 cup milk
1 tablespoon soy sauce
1 clove garlic, minced
ground black pepper to taste
2 (16 ounce) packages frozen cut green beans
1 (2.8 ounce) can French-fried onions

Steps:

  • Crumble the pork sausage into a large skillet over medium-high heat. Cook and stir until evenly browned. Drain grease, and set aside.
  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13 inch baking dish with nonstick cooking spray.
  • In a large bowl, stir together the cream of mushroom soup, milk, soy sauce, garlic, and pepper. Mix in the sausage, then add the green beans, and stir until evenly coated. Pour half of the mixture into the prepared baking dish. Top with half of the fried onions. Spread remaining green bean mixture over the onions.
  • Bake for 30 minutes in the preheated oven. Remove from the oven, and sprinkle the rest of the fried onions over the top. Return to the oven for 5 to 10 more minutes, or until the onions are toasty, and green beans are cooked to your desired doneness. Let rest 5 minutes before serving.

This is an extremely delicious, hearty, and flavorful casserole recipe loaded with kielbasa sausage, tender baby creamer potatoes, green beans and seasoned perfectly, then it's baked. A family favorite weeknight dinner recipe and one that everyone loves and enjoys!

1½ lbs sausage kielbasa or smoke sausage, (sliced ¼" thick)
2 lbs baby creamer potatoes, (washed, sliced in half)
2 15 oz cans green beans, (drained)
⅛ cup vegetable oil
¼ cup butter
1 cup onions, (chopped)
3 cloves garlic, (minced)
1 tsp Slap Ya Mama® seasoning
1 tsp garlic powder
1 tsp pepper
½ tsp red pepper flakes
¼ cup water

Steps:

  • Preheat oven to 400° and spray a 9x13 baking dish with a non stick spray.
  • Wash creamer potatoes, cut in half and add to a sealable gallon size baggie.
  • Add oil, seasonings, pepper and red pepper flakes to baggie. Shake to coat.
  • In a large frying pan, add sausage and water and cook over medium high heat until sausages have browned and most of water has evaporated.
  • Remove sausage from pan and when cool enough add to baggie.
  • Melt butter in frying pan and add onions and garlic, cook until onions are translucent.
  • Let cool for a few minutes and then when cool enough, add to baggie and shake to mix.
  • Lastly, add green beans to baggie, shake to mix and then empty contents into prepared baking dish.
  • Cover with foil and place in the oven. Bake for 40 minutes or until potatoes are tender.
  • Carefully remove from oven and enjoy!

A comforting and hearty one-pot sausage stew with chorizo, smoked paprika and plenty of vegetables

2 tbsp olive or rapeseed oil
1 onion, finely chopped
2 medium sticks celery, finely chopped
1 yellow pepper, chopped
1 red pepper, chopped
6 cooking chorizo sausages (about 400g)
6 pork sausages (about 400g)
3 fat garlic cloves, chopped
1 ½ tsp sweet smoked paprika
½ tsp ground cumin
1 tbsp dried thyme
125ml white wine
2 x 400g cans cherry tomatoes or chopped tomatoes
2 sprigs fresh thyme
1 chicken stock cube
1 x 400g can aduki beans, drained and rinsed
1 bunch chives, snipped (optional)

Steps:

  • Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
  • Add 1 finely chopped onion and cook gently for 5 minutes.
  • Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
  • Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
  • Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
  • Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
  • Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
  • Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
  • Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.

8 ounces kielbasa or 8 ounces beef sausages
3/4 cup chopped onion
1 teaspoon minced garlic
1 (16 ounce) can diced tomatoes with juice
1 teaspoon dried thyme leaves
1/2 teaspoon crushed red pepper flakes
1 (19 ounce) can cannellini or 1 (19 ounce) can other white beans, rinsed and drained
1 (10 ounce) package frozen chopped spinach, thawed and drained

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 2-quart baking dish.
  • Brown sausage (no need to add fat) in a large deep skillet. Drain fat to save calories.
  • Stir in onion, garlic, then tomatoes. Cover and cook over medium heat about 10 minute or until onions are tender.
  • Add remaining ingredients; stir to mix. Transfer to prepared dish. Can be covered and refrigerated up to 2 days if desired. Bake covered 30 minute or until hot. Makes 4 servings (or 1 serving for a very hungry teenage boy).

1 medium onion, chopped
